Even my little identical twin grandbabies love this meal served with Potsie's Recipe #117892. Easy to make and delicious I usual serve it with extra green chile salsa and sliced jalapenos for those who like the extra "zing". Really one burrito makes a nice portion size for everyone in my family, but those with a bigger appetite may need more.

1 (10 1/2 ounce) can cream cheddar cheese soup
1 cup sour cream
3 cups diced cooked chicken
1/2 cup green chili salsa
salt and pepper
8 (10 -12 inch) flour tortillas (large)
1 (10 1/2 ounce) can cream of chicken soup
1 cup sour cream
1/2 cup milk
1 (4 ounce) can chopped green chilies
1 lb shredded monterey jack cheese

Steps:

  • Preheat oven 350°(fahrenheit).
  • Coat a 9 X 13 pan with non stick cooking spray.
  • Whisk cheddar cheese soup and sour cream together in a large bowl until smooth.
  • Stir in chicken and green chile salsa until blended.
  • Add salt and pepper to taste.
  • Place 1/4 cup chicken filling in center of each tortilla and roll up, folding in the ends when you get to the halfway point.
  • Place burritos seam side down in pan.
  • In a separate bowl mix together the cream of chicken, sour cream, soup, milk and green chilies until blended.
  • Pour over burritos in the pan.
  • Top with shredded cheese.
  • Bake at 350° for 35-40 minutes until hot and bubbly.

These panini-press-grilled burritos boast a slightly crispy exterior with a melty-hot inside featuring black beans, corn, rice, optional chicken, and Creamy Cilantro-Jalapeno sauce.

Creamy Cilantro-Jalapeno Sauce
1 cup light sour cream
1 cup loosely-packed fresh cilantro leaves
2 tablespoons diced pickled jalapeno peppers
2 teaspoons chopped yellow onion
2 teaspoons Dijon mustard
2 teaspoons lime zest

1/2 cup can black beans (drained and rinsed)
1/2 cup whole-kernel corn
1/2 cup cooked white rice
1/2 cup shredded cheddar or Monterey Jack cheese (or a combo of both)
1/4 cup Creamy Cilantro-Jalapeno Sauce
Salt and pepper to taste
Four 8-inch flour tortillas

Steps:

  • Make the Creamy Cilantro-Jalapeno Sauce. Place all ingredients in a blender or food processor and blend until pureed. Cover and chill for at least 30 minutes, or up to two days.
  • In a medium bowl, add the chicken (if using), beans, corn, rice, cheese, and cilantro-jalapeno sauce. Gently stir with a fork. Season to taste with salt and pepper.
  • Lay out flour tortillas and divide mixture between them. Place the mixture on on the bottom half of the tortilla, fold the sides in, then roll up the tortilla.
  • Grill on the panini press per your press's instructions (I cook two at a time and it takes about four minutes per batch).
  • Serve drizzled with additional Creamy Cilantro-Jalapeno sauce, salsa, avocado, and any other condiments you desire.

CREAMY GREEN CHILE CHICKEN BURRITOS OR CHIMICHANGAS



Creamy Green Chile Chicken Burritos or Chimichangas image

34 units chicken breasts
10 ounces green enchilada sauce
8 ounces cream cheese
6 units flour tortillas
8 ounces monterey jack
16 ounces sour cream

Steps:

  • Cook chicken any method you prefer and chop into small pieces or shred. This may be done in advance and then heated in the sauce. Heat green enchilada sauce, 1/4 cup water and cream cheese until blended and hot.
  • Place chicken pieces on tortillas and spoon sauce over the meat or add chicken to sauce and bring mixture to a boil. Spoon chicken sauce mixture onto tortillas.
  • Roll tortillas with chicken sauce mixture. Put cheese on top and heat in microwave for about 30 seconds to melt cheese. Put sour cream on top and serve.
  • For Chimichangas: fry rolled (ends folded in) in pan with hot oil. Top with a little extra sauce and cheese.
  • For Enchiladas: place rolled up tortillas with chicken mixture in a baking pan with some sauce in bottom, and extra sauce and cheese on top. Heat until cheese melts. I usually serve this meal with shredded lettuce on the side and refried beans or rice.

1 Tbsp oil
3 green onions, sliced on the bias (separate 1 out)
1 small poblano chile, finely diced
3 clove garlic, grated
1 c corn
1/2 tsp penzy's adobo seasoning
1/2 tsp ancho chile powder
1/2 tsp smoked paprika
1/2 tsp kosher salt
1 tsp mexican oregano
1 c sour cream
2 c cheese, grated (separate 1/2 cup)
1 1/2 c rotisserie chicken, chopped
4 flour tortillas
avocado, tomato, additional sour cream for serving

Steps:

  • 1. In a small skillet, swirl 1 T oil over medium heat. Add green onions, poblano, garlic, corn, chile powders, salt, smoked paprika and oregano. Saute until vegetables are soft.
  • 2. Remove from heat. Add sour cream, 1 1/2 cups cheese and chicken. Stir to incorporate.
  • 3. Divide chicken filling between the tortillas, scooping it toward the bottom edge. Fold in the sides of the tortilla and then roll up, away from you.
  • 4. Spray a baking dish with non-stick spray oil. Roll each tortilla in the oil and end with the seam side down.
  • 5. Bake at 350 degrees for 30-35 minutes. Alternately, convect bake at 325 for 25-30 minutes. Sprinkle remaining cheese across the burritos and return to oven until cheese is just melted.
  • 6. Remove from oven and let set 5 minutes. Sprinkle remaining green onion on top of burritos. Plate burritos, adding sour cream, diced avocado, diced tomatoes if desired.
  • 7. Devour. Pat yourself on the back for another delicious dinner!!

10 burritos size flour tortillas
2 large chicken breasts
salt and pepper
2 c salsa
1 can(s) each black beans and corn drained
4 clove garlic minced
2 large jalapenos seeded and chopped
1 medium red onion chopped
8 oz cream cheese
2 c shredded cheddar cheese divided
2 c cooked rice
1/2 c fresh cilantro chopped

Steps:

  • 1. Season the chicken breast with salt and pepper. Add the chicken to a slow cooker. Add the salsa, garlic, red onion, and jalapeno. Cook on high for 4 hours. Shred the chicken and add the cream cheese, black beans, corn and 1 cup shredded cheddar to the slow cooker. Cook 15 more minutes until cheese is melted.
  • 2. Stir in the cooked rice and the cilantro. Mix well and then roll into 10 burritos. Add some oil to a large skillet. Working in batches brown the burritos on both sides.
  • 3. Transfer the burritos to a baking sheet and top with the remaining cheese. Place under a broiler until cheese has melted.
