2 pints cherry tomatoes, halved
salt, to taste
¼ cup mayonnaise
¼ cup sour cream
2 tablespoons rice wine vinegar
1 garlic clove, minced
3 cups fresh corn kernels
¼ cup torn basil leaves
1 small red onion, quartered and thinly sliced
½ cup raisins
salt and pepper to taste

Steps:

  • Salt tomatoes in a bowl and set aside. Whisk together mayonnaise, sour cream, vinegar and garlic; set aside. Add corn, basil, onion and raisins to tomatoes. Season with salt and pepper, and toss with dressing.

6 cups frozen corn, thawed
3 cups chopped seeded tomatoes
1 cup cubed avocado
2/3 cup julienned sweet red pepper
2/3 cup julienned green pepper
1/2 cup chopped onion
DRESSING:
1 cup mayonnaise
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large bowl, combine the corn, tomatoes, avocado, peppers and onion. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Cover and refrigerate for 30 minutes or until chilled.

½ cup mayonnaise
¼ cup red wine vinegar
¼ cup olive oil
1 clove garlic, crushed
2 teaspoons water
½ teaspoon freshly ground black pepper
½ teaspoon white sugar

¼ teaspoon Italian seasoning
1 pinch cayenne pepper, or more to taste
olive oil
1 (16 ounce) package frozen sweet corn, thawed
1 cup diced roasted red peppers
salt and ground black pepper to taste
5 fresh basil leaves, thinly sliced, or more to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Whisk mayonnaise, vinegar, 1/4 cup olive oil, garlic, water, 1/2 teaspoon black pepper, sugar, 1/4 teaspoon salt, Italian seasoning, and a pinch cayenne pepper together in a bowl until dressing is thick and creamy. Cover dressing with plastic wrap and refrigerate, 8 hours or overnight.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook and stir corn in hot oil until light golden brown and toasted, about 15 minutes.
  • Mix corn and red pepper together in a bowl. Pour enough dressing over corn mixture to coat completely. Season with salt and black pepper.

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
3 tablespoons sour cream
2 tablespoons finely chopped fresh chives
1 1/2 tablespoons fresh lemon juice
8 ounces dried fusilli
1 1/2 cups frozen corn kernels, thawed
2 cups halved grape tomatoes
1/2 cup thinly sliced scallions

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, sour cream, chives, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. About 3 minutes before the pasta is done, add the corn to the pot. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the tomatoes and scallions to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

3/4 cup coarsely chopped fresh cilantro
6 to 8 tomatillos, husked & coarsely chopped (about 8 ounces)
2 cloves garlic, smashed, peeled and quartered
1 avocado, halved, pitted, peeled and diced
1/2 jalapeno, coarsely chopped with seeds
1/2 onion, coarsely chopped
Juice of 1 lime
1 teaspoon ground cumin
1 teaspoon salt
6 ears fresh corn, shucked
2 tablespoons canola oil, to coat corn
Kosher salt and freshly cracked black pepper
Juice from 3 limes
1 ripe avocado, diced
1 Fresno chile pepper, seeded and finely diced
1/2 small red onion, finely diced
1/2 cup mayonnaise
1 tablespoon hot sauce
1 teaspoon chili powder
1 teaspoon cumin
1/4 cup chopped fresh cilantro
3/4 cup crumbled cotija cheese

Steps:

  • For the guacamole: Combine the cilantro, tomatillos, garlic, avocado, jalapeno, onion, lime juice, cumin and salt in a food processor or blender and pulse until combined. Set aside 1/2 cup of the guacamole for the creamy tomatillo dressing, and use remaining guacamole for another recipe.
  • For the charred corn salad: Preheat a grill pan over high heat. Brush or rub each ear of corn with the canola oil and sprinkle with salt and black pepper. Grill the corn until it gets a nice char, 2 to 3 minutes per side. Set aside until cool enough to handle, about 5 minutes. Stand each ear stalk-end down, in a wide, shallow bowl and slice the kernels off using your knife.
  • Combine the corn kernels, lime juice, avocado, Fresno chiles and red onions in a large bowl.
  • For the creamy tomatillo dressing: Mix together the mayonnaise, 1/2 cup tomatillo guacamole, hot sauce, chili powder and cumin. Add to the corn salad and toss to combine.
  • Fold in the cilantro and crumbled cotija and season with salt.
  • Serving suggestion: Portion the salad into small cups, squeeze additional lime over the top, and serve with a spoon.

4 cups drained canned corn niblets (or use both!) or 4 cups frozen thawed peas (or use both!)
1 small red onion, chopped (or thinly sliced)
2 cups chopped cucumbers (peeled and seeds removed)
1 stalk celery, finely diced
2 roma tomatoes, chopped
1/2 teaspoon fresh ground black pepper (or to taste)
2 tablespoons sugar
1 teaspoon mustard powder
1 cup sour cream
3/4 cup mayonnaise
1/4 cup vinegar
1 teaspoon seasoning salt (or to taste)
1/2 teaspoon garlic powder (optional)

Steps:

  • Place the corn or peas on a plate and pat dry using paper towel/s then place in a bowl with onions, cucumbers and celery (DO NOT add in the tomatoes you will add them in just before serving) toss to combine.
  • Mix all the dressing ingredients together until well combined.
  • Pour over the veggies; mix well to combine.
  • Season with black pepper and more salt if needed.
  • Cover and chill for a few hours to blend the flavors.
  • Just before serving add in the chopped tomatoes.

Barbecued Chicken Salad with Corn, Avocado, and Creamy Poblano Dressing image

I have never been able to do the cold-pizza-for-breakfast thing, but there are some foods I just love eating cold the day after-fried or barbecued chicken, for instance. Happily, my local grocery store does rotisserie chicken, either plain or barbecue, and on weeknights when homework is taking forever, I am grateful for this easy main course salad that the kids will actually dig into. For my husband and me, it's all about the creamy, spicy poblano dressing. But for the kids it's strictly ranch-no cilantro, please! For a more substantial meal, serve this with corn bread or, better yet, jalapeño corn bread (add chopped pickled jalapeños to your favorite recipe).

Yield makes 4 servings

Number Of Ingredients 13

1 1/2 to 2 cups diced barbecued chicken meat, from leftovers or a store-bought roasted chicken
1 ripe avocado, diced
1/2 cup frozen corn kernels, thawed, or 2 ears corn, grilled in the husk (see below), then shucked and cut from the cob
1/4 cup thinly sliced celery or celery hearts
3 scallions, thinly sliced
1 head Bibb lettuce, broken into leaves, washed, and dried
Creamy Poblano Dressing (or quick ranch dressing)
1 poblano, roasted and peeled (see below)
2 tablespoons fresh lime juice
2 tablespoons chopped scallion greens
1 garlic clove
1 cup Mayonnaise (p. 181)
2 tablespoons sour cream or buttermilk

Steps:

  • Toss all the ingredients except dressing in a salad bowl, then toss in the dressing or serve it on the side.
  • Place all the ingredients in a blender and puree until smooth. Adjust seasonings as necessary.
  • Feel free to also add red peppers, tomatoes, and cotija (an aged Mexican cheese) or any crumbly white cheese to the salad. This salad is also delicious with corn bread croutons. Day-old corn bread actually works best, because it will be drier. If you use fresh, you can dry it out in a 350°F oven for a few minutes.) Cut the corn bread into cubes, toss them with a little melted butter, and toast in a 350°F oven until golden brown and crisp. Let them cool, and toss with the salad.
  • Grilled corn has a sweet, smoky flavor that's great on its own (eaten off the cob with butter and a squirt of lime) and in salads. You'll want to grill the corn in its husk, because this preserves moisture and imparts a distinctive sweet and "corny" flavor. Simply soak the ears in cold water for about 20 minutes. Place them directly on a medium-low grill or over pale gray coals, and cover. Grill for about 20 minutes, turning the cobs every 5 minutes to ensure even cooking. As with any cooked corn, you'll know it's done when the kernels are tender and release a milky liquid when pierced. Peel away the husk and silk and serve as you wish.
  • To roast fresh poblanos or other peppers or chiles, place them directly on the grill over a low flame on a gas range, or on a baking sheet under a broiler, and char until evenly blackened, turning as necessary. Transfer peppers to a bowl and cover with a hand towel for about 5 minutes to steam the peppers (this will make their skins easier to remove). Alternatively, you can steam the peppers in a sealed plastic bag. Use your paring knife and/or your fingers to remove the stem, seeds, and skin from the peppers and use the smoky flesh as directed in the recipe.

How to make Creamy Sweet and Spicy Corn Salad

3 cups of corn (you can either shave it* from 3-4 cobs of corn or defrost some frozen)
1/2 of a red bell pepper, finely chopped
1/3 cup of finely chopped red onion (green onions work too!)
2-3 fresh jalapeno peppers, seeded and finely minced (decide how many jalapenos to use based on how spicy you like things)
a handful of cilantro leaves, chopped (about 1/4 cup)
1/4 tsp salt
1/8 tsp coarsely ground black pepper
4 ounces cream cheese
3 tbsp butter

Steps:

  • Preheat the oven to 350ºF. In a medium casserole dish, combine the corn, bell pepper, onion, jalapeno, cilantro, salt and pepper. Squeeze the cream cheese and butter into a microwave-safe dish. Microwave on high for 20 seconds. Stir. Repeat until the butter is melted and the cream cheese is soft. Stir for awhile until they are fully incorporated together and smooth (not curdled-looking at all). Pour the hot sauce over the corn mixture. Stir. Serve at room temperature or cover and bake for 25-30 minutes, until heated through.
