CREAMY DREAMY MASHY TATERS

Mashed potatoes don't have to be ho-hum. These are much more interesting.

Number Of Ingredients 5

3 1/2 c chicken broth
5 large potatoes, cut into 1" pieces
1/2 c half and half (or light cream)
2 Tbsp butter
fresh ground pepper

Steps:

  • 1. Heat broth and potatoes in 3-qt saucepan over medium-high heat to a boil.
  • 2. Reduce heat to medium. Cover and cook for 10 min. or until potatoes are tender. Drain potatoes into another saucepan, reserving broth.
  • 3. Mash potatoes with cream, butter and pepper, and add 1/4 cup broth (a little more or less as needed for desired consistency).
  • 4. **NOTE** if you want to, you can add 1/2 c sour cream, 3 slices of bacon (cooked and crumbled) - save some for garnish - and 1/4 cup chopped chives into the hot mashed potatoes. Sprinkle bacon crumbles on top to serve.

People often ask for my secret to fabulous mashed potatoes, here it is, just like my Mama taught me!

4-5 large baking potatoes peeled cut into cubes
1 stick butter (the real stuff salted)
1/2 c heavy whipping cream
salt and pepper to taste

Steps:

  • 1. Put peeled, cubed potatoes into a medium size pot and cover with cold water. Bring the potatoes to boil over medium high heat and let cook about 30 minutes or until fork tender. Drain the potatoes, do not rinse. Put the stick of butter into the hot dry pot and dump the potatoes on top. Mash the potatoes and butter together with a hand masher just until broken up and the butter begins to melt into the potatoes. Add the whipping cream and beat with a electric mixer until there are no lumps and the potatoes are light and fluffy. Add or reduce the amount of whipping cream to make the potatoes the consistency that you like. Add salt and pepper to taste.
  • 2. NOTE: I have used all different kinds of potatoes for this recipe and I have found that russet baking potatoes make the best mashed potatoes. Just a suggestion.

2 lbs russet potatoes
3/4-1 cup mayonnaise, not salad dressing (Hellman's is good)
1/2 cup grated parmesan cheese
1/3 cup red onion, chopped fine
salt and pepper (to taste)

Steps:

  • In a pot, boil the potatoes with just enough water to cover the potatoes.
  • Cover the pot.
  • Simmer until fork-tender; (don't over boil until mushy, just until the fork pierces the potato all the way through); drain.
  • In a bowl, mash the potatoes; add in the mayo, Parmesan cheese, chopped onion, salt and pepper to taste;mix well until fluffy and creamy.
  • Note: for garlic lovers, roasted garlic may be added to the mashed potatoes.

6 tablespoons butter
1/4 cup milk
1/4 cup half-and-half, plus
1 tablespoon half-and-half
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Boil the potatoes and yams in a large pot, chop them, and mash. You may peel them if desired, though that puts down the fiber content.
  • Add butter, milk, and half and half.
