I got this recipe from my husband's step-grandmother and it is delicious and easy. I normally cut down on the ingredients because its just the 2 of us eating but it is so yummy and easy! I also use a frozen pie crusts and tear apart the crusts and put it and the chicken mixture in a pyrex dish-so much easier!!

1 cup onion, Chopped
1/2 cup flour
1 cup celery, Chopped
2 cups chicken broth
1 cup carrot (Chopped or Sliced)
1 cup potato, Diced
1/2 cup frozen green pea
1 cup half-and-half cream
1/3 cup butter or 1/3 cup margarine
1 teaspoon salt
1/4 teaspoon pepper
4 cups cooked chicken, Chopped
2 frozen pie crusts

Steps:

  • Sauté onion, celery, potatoes and carrot in butter for 10 minutes.
  • Add flour to sautéed mixture, stirring well; cook 1 minute, stirring constantly.
  • Combine broth and half and half, also add ½ cup water; gradually stir into vegetable mixture.
  • Cook over medium heat, stirring constantly, until thickened and bubbly.
  • Stir in salt and pepper.
  • Add chopped chicken, stirring well.
  • Pour chicken mixture into a greased shallow 2 quart casserole. Top with pastry pie crusts.
  • Cut slits to allow steam to escape.
  • Bake at 400 degrees for 40 minutes or until crust is golden brown.
  • ** I add a little bit more half and half and add some water because otherwise it thickens too much. Don't let it get too thick before you pour it in the container to bake. The first time I made this it was too thick and ended up being a little dry by the time we got to eat it. So when it starts to thicken, go ahead and combine chicken with it and put it into the oven.

2 (8 ounce) skinless, boneless chicken breast halves
6 tablespoons salted butter
6 tablespoons all-purpose flour
1 cup evaporated milk
2 (32 ounce) cartons chicken broth (such as Swanson®)
3 large russet potatoes, peeled and cut into chunks
4 medium carrots, peeled and cut into 1-inch chunks
1 cube chicken bouillon
1 ½ teaspoons ground black pepper
1 pinch salt
1 cup frozen peas
1 cup frozen corn

Steps:

  • Put 1/2 inch of water in a large pan over medium heat; bring to a simmer, about 2 minutes. Place chicken in the simmering water, cover, and cook until no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and shred when cool enough to handle.
  • Melt butter in a large pot. Add flour and stir continuously with a wooden spoon or whisk until a thick paste forms; continue cooking roux for 2 minutes. Add evaporated milk; stir until incorporated. Add chicken broth and stir until no lumps remain. Bring to a boil.

3 pieces boneless, skinless chicken breast
3 onions
2 fresh bay leaves
2 tablespoons extra-virgin olive oil
8 ounces button mushrooms, sliced or quartered
4 baby potatoes, diced
2 parsnips, peeled and diced 1/2-inch thick
2 small ribs celery, chopped
A few sprigs fresh sage leaves, very thinly sliced
Salt and freshly ground black pepper
3 tablespoons butter
3 tablespoons all-purpose flour
Splash white wine
1 rounded tablespoon Dijon mustard
2 cups chicken stock
1/2 cup heavy cream
1 sheet frozen puff pastry dough, defrosted
1 egg

Steps:

  • Place the chicken breasts in a pot with 1 quartered onion and 1 bay leaf. Fill the pan with just enough water to come to the top of the chicken breasts. Bring the mixture to a low boil, reduce the heat to a simmer and poach the chicken 12 to 15 minutes. Remove the chicken and dice or shred with forks. Reserve the poaching liquid.
  • In the same pan, heat 2 tablespoons extra-virgin olive oil, a couple of turns of the pan over medium-high heat, add the mushrooms and lightly brown. When the mushrooms are just tender, add 2 chopped medium onions, potatoes, parsnips, celery, sage, salt, pepper and remaining bay leaf. Cover the pot and sweat the vegetables 10 minutes, stirring occasionally. Remove the bay leaf. Melt the butter in the pot, add the flour and stir to make a light roux. Deglaze the pan with a splash of white wine and add one to 2 cups of reserved poaching liquid. Whisk in the mustard and 2 cups chicken stock. Stir in the cream. Thicken to a light gravy consistency. Adjust the salt and pepper and add in the chicken.
  • Reduce the heat to low and bake off the pastry tops.
  • For make-ahead meal: Bake off the pastry tops; cool the filling and store. Reheat the filling, covered, over medium heat to a bubble, and then reduce the heat to a simmer.
  • To prepare the pastry tops: Cut the pastry into shapes which reflect the shape and size of the dishes or bowls you wish to serve the soup in. Beat the egg with a splash of water and arrange the cut pastry on a nonstick baking sheet or on parchment-lined sheet pan. Brush the dough with the egg wash and bake to golden at 425 degrees F, 12 minutes.
  • Cook's Note: Chicken and Mushroom filling can also be served as a thick soup with crusty, warm baguette for dipping.

CREAMY DEEP DISH CHICKEN POT PIE (DOUBLE CRUST)

This recipe was modified from the Kraft recipe. It is easy and delicious and people will think you slaved over the stove to make it. You can make this Pot Pie a day before and cover it and pop it the refrigerator. The next day just bake it for 40 minutes instead of 30 minutes and you have a great weeknight meal. Serve with a salad and crusty rolls and YUM! It's really rich so when I cut into 8 slices it is a perfect serving size. The leftovers freeze well to heat up later in the oven.

1/4 cup Kraft light zesty italian dressing
1 potato, peeled and cubed
4 ounces neufchatel cheese, cubed
1/3 cup flour
1 3/4 cups chicken broth
1 (10 ounce) bag frozen mixed vegetables, thawed
1 cup cheddar cheese, shredded
1 refrigerated pie crust (double)

Steps:

  • Heat over to 375.
  • Cook chicken in dressing in large skillet on medium heat for 5 minutes. Add cubed potato, cover and simmer for another 10 minutes.
  • Add neufchatel cheese; cook and stir until melted.
  • Stir in flour. Add broth stir. Simmer for uncovered for 5 min, stirring occassionally.
  • Add frozen vegetables and simmer uncovered for an additional 5minutes. Stir in cheese until melted.
  • Place bottom crust into a 10 inch deep dish pie plate. Pour chicken mixture into pan and cover with top crustcrust. Flute edges together.
  • Cut slits in crust to allow steam to escape.
  • Bake 30 minutes or until golden brown.
  • Allow to sit for 5 minutes then cut into 8 slices and serve.

A great way to use up at that leftover chicken or turkey. We always have some leftover chicken after grilling and love to find new ways to make supper. I looked at Food.com and Bisquick.com for some ideas but in the end ended up taking 5 different recipes and making our own to taste. This is one of those hearty stick with you suppers. Serve with a great salad and bread (if you don't make it into a pot pie). We have also made this with different kinds of rice (wild, brown, and white). All very tasty! Enjoy!

1 medium onion, chopped
2 stalks celery, thinly chopped
1 tablespoon butter
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of chicken soup
1 (16 ounce) can chicken stock (or 2 Chicken bullion cubes in 2 c. warm water)
1 teaspoon ground sage
1 teaspoon thyme
4 cups cooked chicken, cubed (your choice of white or dark)
2 cups cooked rice (your choice of wild, brown, or white-I also add a Tbsp of granulated garlic to the water I cook the )
1 lb mixed frozen vegetables (ie. peas, corn, carrots, green beans etc)
2 cups shredded cheddar monterey jack cheese
2 cups Bisquick
1 1/2 cups milk
1/2 teaspoon ground sage
1/2 teaspoon thyme
salt and fresh ground pepper

Steps:

  • In a 5 qt pot:
  • 1) Cook chopped onions and celery in the butter for 10 minutes on medium heat.
  • 2) Preheat oven to 350 degrees.
  • 3) Add both cans of soup, chicken stock,sage, and thyme to pot and mix thoroughly, turn heat down to med-low.
  • 4) Add Chicken, Rice, and Veggies mix thoroughly and heat to a simmer.
  • 5) Using a 9x13 pan (we use glass) (lightly spray if using metal) pour heated filling into pan.
  • 6)Bake covered for 30-40 minutes or until bubbling.
  • 7) Remove from oven and let stand for 5 minutes until serving.
  • **Optional Cheese or Pot Pie Topping**.
  • At step 6 , uncover sprinkle with cheese and return to oven until cheese melts. Continue with step 7 and Enjoy!
  • For Pot Pie Crust.
  • After step 4, while filling is warming to a simmer mix the Bisquick, Milk, Sage and Thyme. After pouring the hot filling into your pan spread the top with your Bisquick mixture. Bake at 350 for 35-40 minutes uncovered or until Bisquick crust has risen and lightly browned. Remove from oven and let sit for 5 min before serving.
  • ***Cooks Note***.
  • Play with the recipe and make it your own. If you and yours like garlic (like we do!) add some to the filling mix and the Bisquick crust mix to your liking. We have also added onion powder, red pepper flakes if you like some heat, mixed the cheese in and still used the Bisquick crust. Really your imagination is your limitation. :o) If you don't have time for baking you could serve this right out of your 5 qt pan once heated through and the frozen veggies hot. We have done this too on those busy, got to get there nights.

  • Slowly add the broth, whisking until smooth, and bring to a boil.
  • Add the thyme, bay leaf, shallot, celery, carrots, mushroom, peas, potatoes, and chicken.
  • Sea salt and pepper (to taste).
  • Simmer, covered until the potatoes are tender, 10-15 minutes.

  • Remove bay leaf and discard.

2 large potatoes, peeled and cubed
2 cups all-purpose flour
1 teaspoon salt
¾ cup shortening
5 tablespoons ice cold water
½ cup milk, or more to taste
3 tablespoons butter
2 cups chopped cooked chicken, or to taste
1 ½ cups frozen mixed vegetables
1 (10.5 ounce) can condensed cream of mushroom soup
½ cup shredded Cheddar cheese
½ cup shredded mozzarella cheese
2 teaspoons garlic salt
1 teaspoon ground paprika
1 pinch cayenne pepper
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 15 minutes.
  • While the potatoes are cooking, mix flour and salt together in a bowl. Slowly cut in shortening with a pastry cutter. Sprinkle in 1 tablespoon ice water at a time and knead until dough forms a ball. Divide in half and flatten each piece onto a lightly floured surface. Use a rolling pin to roll out two 9-inch pie crusts.

1 - rotisserie chicken, deboned. (aprox. 1 pound)
2 cup(s) frozen mixed vegetables, thawed
1O ounce package(s) philadelphia italian cheese and herb cooking cream
1 - ready to use pie crust

Steps:

  • Mix all the ingredients except the pie crust. Pour into a pie plate. Cover with the pie crust, fluting the edges.
  • Bake at 400* For 25 to 30 minutes.

One 8-ounce package sliced button mushrooms
One 10.75-ounce can condensed low-fat cream of chicken soup, such as Campbell's Healthy Request
1/2 cup water
1 1/2 teaspoons fresh thyme leaves
2 cups frozen mixed vegetables
2 cups shredded skinless chicken breast meat from a rotisserie or roast chicken
1/4 cup jarred cocktail onions, roughly chopped
Freshly ground black pepper
1/2 cup plus 2 tablespoons Bisquick Heart Smart baking mix
1/3 cup skim milk
2 tablespoons egg substitute

Steps:

  • Preheat the oven to 450˚F.
  • Combine the mushrooms, soup, water, and thyme in a medium saucepan, and bring to a boil over high heat. Cover, and reduce the heat to low. Simmer until the mushrooms are almost tender, about 5 minutes.
  • Add the frozen vegetables, chicken, and onions to the saucepan. Season with pepper to taste. Pour the chicken mixture into an 8 × 8-inch glass baking dish.
  • In a medium bowl, combine the baking mix, milk, and egg substitute. Stir to thoroughly combine. Use an offset spatula to spread the dough over the top of the chicken mixture, covering it evenly.
  • Place the baking dish on a baking sheet, and bake until the crust is golden brown and the filling is hot and bubbly, 20 to 25 minutes. Serve hot.

1 1/2 cups shredded cooked chicken breast
1 1/2 cups frozen mixed vegetables
1 jar (16 oz) Alfredo sauce
1 sheet frozen puff pastry (from 17.3-oz package), thawed

Steps:

  • Heat oven to 425°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, mix chicken, frozen vegetables and Alfredo sauce until well mixed. Spoon into baking dish.
  • Place pastry sheet on top of chicken mixture, or use cookie cutter to cut pastry into shapes before placing on top of chicken mixture.
  • Bake 20 to 25 minutes or until pastry is golden brown.
