12 corn tortillas
vegetable oil for pan-frying
3 cooked boneless skinless chicken breast halves, shredded
12 ounces shredded Monterey Jack cheese, divided
¾ cup minced onion
¼ cup butter
¼ cup all-purpose flour
2 cups chicken broth
1 cup sour cream
1 (4 ounce) can chopped green chiles, drained
½ cup chopped green onions
½ cup chopped fresh cilantro

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Heat 2 tablespoons of oil in a skillet over medium-high heat. Fry tortillas (1 at a time) for 5 seconds on each side to soften and make them pliable. Add more oil to pan as needed. Drain between layers of paper towel and keep warm.
  • Divide chicken, 10 ounces of Monterey Jack cheese, and onion among the 12 tortillas. Roll up each tortilla and place seam-side down in the prepared pan.
  • Melt butter in a saucepan over medium heat. Add flour and whisk until mixture begins to boil. Slowly add broth, stirring with a whisk until thickened. Mix in the sour cream and chiles, heating thoroughly but do not boil, stirring occasionally. Pour mixture over the enchiladas.
  • Bake in the preheated oven until bubbly and heated through, about 20 minutes. Top with remaining Monterey Jack cheese and bake for 5 more minutes. Garnish with chopped green onions and cilantro.

3 pounds bone-in, skin-on chicken breast halves
Coarse salt and ground pepper
5 garlic cloves, unpeeled
2 jars (16 ounces each) medium green salsa
3/4 cup heavy cream
12 corn tortillas (6-inch)
12 ounces Monterey Jack cheese, coarsely shredded (3 cups)
1/2 cup fresh cilantro, chopped (optional)

Steps:

  • Preheat oven to 450 degrees. Season chicken with salt and pepper; place with garlic on a rimmed baking sheet. Bake until an instant-read thermometer inserted in thickest part of breast (avoiding bone) registers 165 degrees, 25 to 30 minutes. Meanwhile, in a large bowl, combine salsa and cream.
  • Reduce oven temperature to 350 degrees. Once chicken is cool enough to handle, shred meat, discarding skin and bones. Peel and chop garlic. In a large bowl, combine chicken, garlic, and 1/2 cup salsa mixture.
  • Stack tortillas flat, and wrap in damp paper towels; microwave on high for 1 minute to soften. Working with one tortilla at a time, dip in salsa mixture, lay flat, and fill with 1/3 cup chicken mixture. Roll up and arrange, seam side down, 8 enchiladas lengthwise and 4 crosswise in a 9-by-13-inch baking dish. Top with remaining salsa mixture, then cheese.

4 large baking potatoes
2 tablespoons butter
2 tablespoons thinly sliced green onions

½ cup half-and-half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange potatoes on a baking sheet.
  • Bake potatoes in the preheated oven until tender, about 1 hour.
  • Melt 2 tablespoons butter in small pot over medium heat. Add green onions; cook until soft, about 4 minutes. Stir in flour until well blended, about 1 minute.   • In large skillet over medium-high heat, melt 2 tablespoons butter. Dip tomatoes in egg mixture, then in corn meal mix to coat. Add tomato slices to skillet in single layer.

2 lb green beans (either frozen or fresh) not canned
2 Tbsp butter
2 Tbsp flour
1/2 c diced onion
1/4 c apple cider vinegar
1 c water
2 tsp sugar
1 Tbsp fresh chopped dill

Steps:

  • 1. Cook beans in water until tender crisp, not soft. Drain.
  • 2. Melt butter, add onions and saute until limp. Add chopped dill. Add flour and stir well to make the roux. Add one cup of water, sugar and vinegar and stir while the sauce thickens.
  • 3. Add drained beans and mix. If too thick, add a little more water. ( I found i didnt have to add additional water)
  • 4. This is a forgiving recipe. I had made it, and we talked for a while, and it reheated over a low temp just fine.

1 tablespoon olive oil
2 cloves garlic, minced
1 tsp. ground cumin
I small tomato, diced
Juice of one lime
1/4 cup chopped cilantro; reserve 1 tbs. for topping
Salt and pepper to taste
12 corn tortillas
1 cup shredded Monterey Jack cheese
Creamy Green chile sauce:
1 16 oz. can green chile enchilada sauce (I used Hatch brand, my favorite)
3/4 cup reduced fat sour cream

Steps:

  • Preheat oven to 350° F. Spray a 13×9 baking pan with cooking spray. Heat a medium skillet over medium-high heat and add olive oil. Swirl to coat the pan. Add garlic and saute about two minutes, until slightly golden, then turn the heat to low and stir in cumin. Add the fish and tomato and heat through. Turn off the heat and add the lime juice, cilantro and salt and pepper to taste. Stir. Mix the green chile sauce and sour cream in a small bowl. Place about two tablespoons of fish mixture in tortillas and roll up, then place in casserole seam side down. (I find the tortillas more pliable and easier to work with if I wrap a stack of them in a damp kitchen towel and microwave them for 45 seconds.) After all the tortillas are filled and rolled, pour the green chile sauce evenly over them and sprinkle cheese on top. Cover and bake for 30 minutes until sauce is bubbly and cheese is melted. Sprinkle with reserved cilantro and serve. Preferably with margaritas.

1/2 cup mayonnaise
3 tablespoons heavy cream
1 large egg, hard cooked and minced
couple drops tabasco sauce
1/2 teaspoon worcestershire sauce
1 teaspoon freshly squeezed lemon juice
1 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 jalapeno chile pepper, seeded, deveined and very finely chopped
1/8 teaspoon sugar
3 tablespoons green onions, whole, finely chopped

Steps:

  • 1. Carefully clean the crab meat of any shells or cartilage. In a large bowl, gently mix crab meat, scallions or green onions, herbs, Old Bay seasoning, bread crumbs, and mayonnaise. Season with salt and white pepper. Carefully fold in egg with a rubber spatula until mixture just clings together. Divide crab mixture into four portions and shape each into a flat, round cake about 3 inches across and 1-1/2 inches high Place onto a baking sheet lined either parchment or wax paper; cover with plastic wrap and refrigerator at least 3 hours or overnight (the cold will firm up the cakes so that they will not break up when fried.) Place bread or cracker crumbs into a shallow pie plate; lightly dredge crab cakes. In a large nonstick frying pan over medium heat, heat butter until hot but not smoking (add more butter if needed). Gently lay chilled crab cakes onto bottom of the pan; slowly fry crab cakes approximately 3 to 4 minutes per side or until crisp and golden brown, turning once only with a spatula. If the crab cake browns too quickly, reduce heat. The internal temperature should be 150 to 155 degrees F. with an cooking thermometer. Removed from heat, transfer onto a serving platter, and serve hot with Green Onion Sauce. NOTE: These crab cakes are also great as a starter course of your dinner meal. Makes 8 servings or 16 petite crab cakes. 2. Green Onion Sauce: In a medium bowl, combine mayonnaise, cream, egg, Tabasco sauce, Worcestershire sauce, lemon juice, dry mustard, salt, peppr, japapeno chile, sugar, and green onions. 6 medium chicken breasts
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons all-purpose flour
1/3 cup chopped green onion
3/4 cup chicken broth
1/4 teaspoon salt
pepper
1 -2 tablespoon Dijon mustard (to taste)
1 cup plain yogurt

Steps:

  • Melt butter over med. high heat.
  • Stir in flour and cook until bubbly.
  • Reduce heat to medium.
  • Stir in remaining ingredients except yogurt. Make sure you stir the green onions into the sauce at this point. The release of these flavors as it warms is what makes the sauce!
  • Continue cooking, stirring occasionally, until sauce thickens (3 to 5 minutes).
  • Stir in yogurt and heat through.
  • Serve over baked or sauteed chicken breast.

1/2 teaspoon garam masala
3/4 teaspoon salt

3/4 cup heavy whipping cream
1 tablespoon lemon juice
2 tablespoons cilantro, chopped
1 hot green chili pepper, finely chopped
3 tablespoons vegetable oil
1/2 teaspoon cumin seed
1/2 teaspoon mustard seeds
20 ounces frozen peas

Steps:

  • defrost frozen peas under warm water completely. drain.
  • combine sugar, ground cumin, garam masala, salt, cayenne, and tomato paste. slow add 2 TB water, mixing as you go.
  • add cream slowly, mix. add lemon juice, cilantro, and green chile. mix again and set this cream sauce aside.
  • put oil in large frying pan and set over medium high heat. when it's hot, add cumin seeds and mustard seeds. as soon as seeds begin to pop, add peas. Stir and fry peas for 30 seconds.
  • add in cream sauce. cook on high heat for 1.5-2 minutes or until sauce has thickened, stirring gently as you do so.

3 shallots, chopped
8 ounces white mushrooms, sliced (2 1/2 c.)
2 tablespoons all-purpose flour
2 cups milk or 2 cups soymilk
1 -2 teaspoon green peppercorn, drained

1 lb fettuccine

Steps:

  • Heat the oil in a big saucepan over medium heat; add in shallots; cook 5 minutes or until softened.
  • Add in the mushrooms; cook 2 minutes to soften.
  • Sprinkle the flour over the shallots/mushroom mixture, cook/stir for 1 minute to remove the raw taste from the flour.
  • Decrease heat to low; slowly add the milk, stirring constantly to thicken.
  • Add in the peppercorns and salt to taste; simmer 5 minutes to allow the flavors to blend.

2tablespoons mayonnaise
1tablespoon Dijon mustard
1tablespoon horseradish
Salt and freshly ground pepper to taste
TOMATOES
3 to 4 green tomatoes
Salt
1 large egg white
1cup Martha White® Self-Rising Enriched White Corn Meal Mix
1/2cup butter
1teaspoon pepper

Steps:

  • COMBINE all sauce ingredients in small bowl; mix well. Cover and refrigerate. 2.SLICE tomatoes about 3/8-inch thick. Sprinkle lightly with salt. Beat egg white with fork in shallow dish. Place corn meal mix on plate or in separate shallow dish. 3.MELT 2 tablespoons butter in large skillet over medium-high heat. Dip tomatoes in egg mixture, then in corn meal mix to coat. Add tomato slices to skillet in single layer. 4.COOK over medium-high heat until golden brown; turn and cook until browned on other side. Drain on paper towels. Repeat with remaining tomato slices, adding butter to skillet as needed. Serve warm with Horseradish Sauce.
