1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
salt and pepper to taste
⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced
1 pound ground chicken
1 cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.
  • Melt butter in a saucepan over medium-high heat, and stir in 1 tablespoon olive oil. Add 1 cup broccoli; toss and cook just until tender, about 5 minutes. Sprinkle broccoli with flour, and cook 1 minute. Stir in the chicken broth, and bring to a boil. Pour in the milk, and stir to blend. Season with salt, pepper, and chipotle pepper powder, if desired. Reduce heat to medium, and simmer mixture until sauce thickens, 8 to 10 minutes. Mix in 1 cup Cheddar cheese and stir until melted. Remove from heat.
  • Heat the remaining 2 tablespoons olive oil in another large skillet over medium-high heat. Stir in the onion, ground chicken, and remaining 1 cup of broccoli. Cook and stir until chicken is evenly browned and no longer pink, about 10 minutes. Season to taste with salt and pepper. Reduce heat, and cook until liquid is reduced, about 5 minutes.
  • Preheat oven broiler to High. Lightly grease 9x13 inch baking dish.
  • Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
  • Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.

extra virgin olive oil flavored cooking spray
2 cups long grain brown rice
4 cups chicken broth
2 (12 ounce) packages frozen broccoli
2 teaspoons extra virgin olive oil
1/2 medium onion, diced
2 garlic cloves, minced
1 lb boneless chicken breast, diced
1 teaspoon salt
2 cups 1% low-fat milk or 2 cups almond milk
3 tablespoons unbleached white flour
1/3 cup organic plain Greek yogurt
1 1/2 cups shredded cheddar cheese

Steps:

  • Spray a 9x13" baking dish with cooking spray and set aside.
  • Bring broth to a boil in a medium pot. Once boiling, add rice. Reduce heat to medium-low and simmer, covered, for 45 minutes. Meanwhile, cook broccoli according to package directions and set aside.
  • In a medium pan, heat one teaspoons olive oil over medium heat. Add onion and garlic and sauté under tender, about 5-6 minutes. Remove from pan and set aside.
  • In the same pan, add remaining teaspoons of olive oil and cook diced chicken breast over medium-high heat until cooked through. Season with ½ teaspoons of salt. Remove from pan and set aside with onion mixture.
  • To make the cheese sauce, whisk together ½ cup of milk and flour. Add to pan along with the other 1½ cups of milk. Whisk for about 5 minutes over medium heat, or until sauce has thickened. Remove from hear and add yogurt, 1 cup of cheese, remaining 1/2 teaspoons of salt and pepper to taste.
  • Pre-heat broiler. In a large bowl, stir together rice, broccoli, onion mixture, chicken and cheese sauce. Pour mixture in the greased baking dish. Top with remaining ½ cup of cheese and broil casserole until cheese is melted.

Here is the resulting recipe...Serve with hot rice or pasta if you want starch with your meal...Enjoy!

1 1/2 lbs boneless skinless chicken breasts, about 3 cups (steamed and cubed)
1 lb broccoli, steamed and chopped (frozen may be substituted, but steam it too)
1 cup light sour cream (Cabot preferred)
1 cup reduced-fat mayonnaise (Kraft preferred)
10 ounces cream of chicken soup, undiluted (98% fat free works, too)
1 tablespoon lime juice
1 tablespoon garlic, minced
2 cups low-fat cheddar cheese, shredded
salt, to taste (optional)
1/2 teaspoon white pepper

Steps:

  • Preheat oven to 350°; you'll need a 13 x 9 pan for this recipe.
  • In the 13 x 9 pan, spread out the broccoli; then layer the chicken atop the broccoli.
  • Combine the sour cream, mayonnaise, soup, lime juice, garlic and salt & pepper.
  • Spread this mixture over the broccoli/chicken; top with the cheddar cheese.

2 cups reduced sodium chicken broth
1 cup milk (I used 2%)
1 teaspoon poultry seasoning
1/2 cup flour
2 cups water, divided
1 cup uncooked quinoa, rinsed
1/4 cup cooked, crumbled bacon (optional... sort of)
1 pound boneless skinless chicken breasts
2 teaspoons seasoning (like Emeril's Essence or any basic blend you like)
1/4 cup shredded Gruyere cheese (any kind will work)
3 cups fresh broccoli florets

Steps:

  • Sauce: Preheat the oven to 400 degrees and generously grease a 9×13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms. Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Cover with foil and bake for 30 minutes. Broccoli: While the casserole is in the oven, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside. chicken breast - 1 pound (500 g), sliced and cubed
salt and pepper - generous amount
garlic powder - generous amount
onion - 1 medium white or red, diced
garlic - 3 cloves, minced
crimini mushrooms - about 2 cups, quartered
dry white wine - 1/2 cup
chicken stock - 1 cup
sour cream - 1 cup
flour - 1 tbsp
cream cheese - 1 8 oz (200 g) package

Pre heat oven to 375 F (190 C).

Steps:

  • Steam the broccoli florets until just under tender and place them in the bottom of a greased casserole dish. Heat the olive oil and butter in a heavy bottomed skillet over medium high heat, then add the chicken, sprinkle generously with salt, pepper and garlic powder, then cook until done - stir frequently and scrape up any brown bits from the bottom of the skillet. Using a strainer, remove the cooked chicken from the pan and arrange it in the dish with the broccoli. Leave the liquid in the pan and lower the heat a little, add the diced onion, sprinkle it with salt and pepper, and cook for about 3 minutes, or until beginning to brown. Add the garlic and continue cooking for about 2 more minutes. Increase the heat to medium high, add the mushrooms and cook until they have released most of their liquid, about 5 - 6 minutes. Increase heat to high, then pour in the wine, and boil until the liquid reduces by about half, about 3 minutes. Using a fork, whisk the flour, cream cheese, sour cream and stock together until blended, then stir into the sauce and simmer until it begins to thicken, about 3 - 5 minutes. This is a rich, creamy casserole I came up with by combining a couple of different recipes and adding my own twist. The family labeled this one "a keeper".

1 lb chicken tenders
1 pkg frozen broccoli cuts
8 oz cream cheese
2 can(s) cream of chicken soup
1 c grated cheddar cheese
1 Tbsp garlic powder
1 Tbsp onion powder

Steps:

  • 1. Combine softened cream cheese and cream of chicken soup (I microwaved it for about 45 seconds to make it easier), garlic powder and onion powder. Set aside.
  • 2. Cut chicken tenders into bite size pieces and combine with frozen broccoli in 13 x 9 baking pan.
  • 3. Pour soup mixture over chicken/broccoli mixture, spreading to cover completely.
  • 4. Sprinkle shredded cheddar cheese over the top.
  • 5. Bake in preheated 350 degree oven for 1 hour.

1/2 stick butter
1/2 c diced onion
2 c chicken stock
3/4 c sour cream
2 Tbsp mayonnaise
1/2 tsp poultry seasoning
1/2 tsp salt

4 c steamed broccoli (i buy the broccoli in the bag for steaming)
4 c diced roasted chicken (bought works great)
2-3 c cheese of choice (grated)
1 can(s) french fried onions
2 pkg uncle ben's basmati rice,(do in microwave)

Steps:

  • 1. In a medium size pan saute onion in butter.
  • 2. Add chicken stock, sour cream, mayo, poultry seasoning, salt, and pepper
  • 3. Cook rice according to directions on package and fold in.
  • 4. Pour cream and rice sauce over chicken
  • 5. Place diced chicken in 9x13 baking dish. Add broccoli on top Cover and bake 20 minutes
  • 6. Uncover : add cheese and french fried onions. Bake 10 minutes longer or until onions are lightly browned.
