4 slices thick-cut bacon
1/4 cup butter
1 large onion, finely chopped (1 cup)
1 medium stalk celery, finely chopped (1/2 cup)
1 small carrot, finely chopped (1/3 cup)
2 cloves garlic, finely chopped
3 tablespoons all-purpose flour
2 1/2 cups chicken broth
1/2 cup dry white wine or chicken broth
3 cups frozen extra-sweet whole kernel corn (from 1-lb bag)
2 medium potatoes (Yukon Gold or other medium-starch potato), each cut into 8 chunks
3 cups half-and-half
1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
1 teaspoon salt or to taste
Freshly ground pepper, if desired
1 dried bay leaf
Dash of ground nutmeg
Chopped fresh parsley, if desired

Steps:

  • In 4-quart Dutch oven, cook bacon over medium heat 7 to 10 minutes, turning once, until crisp. Drain on paper towels; leave bacon drippings in pan. When cool, crumble bacon and set aside.
  • In same pan, cook butter, onion, carrot, celery and garlic over medium heat 10 to 12 minutes, stirring constantly, until vegetables soften but do not brown.
  • Sprinkle flour over vegetables and stir well with wire whisk to incorporate. Cook about 2 minutes. Stirring constantly, slowly add broth and wine (make sure to scrape bottom of pan as flour tends to stick). Stir in corn, potatoes, half-and-half, thyme, salt, pepper if desired, bay leaf and nutmeg. Heat soup to a gentle simmer. Cook 15 minutes, stirring occasionally, until potatoes are tender. (Corn can be naturally salty depending on the season, so make sure to taste before adding extra salt.) Remove bay leaf.
  • Garnish with parsley if desired, and crumbled bacon.

1 cup hot water
5 bacon strips
1 cup chopped green pepper
1/2 cup chopped onion

1-1/2 teaspoons seasoned salt

  • Dissolve bouillon in water; set aside. In a large Dutch oven, cook bacon over medium heat until crisp. 2 tablespoons butter
1 medium yellow onion, chopped
2 cups chicken broth
1/2 cup heavy cream

1 lb large shrimp, peeled and deveined, and cut into 1-inch pieces
3 green onions (white and light green parts trimmed and chopped)

Steps:

  • Put the corn cobs into a large pot with just enough water to cover (break the cobs in half if they don't fit).
  • Boil gently for 20 minutes. Discard the cobs and reserve the corn-infused water.
  • In a medium saucepan, melt the butter over medium heat.
  • Add the onion and cook, stirring occasionally, until softened, 3 to 5 minutes.
  • Add the corn kernels, chicken broth, cream, and 3 cups of the corn water.
  • Season with salt and pepper to taste and bring to a boil.
  • Lower the heat and let simmer for about 10 minutes.
  • Add the shrimp and simmer until just opaque, 2 to 3 minutes.

3 cups chicken broth
2 cups shredded rotisserie cooked chicken

Steps:

  • In a large saucepot over medium heat cook bacon until crispy and all fat has rendered out. Remove with a slotted spoon to a paper towel lined plate. Drain off all but 1 tablespoon fat, add onion, jalapeno, potato, red pepper, corn, salt and pepper and saute for about 5 minutes. Add thyme.
  • In a blender, puree half the mixture and add back to the pan. Add milk, chicken broth, and chicken and let simmer for about 5 minutes.
  • Transfer to serving bowls. Garnish each bowl with cooked bacon, fresh cilantro and a lime wedge.

This is a recipe I came up with a few years ago when I had a leftover ham bone from dinner, and it's wonderfully tasty. Good for using the leftovers after Christmas or Easter dinners. Serve with good, crusty bread and be ready to provide seconds. :)

1 ham bone, with at least 1 cup of meat remaining on bone
water, to cover
4 tablespoons butter
4 tablespoons flour
2 cups milk (whole milk preferred)
1 1/2 cups frozen corn or 1 (15 ounce) can corn
1 tablespoon dried onion flakes or 1/4 cup freshly minced onion
1 -2 clove garlic, minced
salt and pepper, to taste
paprika, to taste

Steps:

  • On a firm non-breakable surface, take a clean hammer and crack the middle of the ham bone so that marrow can escape during cooking.
  • Place ham bone flat in the bottom of a pot and add enough water to just cover.
  • Simmer over medium heat for 30 minutes.
  • Remove bone and cut off the remaining tender ham meat; set meat aside.
  • Turn up the heat on the ham broth and reduce down until you have about a couple of cups of broth, or to desired strength.
  • Skim the fat from the broth.
  • Melt butter in a large pan; remove from heat and mix in flour until smooth.
  • Slowly add 1 cup milk, stirring constantly.
  • Return pan to stove and cook on low heat until milk thickens.
  • Stir the corn, the ham pieces you set aside earlier, dried minced onion, and minced garlic into thickened milk; then slowly stir in the remaining milk and the ham broth.
  • Cook on low for about 15 minutes, but do not boil.
  • Add salt, pepper, and paprika to taste.
  • *Note: how much meat you leave on the bone is up to you, but I like to have a couple of cups of ham bits mixed into this chowder.
  • Optional: you can add a cup of cooked, chopped potato chunks to the soup near the end of the cooking, if you like.

2 tablespoons olive oil
1 medium yellow onion (diced) (about 2 cups diced)
2 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon smoked paprika
1/8 teaspoon turmeric
1 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
2 cups low-sodium vegetable broth
1 (15-ounce) can lite coconut milk
1 pound Yukon gold potatoes (unpeeled, cut into 1/2-inch dice) (about 3 cups)
4 sprigs fresh thyme (or 1/2 teaspoon dried)
1 (16-ounce) bag frozen sweet corn kernels

Steps:

  • Set a medium soup pot over low heat. Add the olive oil and the onion. Sweat the onion - cook it low and slow - until tender and translucent, 10-12 minutes.
  • Increase the heat to medium-low and add the flour, dry mustard, smoked paprika, turmeric, and salt. Cook, stirring constantly, for 3 minutes.
  • Slowly add the vegetable broth and deglaze the pan, stirring up any cooked bits that are stuck to the pan. Add the coconut milk, potatoes, and thyme.
  • Increase heat to medium-high and bring to a boil, stirring frequently. Reduce heat back to low and simmer until potatoes are tender, about 10 minutes.
  • Remove from heat. Remove the thyme stems. Stir in the corn.
  • Transfer half of the mixture - about 3 1/2 cups - to the pitcher of a blender. Puree completely and then add back to the soup.
  • Return pot to low heat and heat the soup back up. Taste and add more salt and pepper if desired.
  • Serve. I like to top individual bowls with a bit of fresh thyme and an extra sprinkle of black pepper, but it's not necessary!
  • Keeps well refrigerated for about 3 days.

2 1/2 c cooked ham, cubed (I shredded deli ham slices)
3 c chicken stock

4 c frozen corn
1 3/4 tsp dried thyme
1 1/4 tsp poultry seasoning
1 1/4 tsp sea salt

2 1/2 c cooked chicken breast, cubed
2 1/2 can(s) evaporated milk, 12 oz each (fat-free if desired)
1 3/4 c milk, divided (low fat if desired)
1/2 c Wondra flour (all-purpose may be used)

Steps:

  • 1. In a large saucepan, saute the onion and garlic in oil until onion is tender.
  • 2. Add ham; cook and stir for 2 minutes.
  • 3. Stir in the stock, water, potatoes, corn, bouillon, thyme, poultry seasoning, salt, and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until potatoes are tender.

CREAMY TURKEY-CORN CHOWDER



Creamy Turkey-Corn Chowder image

This soup works well with cooked chicken in place of turkey. We like things super-spicy, you can omit the jalapeno and dried chili flakes if desired. I also add in some chili powder or curry powder (which ever I feel like at the time lol!) also but that is optional, you can use milk in place of half and half cream but I have to say it is not as good, or use both!

1/4 cup butter
2 large onions, chopped
3 tablespoons minced fresh garlic
2 celery ribs, diced
1 jalapeno pepper, seeded and finely chopped (optional)
1 -2 teaspoon dried chili pepper flakes, to taste (optional)
1 -3 teaspoon dried thyme
4 large potatoes (peeled and cubed)
2 cups chicken broth or 2 cups turkey broth
5 cups half-and-half cream or 5 cups full-fat milk
2 tablespoons oxo chicken bouillon powder or 2 chicken bouillon cubes
2 (15 ounce) cans whole kernel corn, drained
2 (14 ounce) cans cream-style corn
1/3 cup grated parmesan cheese, plus more
parmesan cheese, for topping
5 cups chopped cooked turkey
salt and black pepper
1/3 cup whipping cream
garlic-flavored croutons (optional)

Steps:

  • In a large pot melt butter over medium heat; add in onions, garlic, celery, jalapeno, chili flakes and thyme; saute for about 4 minutes.
  • Add in all remaining ingredients including the cooked turkey cubes (except whipping cream) simmer until the potatoes are fork tender (about 25-30 minutes, cooking time will depend on the size of you potatoes).
  • Season with salt and pepper, then add in the whipping cream; bring to a simmer then remove from heat.
  • Ladle into bowls and top/sprinkle with more Parmesan cheese then croutons if desired.

1 bag (24 oz) frozen corn & butter sauce
1 bag (19 oz) Value Size frozen roasted potatoes with garlic & herb sauce
1 tablespoon vegetable oil
1 medium onion, chopped (1/2 cup)
1 cup Progresso™ chicken broth (from 32-oz carton)
2 cups shredded cooked chicken
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 can (12 oz) evaporated milk
Sour cream
Chopped green onions

Steps:

  • Cook frozen vegetables as directed on bags, using minimum cook time.
  • In 6-quart saucepan, heat oil over medium heat. Cook onion in oil until tender. Add remaining chowder ingredients including cooked vegetables with sauce. Heat just to boiling, stirring frequently. Reduce heat to low; simmer uncovered about 20 minutes or until vegetables are tender.
  • Serve hot with toppings.

This is a recipe that I've modified to be low-fat and vegetarian. The original called for heavy cream and chicken broth. I think it is quite yummy, and especially good on chilly evenings!

6 red potatoes, peeled and cubed
2 (11 ounce) cans whole kernel corn, undrained
½ cup chopped green bell pepper
½ cup chopped sweet onion
1 tablespoon red pepper flakes
2 cups vegetable broth
1 (12 ounce) package low-fat, firm silken tofu
salt to taste

Steps:

  • Place potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 30 minutes; drain.
  • To the potatoes add corn, bell pepper, onion, red pepper flakes and vegetable broth. Boil for about 15 minutes; remove from heat.
  • In a food processor or blender puree all but 1 1/2 cups of the vegetable and broth mixture with the tofu. Process in batches if necessary. Combine the pureed mixture with the remaining 1 1/2 cups vegetable and broth mixture, and cook over low heat for 5 minutes; do not boil. Season with salt to taste.

1 bonless sninless chicken breast,cooked and diced in bite sized
1 broccoli crown,chopped in bite sized pieces
1 c onion,chopped
2 Tbsp diced garlic
2 Tbsp butter
4 c chicken stock or vegetable stock
2 can(s) kernel corn,drained
1 c half and half

Steps:

  • 1. In a 6 Quart Dutch oven,melt butter on med./high heat. Add Onion and Garlic.Saute' until onion is tender. Add broth,chicken,corn,and broccoli.Cook until brocoli is crisp tender.Reduce heat.Add 1 cup Half and half.Cook for 2-3 min. Do Not Boil!
  • 2. Serve w/ crusted bread and top chowder with Shredded cheese. Enjoy!

1 medium onion, chopped (1/2 cup)
1 garlic clove, finely chopped

1/2 teaspoon coarse salt (kosher or sea salt)

3 cups reduced-sodium chicken broth or 3 cups vegetable broth
1 (16 ounce) bag frozen broccoli cuts
2 cups frozen sweet corn (from 16-oz bag)
1 cup half-and-half

Steps:

  • In 4-quart saucepan, melt butter over medium heat. Cook onion and garlic in butter 2 to 3 minutes, stirring frequently, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, 1 minute.
  • Stir in broth, broccoli and corn. Heat to boiling over high heat. Reduce heat; simmer 5 to 7 minutes, stirring occasionally, until vegetables are tender.

2 small potatoes
6 slices bacon
1 medium onion, chopped
1 stalk celery, chopped
1/4 cup flour
4 cups whole milk
1 (15 ounce) can creamed corn
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • Peel and dice potatoes into small pieces (should equal 1 c); cook until just tender; set aside.
  • Fry bacon until crisp; set aside to drain on paper towel; when cool, crumble bacon into small pieces.
  • Discard all but 3 Tbsp bacon fat; saute onion and celery in bacon fat until soft.
  • Sprinkle flour over onion and celery; cook, stirring constantly, for one minute; gradually stir in milk; bring to boiling over medium heat, stirring occasionally.
  • Stir in corn, potatoes, bacon, and seasonings; serve hot.
