1 large onion, chopped
1 teaspoon olive oil
1 garlic clove, minced
2-1/2 cups diced cooked chicken breast
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3/4 cup diced fully cooked lean ham
1/4 cup grated Parmesan cheese
2 egg whites
1/2 teaspoon dried basil
1/8 teaspoon pepper
Dash ground nutmeg
12 uncooked manicotti shells
SAUCE:
3/4 cup all-purpose flour
3 cups reduced-sodium chicken broth
1 cup fat-free milk
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
Dash cayenne pepper
1/4 cup grated Parmesan cheese

Steps:

  • In a small skillet, saute onion in oil until tender. Add garlic, cook 1 minute longer. In a large bowl, combine the onion mixture, chicken, spinach, ham, cheese, egg whites, basil, pepper and nutmeg; set aside. , Cook manicotti shells according to package directions. Meanwhile, for sauce, combine flour and broth in a large saucepan until smooth; gradually stir in the milk, salt, nutmeg, pepper and cayenne. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Spoon 1 cup into chicken mixture. Add cheese to remaining sauce. , Spread 1 cup sauce into a 13x9-in. baking dish coated with cooking spray. Drain shells; stuff with chicken mixture. Arrange over sauce. Drizzle with remaining sauce. Cover and bake at 375° for 35-40 minutes or until bubbly and heated through.

12 uncooked manicotti shells
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/2 teaspoon pepper
1/4 teaspoon salt

3 cups 2% milk
1 carton (15 ounces) ricotta cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 teaspoons dried oregano
1-1/2 cups cubed fully cooked ham
1/2 cup grated Parmesan cheese

Steps:

  • Cook manicotti according to package directions. For sauce, in a large saucepan, melt butter. Stir in the flour, pepper, salt and nutmeg until blended. Gradually whisk in milk. Bring to a boil. Cook and stir for 1-2 minutes or until thickened., In a large bowl, combine the ricotta cheese, spinach and oregano. Stir in ham; add 1/2 cup sauce. Drain manicotti; stuff with ham mixture. Spread 1/2 cup sauce into a greased 13-in. x 9-in. baking dish. Top with stuffed manicotti. Pour remaining sauce over top; sprinkle with Parmesan cheese., Cover and bake at 350° for 25-30 minutes. 1/2 cup chopped onion
1 tablespoon canola oil
3 cups (1 pound) ground fully cooked ham
1 can (4 ounces) sliced mushrooms, drained
1 cup shredded Swiss cheese, divided
3 tablespoons grated Parmesan cheese
1/4 to 1/2 cup chopped green pepper
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups 2% milk
Paprika
Chopped fresh parsley

Steps:

  • Cook manicotti according to package directions; set aside. In a large skillet, saute onion in oil until tender. Remove from the heat. 2 skinless, boneless chicken breast halves - cubed
1 egg, beaten
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup drained, creamed cottage cheese
¼ cup grated Parmesan cheese
10 manicotti shells
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
1 cup milk
1 teaspoon Italian seasoning
1 cup boiling water
1 cup shredded Cheddar cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium heat, cook chicken until opaque and juices run clear.
  • In a medium bowl, combine cooked chicken, egg, spinach, cottage cheese and Parmesan. Stuff uncooked manicotti shells with chicken mixture. Arrange shells, not touching one another, in a 9x13 inch baking dish.
