CREAMY CUCUMBER DILL DIP

This is very simple and just as impressive. I've posted the full-fat version, but you can make this lower fat by using a low fat cream cheese and a low fat/no fat mayo. You can make this up to 48 hours in advance and it will taste great, just give it a stir before serving.

  • Beat the cream cheese until smooth.
  • Add the rest of the ingredients and mix until smooth and creamy.
  • Cover tightly and chill until ready to serve.
  • Garnish with additional dill sprigs and chopped red bell pepper if desired.

1 pound snipped green beans, preferably haricots verts
1 1/2 pounds large shrimp, preferably wild, peeled, deveined
1/2 cup Greek yogurt
1/2 cup mayonnaise
1/4 cup fresh lemon juice
2 tablespoons finely chopped dill (optional)
2 teaspoons Dijon mustard
1/4 teaspoon freshly ground black pepper
1/2 pound romaine heart leaves
1 avocado, pitted, peeled, cut into 12 wedges
Lemon wedges (for serving; optional)

Steps:

  • Set a steamer basket in a large pot filled with about 1/2" salted water. Cover pot and bring water to a boil. Place beans in basket, cover, and steam until just tender, about 3 minutes. Carefully pull steamer insert out of pot. Transfer beans to a large colander and run under cold water, then transfer to a plate.
  • Return steamer basket to pot. Season shrimp with 1/4 tsp. salt, then place in steamer basket. Cover and steam shrimp until pink and opaque, about 3 minutes. Transfer shrimp to colander and run under cold water until cool to the touch.
  • Meanwhile, whisk yogurt, mayonnaise, lemon juice, dill, if using, mustard, pepper, and 1/2 tsp. salt in a medium bowl.
  • Divide shrimp,beans, romaine leaves, and avocado slices among plates. Serve with lemon wedges for squeezing over, if using. Divide mayonnaise mixture among small bowls and serve alongside.

4 oz softened cream cheese - room temp
1/2 c mayonnaise ( hellmanns)
1/2 c sour cream
1 - 10 oz jar - marinated artichokes - drained and patted dry ( can use plain if can't find marinated ( roughly chop up the artichokes after draining).
1 1/4 tsp dried dill weed or fresh, whichever you prefer - to taste
1/2 c good fresh grated parmesan
2 clove garlic,minced or 1 tablespoon
red pepper flakes - optional

Steps:

  • 1. Preheat oven to 350 degree F. In a medium sized bowl, beat the softened cream cheese until fluffy. Stir in the sour cream & mayonnaise until well combined.
  • 2. Next, stir in the dill weed and minced garlic, thoroughly blending.
  • 3. Add the Parmesan cheese and well drained Artichokes. Add pepper flakes now, if using ~ I didn't this time...Stir well.
  • 4. Spread into a small casserole dish, I sometimes use a small pie plate. ( there is 2 cups worth of dip, so use dish that will hold the dip). Sprinkle with a pinch of dill and Parmesan cheese.
  • 5. Bake for 45 minutes or until beginning to turn golden. Great served with crackers or french bread baguettes. Can be served at any temperature. Enjoy this yummy deliciousness. One of my most requested dips.

I made up this recipe after having dill dip at a Family get together and tried dill dip for the first time. My version has become a family favorite and I receive many requests any time we get together. It's a great anytime snack with pretzels, or veggies.

8 ounces fat free cream cheese (softened)
8 ounces nonfat sour cream
2 teaspoons dill weed (More if Fresh)
1 teaspoon lemon juice
1 teaspoon onion juice (finely minced or grated onion works too)
1/2 teaspoon garlic juice (finely minced or grated onion works too)

Steps:

  • Place Cream cheese in small sauce pan heat until melted.
  • Add lemon juice and Dill then mix well.
  • Allow to cool to room temperature then mix remaining ingredients and mix well.
  • Chill for at least an hour and serve.
  • A serving is 2 Tablespoons.
  • If you would like to use this as a dressing you may want to add skim milk to thin and replace the cream cheese with yogurt. That's an idea I haven't tried yet. This recipe is also a great addition to Tuna salad.

2 t. dried dillweed
1/2 t. seasoned or regular salt

Steps:

  • Beat with electric mixer until fluffy. Chill. Thin with 1 - T. milk, if needed. As hors d'oeuvres: Bake vol-au-vents according to package directions. Let cool. Push in middle sections of vol-au-vents and stuff with dip. Top with sliced smoked salmon or shrimp and a sprig of fresh dillweed. Heat 10-15 minutes before serving.
