2 pounds chicken tenders
2 tablespoons olive oil
2 tablespoons butter
½ cup Marsala wine
½ cup chicken stock
1 cup heavy whipping cream
1 teaspoon ground mustard

Steps:

  • Mix flour, salt, and pepper in a shallow dish. Press chicken tenders in the flour to coat completely; shake gently to remove any excess flour.
  • Heat olive oil in a large skillet over medium, tilting the pan to coat the cooking surface in oil. Melt the butter in the skillet. Cook the chicken tenders in the hot butter until evenly browned, 7 to 8 minutes.
  • Pour the Marsala wine into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon; cook until the wine is hot, about 30 seconds. Pour chicken stock into the skillet.
  • Stir heavy cream and mustard together in a bowl; add to the skillet. Bring the mixture to a simmer and cook another 10 minutes.

3 tablespoons olive oil
1 ½ lb boneless, skinless chicken breast, cut into chunks
2 cups white mushroom, or button mushrooms, sliced
1 white onion, sliced
3 cups chicken stock
1 ½ cups heavy cream
1 cup marsala wine
3 cups penne pasta, uncooked
1 cup shredded parmesan cheese
salt, to taste
pepper, to taste
1 tablespoon fresh parsley, optional garnish

Steps:

  • Heat a large pot over medium-high heat.
  • Add 2 tablespoons of olive oil and chicken breast. Season with salt and pepper to taste.
  • Cook until chicken is no longer pink. Remove and set aside.
  • Add the remaining tablespoon of oil, and the mushrooms and onion. Season with salt and pepper to taste. Cook until onions are browned, stirring occasionally.
  • Return the chicken to the pot. Add the stock, cream, wine, and pasta, bring up to a simmer, and cover.
  • *Marsala wine can be purchased at most grocery stores near the dessert or sweet wines and gives the dish a distinct flavor. However, if you can't get your hands on Marsala, you can substitute 1 cup of white wine (240 ml) plus 1 ½ tablespoons of brandy.
  • Simmer until pasta is tender, about 15-20 minutes, stirring occasionally.
  • When pasta is tender, stir in parmesan cheese until smooth. Remove from heat.
  • Garnish with fresh parsley.

I got this recipe from my roommate who had grown up with it. I try not to eat much meat but the sauce alone over rice or pasta is to die for. It is such a great mixture of savory, earthy, salty and a tiny bit sweet.

1 3/4 cups reduced-sodium chicken broth (14 oz)
2 tablespoons finely chopped shallots
5 tablespoons unsalted butter
10 ounces mushrooms, trimmed and thinly sliced
1 1/2 teaspoons finely chopped sage
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup all-purpose flour
4 skinless chicken breast halves (2 lbs total)
2 tablespoons olive oil
1/2 cup plus 2 tablespoons dry marsala wine
2/3 cup heavy cream
1 teaspoon fresh lemon juice

Steps:

  • Put oven rack in middle position and preheat oven to 200°F.
  • Bring broth to a boil in a 2 quart saucepan ver high heat then boil, uncovered, until reduced to about 3/4 cup, about 20 minutes.
  • Cook shallot in 3 T butter in a 8-10 inch heavy skillet over medium heat, stirring, until shallot begins to turn golden, about 1 minute Add mushrooms, 1 tsp sage, salt and pepper and cook, stirring occasionally until liquid mushrooms give off is evaporated and they begin to brown, 6-8 minutes. Remove from heat.
  • Put flour in a wide shallow bowl. Gently pound chicken to 1/4 inch thick between 2 sheets of plastic wrap using the flat side of a meat pounder or a rolling pin.
  • Pat chicken dry and season with salt and pepper, then dredge in flour, 1 piece at a time, shaking off exess.
  • Heat 1 T each of oil and butter in a 10-inch heavy skillet over medium-high heat until foam subsides, then saute half of the chicken, turning over once, until golden and just cooked through, about 4 minutes total. Transfer cooked chicken to a large ovenproof platter, arranging in one layer, then put platter in oven to keep warm. Wipe out the skillet and cook remaining chicken in same manner, then transfer to oven, arranging in one layer.
  • Without cleaning, add 1/2 cup wine to skillet and boil over high heat, stirring and scraping up brown bits, about 30 seconds. Add reduced broth, cream and mushrooms, then simmer, stirring occasionally, until sauce is slightly thickned, 6-8 minutes. Add lemon juice and remaining 2 T wine and 1/2 tsp sage.
  • Serve chicken on top of rice or pasta with sauce poured over.

375 g quick-cooking polenta (I buy one that is 2min cook time)
750 ml water

60 g butter
2 tablespoons cream

Steps:

  • Chicken Marsala.
  • Heat oil in a large frying pan add onion to pan and stir until soft, add the mushrooms and stir for a few minutes. At the same time in another frying pan be cooking the chicken this just has to be turned a couple of times during the cooking process and cooked until done.
  • Add Marsala wine, water and stock powder to mushrooms and bring to the boil then turn down the heat to medium. Stir a little water into the cornflour and to mixture to thicken slightly.
  • Serve chicken over soft polenta pour some sauce over the chicken and top with chives.
  • Soft Creamy Polenta.
  • Bring the water and the stock to the boil in a pan. Add the polenta slowly whisking all the time while adding. When all the polenta has been added turn down the heat and stir continuously with wooden spoon until mixture is thick.

4 skinless, boneless chicken breast halves
½ cup all-purpose flour
¼ teaspoon paprika
¼ teaspoon cayenne pepper
1 pinch salt and freshly ground black pepper
2 tablespoons olive oil
2 tablespoons butter, divided
1 sweet onion, chopped
1 cup shiitake mushrooms, cut in half
1 cup fresh oyster mushrooms, cut in half
1 cup cremini mushrooms, cut in half
1 (12 ounce) package dry fettuccine pasta
2 tablespoons butter
2 tablespoons minced garlic
¾ cup Marsala wine
1 (8 ounce) container mascarpone cheese
2 tablespoons Dijon mustard
1 cup chicken broth
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Place the chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of about 1/4 inch. Whisk together the flour, paprika, cayenne pepper, salt, and black pepper in a shallow bowl. Press each chicken breast into the flour mixture on both sides. Tap off excess flour.
  • Heat olive oil and 1 tablespoon of butter in a skillet over medium heat until the butter gives off a slightly toasted fragrance, and pan-fry the chicken until browned on both sides, about 3 minutes per side. Set aside. Melt 1 more tablespoon of butter in the skillet, and cook and stir the onion until translucent, about 5 minutes; stir in the shiitake mushrooms, oyster mushrooms, cremini mushrooms, and garlic, and cook until the mushrooms have given off their juice and begun to brown, 10 to 12 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the fettuccini, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Place the pasta into a serving dish, and toss with 2 tablespoons of butter; season to taste with salt and black pepper, and keep warm.
  • After the mushroom juices have evaporated, pour Marsala wine into the sauce, and scrape up and dissolve any browned flavor bits in the bottom of the skillet. Turn heat to high, and stir until half the wine evaporates, about 3 minutes; stir in mascarpone, Dijon mustard, and chicken broth; cook, stirring constantly, until the sauce has thickened slightly, another 3 minutes. Reduce heat to medium-low; return cooked chicken breasts to the sauce. Cook until the chicken juices run clear and the sauce has thickened, about 5 minutes. Stir in parsley. Serve with buttered fettuccine.

4 Tbsp butter divided
1 medium onion chopped
6 clove garlic minced
8 oz cremini mushrooms sliced
1 c marsala wine
1 c mascarpone cheese room temp
1 Tbsp dijon mustard
fresh parsley chopped for garnish
buttered egg noodles for serving

Steps:

  • 1. Season the chicken with salt and pepper. Add two tbsp of the butter to a skillet and cook the chicken until browned on both sides. Remove to a plate and set aside.
  • 2. Add the remaining butter to the skillet. Add the onion and cook until translucent. Add the mushrooms and cook until they are tender and juices evaporate. Add the garlic and cook 30 seconds. 2 medium onions, halved and sliced lengthwise
4 garlic cloves, chopped
16 ounces white mushrooms, cleaned and sliced
3 tablespoons butter
1/2 tablespoon vegetable oil
4 chicken breasts, trimmed and filleted (makes 8 cutlets)
1 1/2 cups heavy cream or 1 1/2 cups whole milk
1 cup marsala wine
4 fresh basil leaves, chiffonaded
10 grape tomatoes, cut in half

Steps:

  • Melt 3 tbsp butter and 1 tsp sugar in a heavy bottomed skillet over medium high heat. Add onions and sauteed until golden colored, stirring every couple of minutes.
  • Move onions to the side of the pan, reduce heat to medium, and add mushrooms and garlic. Saute until mushrooms are beginning to brown. Remove onion, mushroom and garlic mixture from pan and set aside.
  • Meanwhile, fill stockpot with water and 2 tbsp salt and let it come to a boil.

4 shallots, minced
1/2 lb mushroom, sliced
1/4 cup dry marsala
1/2 cup heavy cream

Steps:

  • Pound breasts to 1/4 inch. In large frying pan, melt 2 Tbl butter over med heat.
  • Add chicken and saute until lightly browned (4 min). Remove and set aside.
  • Melt 2 more tablespoons of butter in pan. Add shallots and mushrooms (3-5 min).
  • Cook until lightly browned.
  • Add Marsala, bring to boil. Add cream and lemon juice and return to boil. Salt and pepper.

I got this recipe from my sister in law who learned it from her father. After trying Chicken Marsala recipe after recipe and finding something wrong with every one of them I was very pleased when I tried this.

4 boneless skinless chicken breasts; cooked
1 small can cream of mushroom soup
1/2 cup half and half
1 small jar of artichoke hearts
1/2 cup marsala wine
1 cup mushrooms; sliced
1-2 tbsp butter
parsley flakes

Steps:

  • 1. I can not stress how easy this recipe is! Simply cook your chicken breasts how ever you prefer them; grilled, fried, ect. Add the rest of the ingredients into a small saucepan, cook on medium heat for about 20 minutes to reduce wine and soften mushrooms, and serve on top of the chicken. Garnish with some fresh parsley and it looks and tastes like you slaved in the kitchen ;)

I am a a primarily chicken eater but you can use veal or boneless pork chops instead of chicken, you can also make double the sauce if you like a more saucy dish.

5 Tbsp butter
2 tsp olive oil, extra virgin
2 c fresh sliced portabello and white or cremini mushrooms
3 Tbsp finely chopped shallots
1 1/2 Tbsp minced fresh garlic cloves
4 (6-ounce) skinless, boneless chicken breast halves
1/4 tsp salt divided
1/4 tsp black pepper divided
1/2 c flour
1 can(s) chicken broth (small can)
3/4 c dry marsala wine
1/2 c frozen green peas (optional)
3 Tbsp heavy cream
1 pkg of your favorite pasta (i like thin spaghetti or angel hair)

Steps:

  • 1. Heat a large skillet over medium-high heat and add 2 teaspoons olive oil, shallots and garlic; cook until tender. Add mushrooms and cook 3 additional minutes; remove mushroom mixture from pan. Set aside.
  • 2. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to a 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle both sides of chicken with 1/8 teaspoon salt and 1/8 teaspoon pepper. Place flour in a shallow dish; dredge chicken breast halves in flour.
  • 3. Add butter to pan, and place over medium-high heat. Add chicken; cook until browned. Remove chicken from pan.
  • 4. Add broth and Marsala to pan and scrape pan to loosen browned bits. Bring mixture to a boil and thicken with a flour water mixture (1 teaspoon of flour to 2 tablespoons water). Return chicken to pan and simmer for 5 to 10 minutes; add cream, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Return mushroom mixture to pan and stir in peas. Cook until thoroughly heated.
  • 5. Serve chicken and sauce over pasta.

So I've incorporated changes suggested by reviewers that not only thickens the sauce but also boosts the flavor of the breading for the chicken...

CHEESE STUFFING
1/2 cup smoked provolone cheese, shredded (use smoked gouda if you can't find smoked provolone)
8-ounce pkg shredded mozzarella cheese
1/4 cup grated parmesan cheese
1/2 cup italian breadcrumbs
1 tsp fresh garlic, minced
1/2 tsp crushed red pepper flakes (optional)
2 Tbsp sun-dried tomatoes, drained well and chopped
1/2 cup green onions, thinly sliced
3/4 cup low-fat sour cream
salt and pepper, to taste
CHICKEN
4 thick skinless boneless chicken breasts
2 cups all-purpose flour
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
4 oz olive oil
CREAMY MUSHROOM SAUCE
1 Tbsp cornstarch
3 cups marsala wine
1 small white onion, halved and thinly cut lengthwise
4 cups button mushrooms, thinly sliced
8 oz heavy cream
GARNISH
1/4 cup fresh parsley, chopped

Steps:

  • 1. Preheat oven to 350°F. Lightly spray baking dish with nonstick spray; set aside.
  • 2. Combine all the Cheese Stuffing ingredients in a mixing bowl; set aside.
  • 3. Cut a wide slit in thickest part of each chicken breast to create a pocket, but don't cut all the way through. Pound each chicken breast with a mallet until about 1/2-inch thick. Stuff each pocket with Cheese Stuffing mixture. Gently press down on each to flatten chicken breasts, but not enough to cause stuffing to ooze out. (You don't need to seal the chicken breasts unless you prefer to do so.)
  • 4. Place flour, garlic powder, salt and pepper in a shallow dish. Dredge stuffed chicken breasts in the flour mixture, shaking off excess flour.
  • 5. Heat oil in a large skillet over medium heat. Sauté chicken breasts in hot oil on both sides until lightly browned. Transfer browned chicken to baking dish.
  • 6. Place baking dish in preheated oven and bake 20 to 30 minutes or until chicken is thoroughly cooked (internal temperature should be 165°F. )
  • 7. Pour 1/4 cup of Marsala wine into a measuring cup, and stir in cornstarch; set aside.
  • 8. While chicken is baking, add onion to the skillet and cook for 2 minutes, stirring constantly to deglaze pan. Add mushrooms and sauté another 2 to 3 minutes or until onions are soft. Add remaining 2 3/4 cups Marsala wine to skillet and heat to a simmer, stirring constantly to continue deglazing bottom of skillet. Add cream to skillet, and heat until reduced by half, stirring frequently. Remove skillet from heat and let cool just a bit. Add cornstarch mixture to slightly cooled sauce, and stir until thickened.
  • 9. To serve, place baked chicken breasts on individual serving plates, then spoon some of the creamy mushroom sauce over each serving. Garnish with chopped fresh parsley, and serve immediately.

2 large chicken breasts, boneless, skinless; cut into bite sized pieces
11 ounces mushrooms, sliced
1 small onion, diced
3 cloves garlic, minced
3/4 cup Marsala cooking wine
1/2 cup chicken broth
1/2 cup heavy cream
1 pound dry pasta + water for cooking
1 cup Parmesan cheese + more for serving
5 tablespoons unsalted butter
Salt and pepper to taste
Fresh parsley, chopped for garnish

Steps:

  • Season chicken with salt and pepper. Melt 1 tablespoon butter in a large skillet until foaming. Cook chicken until lightly browned. Transfer to plate when done. Boil water and cook pasta according to the directions. Melt additional 1 tablespoon of butter in skillet, add garlic, mushrooms and onion and cook for about 6 minutes. Add cooked chicken back into the skillet. Add the Marsala, chicken broth and cream and bring to a boil. Simmer until sauce is is slightly thickened. Drain pasta and reserve 1/2 cup cooking water. Return the pasta to the pot with the remaining 3 tablespoons of butter. Add the mushrooms and chicken mixture and 1/2 cup of Parmesan cheese and cook until the pasta has absorbed some of the sauce, about 1 minute, adding the reserved cooking water as needed if sauce needs more liquid. Season with salt and pepper and serve with additional Parmesan cheese and a garnish of chopped parsley.

1 can (13.8 oz) Pillsbury® refrigerated classic pizza crust
2 tablespoons CRISCO® Light or Pure Olive Oil
1/2 lb uncooked chicken breast tenders (not breaded)
2 tablespoons LAND O LAKES® Butter
1 1/2 cups thinly sliced onions
1 package (8 oz) sliced fresh portabella mushrooms
3 cloves garlic, finely chopped
3/4 cup sweet Marsala wine or chicken broth
1/2 cup whipping (heavy) cream
2 tablespoons chopped fresh Italian (flat-leaf) parsley
1/4 teaspoon salt, if desired
1/4 teaspoon pepper
1 1/2 cups shredded mozzarella cheese (6 oz)
1/2 cup shredded Parmesan cheese

Steps:

  • Heat oven to 400°F. Spray 13x9-inch pan with CRISCO® Original No-Stick Cooking Spray. Unroll pizza crust dough in pan; press dough to edges of pan. Bake 11 to 14 minutes or until golden brown.
  • Meanwhile, heat 1 tablespoon of the oil in 10-inch skillet over medium-high heat. Add chicken; cook about 7 minutes, turning frequently, until lightly browned. Remove chicken from skillet; cut into 1/4-inch pieces. Set aside.

  • NOTE: There are alternate suggestions in the description, and below, you might want to consider. In a large skillet over medium heat add 1 tablespoon olive oil to the pan. Add the chicken and lightly salt and pepper. Cook until lightly brown and cooked throughout. Remove chicken and set aside on plate. Add 1 Tablespoon olive oil and sauté the mushrooms for 1-2 minutes. I have a recipe for a more traditional chicken marsala, that we enjoy but thought I would play around a bit the other night and came up with this one. It turned out really well and whilst I probably still prefer the more traditional recipe this make a nice change. I made this for just 2 of us but the sauce ingredients would make enough for 3 people and would probably stretch to 4 servings if you do not like things very sauce as we do. I served ours over wild rice and asparagus so we enjoyed the extra sauce over the rice.

olive oil
2 -4 chicken breasts (see note above on servings)
2 -3 tablespoons butter
300 g mushrooms, sliced
3 green onions, sliced thinly
1/2 cup marsala wine
1 1/2 teaspoons instant chicken bouillon granules
1 cup water
1/2 lemon, juice of
1/2 cup cream
1 tablespoon basil, chopped finely
1 tablespoon cornflour
pepper
parsley, to sprinkle over (optional)

Steps:

  • Heat a little olive oil in a fry pan add chicken breasts, cook until browned on both sides about 6-8 Min's a side, remove and set to one side. (It is not to important to cook chicken all the way through as it is added back to the pan at the end, so it will finish cooking then.).
  • Wipe pan clean, melt butter in same pan, add mushrooms, cook stirring a couple of times for 5 Min's, add green onions, cook a further 2 Min's.
  • Add marsala, stock, water and lemon juice, stir to combine, add cream and basil, stir again until combined.
  • Mix a little water with the cornflour, add to sauce stir until mixture thickens, season with pepper.
  • Return chicken to pan, simmer gently until chicken is heated through.
  • To Serve: Slice chicken breasts thickly, arrange on plate and spoon sauce over, sprinkle with parsley if desired.

3 tablespoons all-purpose flour
2 tablespoons olive oil
3 tablespoons butter, divided
8 ounces sliced mushrooms
1/2 cup dry Marsala wine
1/2 cup chicken broth
1 tablespoon lemon juice
1/2 teaspoon dried leaf basil
1/2 cup heavy whipping cream
3 green onions, thinly sliced

Steps:

  • Wash chicken and pat dry; sprinkle lightly with salt and pepper. Dip chicken in the flour to lightly coat both sides. In a large skillet over medium-high heat, melt butter with oil. Add the chicken and saute for about 2 minutes. Turn and add the sliced mushrooms to the skillet. Continue cooking for about 2 minutes longer, stirring mushrooms occasionally. Add the Marsala wine, chicken broth, and lemon and bring to a simmer. Simmer, uncovered, for 5 minutes to reduce slightly. Cover and continue cooking for 5 minutes longer. Add the basil, cream, and green onions and cook for 2 minutes longer. Serve with greens and rice or potatoes.
