3 cups strong coffee, chilled
1 tablespoon sugar
1 cup half-and-half cream
4 scoops coffee ice cream
3/4 cup club soda
whipped cream, for top

Steps:

  • Mix coffee, sugar and half & half.
  • Fill 4 tall glasses about halfway.
  • Add 1 scoop of ice cream to each, then fill up with club soda.
  • Top with whipped cream.

Coffee ice cream is a blend of ice cream with strongly brewed coffee. Churned into creamy goodness, its the best summer dessert for a coffee lover!

1 c. granulated sugar
1 pt. heavy cream
1 c. whole milk
Pinch of salt
6 egg yolks
1/2 c. strongly brewed coffee
Chocolate shavings, optional

Steps:

  • In a medium pot, combine the sugar, heavy cream, milk and salt. Place over medium heat, and stir frequently, just until the sugar is dissolved (do not boil). Remove from the heat.
  • Meanwhile, in a medium bowl, whisk together the egg yolks. Remove 1/3 cup of the warm cream mixture from the pot. While whisking the yolks constantly, slowly drizzle the cream into the eggs to temper. Transfer the warmed egg mixture to the pot with the remaining cream mixture, whisking well to combine. Return the pot to medium heat, stirring frequently with a rubber spatula to scrape the bottom and corners of the pan, until the mixture thickens enough to coat the back of the spoon (on a thermometer, the temperature should be between 160° to 180°). Immediately pour through a mesh strainer into a large bowl and set it over a bowl of ice water. Stir to cool the mixture.
  • Add the coffee and stir until the mixture is at room temperature. Cover and refrigerate the ice cream base for 4 hours until cold, or overnight.
  • Transfer to an ice cream maker and freeze according to the manufacturer's instructions. You can eat this directly from the machine, like soft serve, or transfer to a container to freeze for at least 6 hours, or up to 48 hours, for best texture and scoop-a-bility. Serve topped with chocolate shavings, if you like.

1 tablespoon instant coffee granules
2 tablespoons butter, melted
1 cup milk

1 can (14 ounces) sweetened condensed milk

  • In a large saucepan, combine the sugar, cornstarch, coffee and butter until blended. Stir in milk. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. 4 tablespoons instant espresso powder
2 tablespoons hot water
1 cup sugar
10 large egg yolks
1 vanilla bean
2 cups heavy cream
2 cups fat-free milk
1/4 teaspoon salt

Steps:

  • Prepare an ice bath; set aside. Stir together espresso powder and hot water in a small bowl; set aside. In a medium bowl, whisk together 1/2 cup sugar with the yolks; set aside.
  • Split the vanilla bean lengthwise with a sharp paring knife. Gently scrape out all the seeds. Place vanilla bean scrapings and pod in a medium saucepan with heavy cream, milk, remaining 1/2 cup sugar, and salt. Bring milk mixture just to a simmer. Whisking constantly, slowly ladle about 1/2 cup of the hot milk mixture into the egg yolk mixture. Continue adding remaining milk mixture, about 1/2 cup at a time.
  • Pour mixture back into saucepan; cook over low heat, stirring constantly with a wooden spoon, until mixture is thick enough to coat the back of the spoon, 3 to 5 minutes. The custard should retain a line drawn across the back of the spoon with your finger; stir in reserved espresso mixture. Pour through a mesh sieve into a medium bowl set in the prepared ice bath; discard vanilla bean. Stir occasionally until cooled. Cover with plastic wrap, and chill in refrigerator for at least 1 hour and preferably overnight.
  • Pour into an ice-cream maker. Process according to manufacturer's instructions until set, but not hard.
  • Transfer soft ice cream to a metal or plastic container; freeze for at least 4 hours and up to overnight.
