CREAMY CUCUMBER DILL DIP
This is very simple and just as impressive. I've posted the full-fat version, but you can make this lower fat by using a low fat cream cheese and a low fat/no fat mayo. You can make this up to 48 hours in advance and it will taste great, just give it a stir before serving.

- Set a steamer basket in a large pot filled with about 1/2" salted water. Cover pot and bring water to a boil. Place beans in basket, cover, and steam until just tender, about 3 minutes. Carefully pull steamer insert out of pot. Transfer beans to a large colander and run under cold water, then transfer to a plate.
- Return steamer basket to pot. Season shrimp with 1/4 tsp. salt, then place in steamer basket. Cover and steam shrimp until pink and opaque, about 3 minutes. Transfer shrimp to colander and run under cold water until cool to the touch.
- Meanwhile, whisk yogurt, mayonnaise, lemon juice, dill, if using, mustard, pepper, and 1/2 tsp. salt in a medium bowl.
- Divide shrimp,beans, romaine leaves, and avocado slices among plates. Serve with lemon wedges for squeezing over, if using. Divide mayonnaise mixture among small bowls and serve alongside.

- 1. Preheat oven to 350 degree F. In a medium sized bowl, beat the softened cream cheese until fluffy. Stir in the sour cream & mayonnaise until well combined.
- 2. Next, stir in the dill weed and minced garlic, thoroughly blending.
- 3. Add the Parmesan cheese and well drained Artichokes. Add pepper flakes now, if using ~ I didn't this time...Stir well.
- 4. Spread into a small casserole dish, I sometimes use a small pie plate. ( there is 2 cups worth of dip, so use dish that will hold the dip). Sprinkle with a pinch of dill and Parmesan cheese.
- 5. Bake for 45 minutes or until beginning to turn golden. Great served with crackers or french bread baguettes. Can be served at any temperature. Enjoy this yummy deliciousness. One of my most requested dips.

I made up this recipe after having dill dip at a Family get together and tried dill dip for the first time. My version has become a family favorite and I receive many requests any time we get together. It's a great anytime snack with pretzels, or veggies.

- Place Cream cheese in small sauce pan heat until melted.
- Add lemon juice and Dill then mix well.
- Allow to cool to room temperature then mix remaining ingredients and mix well.
- Chill for at least an hour and serve.
- A serving is 2 Tablespoons.
- If you would like to use this as a dressing you may want to add skim milk to thin and replace the cream cheese with yogurt. That's an idea I haven't tried yet. This recipe is also a great addition to Tuna salad.
