While I was at a hotel in Scottsdale, Arizona, I remember pestering a chef for this recipe. It's been so many trips ago, though, I can't remember what hotel I was at. Nevertheless, this salad is a nice twist on the usual Ceasar.

1/2 cup mayonnaise
1 1/2 tablespoons low sodium chicken broth
1 tablespoon low sodium soy sauce
1 tablespoon fresh lemon juice
1 1/2 teaspoons chopped chipotle chiles, from a can
1 teaspoon brown sugar
1 large head romaine lettuce, torn into bite-sized pieces
2 medium tomatoes, seeded, diced
1/2 cup corn kernel
4 tablespoons parmesan cheese, grated fresh

Steps:

  • DRESSING:.
  • Whisk all dressing ingredients together in a medium bowl until well blended. Season to taste with salt and pepper.
  • SALAD:.
  • Mix lettuce, tomatoes and corn in large bowl.
  • Add 3/4 of dressing and 2 T. of Parmesan. Toss.
  • Determine if more dressing is needed. Add to taste.
  • Sprinkle with remaining Parmesan before serving.

5 tablespoons fresh lime juice
1 shallot, peeled
1 garlic clove, peeled
1 -2 teaspoon minced chipotle chile in adobo
1 teaspoon sugar
1/2 teaspoon ground cumin
salt
fresh ground black pepper
3/4 cup mayonnaise
1/4 cup sour cream
1/2 cup fresh cilantro

Steps:

  • Process lime juice, shallot, garlic, chipotle, sugar, cumin, 1/2 teaspoon salt, and 1/2 teaspoon pepper in blender until shallot and garlic are finely chopped, about 15 seconds.
  • Add mayonnaise, sour cream, and cilantro; continue to process until smooth, about 15 seconds.
  • Makes about 1 1/2 cups.
  • Store in the refrigerator.

2 Tbsp. white wine vinegar
1/4 cup water

I made this up the other night because I ran out of fat free yogurt for a raita. It was great on our grilled Thai chicken, and I'm sure it would be great with grilled fish or shrimp, on grilled veggies, etc. Very refreshing, but with a kick! Add an extra chipotle if you love spicy... If you have fresh tomatoes or cucumber, de-seed them and finely chop and add them in, for a great relish!

3 garlic cloves
1 large chipotle chile in adobo
1 cup fresh cilantro, loosely packed
2 spring onions
2 teaspoons sea salt
2 teaspoons ground cumin
2 tablespoons lime juice

Steps:

  • Roughly chop all the veggies, from garlic to onions, and add to a mini-chopper (or blender, but my mini-chopper works soooo much better).
  • Add the sour cream, salt, cumin and lime juice.
  • Blend until well mixed, but with a little texture.
  • Cover and chill for at least an hour before serving. Check for seasoning and add ground pepper and salt if needed.

This delicious, creamy dressing is non-dairy and gluten-free. My meat-and-potato husband loves it on his grilled chicken, steak, and spread on his burgers. I love it as a substitute for mayonnaise in tuna sandwiches. This will be spicy! If you omit the adobo and chipotle, this makes a great recipe base for other creamy dressings. Rice milk can be used for the soy milk. Use your favorite fresh herbs in place of the dill. You can make sauce thinner with the addition of more soy milk.

2 tablespoons soy milk
2 tablespoons olive oil
2 tablespoons lemon juice

This isn't your grandma's wedge salad! We've updated it by charring cabbage wedges, then drizzling them with a tangy chipotle dressing and topping it all off with sweet quickled (quick-pickled) red onions, fresh summer corn and salty Cotija for a new twist on a classic!

3 tablespoons olive oil, plus more for the grill grates
1/2 small head green cabbage, root trimmed (about 1 pound)
1/2 small head red cabbage, root trimmed (about 1 pound)
Kosher salt and freshly ground black pepper
1/2 cup distilled white vinegar
2 tablespoons sugar
1/2 teaspoon whole black peppercorns
1/2 teaspoon coriander seeds
1/2 teaspoon yellow mustard seeds
1 small red onion, thinly sliced (about 3/4 cup)
6 tablespoons full-fat Greek yogurt
2 tablespoons lime juice (from 1 lime)
2 teaspoons chipotle in adobo sauce
1/2 teaspoon honey
1 cup heirloom cherry tomatoes, halved
1/2 cup fresh corn kernels (from 1 ear)
1/2 cup canned black beans, drained and rinsed
1/2 cup crumbled Cotija (1 ounce)
2 tablespoons roughly chopped fresh cilantro, leaves and tender stems

Steps:

  • Prepare a grill or cast-iron grill pan for medium-high heat. Clean and oil the grill grates.
  • Cut the green and red cabbage halves into 6 wedges each, about 1 inch thick, leaving the core intact. Add the cabbage wedges to a baking sheet, brush on both sides with the olive oil and season with 1 teaspoon salt and a few grinds of pepper. Grill the cabbage until charred and slightly softened, about 5 minutes per side. Transfer back to the baking sheet and allow to cool slightly.
  • Combine the vinegar, sugar, black peppercorns, coriander seeds, mustard seeds, 2 teaspoons salt and 1/2 cup water in a small saucepan. Bring to a simmer over high heat and cook until the sugar dissolves, about 1 minute. Add the onions to a small heatproof bowl and pour the vinegar mixture over the onions. Set aside until ready to use.
  • Whisk together the yogurt, lime juice, chipotle in adobo sauce, honey and 1/2 teaspoon salt in a small bowl until combined.
  • Shingle the cabbage wedges on a serving platter, alternating between the green and red. Drizzle generously with the chipotle dressing and top with the tomatoes, corn, black beans, pickled onions, Cotija and cilantro.

4 heads kale (this will seem like a lot but will wilt down when the salt is added)
1 tablespoon salt (more if needed to get kale to wilt, this should be plenty)
2 cups cherry tomatoes, sliced in half
1 small onion, chopped
1 cup hulled hemp seeds
3 avocados
2 chipotle peppers
1/2 cup olive oil
2 tablespoons Agave
1/4 cup lemon juice

Steps:

  • Remove the stems from the kale, then wash and cut or tear into small pieces. Place into a bowl, add half the salt and start to massage the kale until it wilts and takes on a cooked texture.
  • Fold in the tomatoes, onions, and hemp seeds.
  • Blend all dressing ingredients in a high-speed blender until creamy and mix into the kale salad. ENJOY!
