Creamy Cajun Shrimp and Sausage Pasta, is a celebration of flavors in one outstanding dish. I totally thought it tasted like I had ordered from a restaurant. This sauce is absolute Cajun heaven!

12 ounces uncooked pasta (I used fettuccine)
2 tablespoons olive oil
1 lb Andouille Sausage
1 pound large shrimp (For this I used frozen deveined. If using fresh clean and devein)
1 bell peppers, thinly sliced (I used a red bell pepper)
1 small onion, peeled and diced
2 tablespoons olive oil or butter
4 large cloves garlic, minced or pressed
1 tablespoon sugar
1 cup chicken broth
1 15 oz can crushed tomatoes
1 1 1/2 cup heavy cream
1/4 cup Parmesan cheese
2 tablespoons Cajun seasoning, homemade or store-bought (divided using a pinch to season the shrimp)
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
salt and fresh cracked black pepper, to taste
1 tablespoon chopped fresh parsley for garnish (optional)

Steps:

  • Cook the fettuccine according to the package instructions, and keep warm.
  • Cut the sausage into 1/4" -1/2" chunk size slightly diagonal. Season shrimp with salt and pepper and a pinch of Cajun seasoning.
  • In a large skillet over medium heat, heat olive oil, add onion and bell pepper. When the onion is almost translucent, about 3 minutes then add garlic. Remove and set aside.
  • Add sausage to brown and set aside. Pour out any excess grease leaving about 1 tablespoon, add the shrimp and cook until pink, curled and cooked through, about 2 minutes per side, then transfer to a plate.
  • Add chicken broth, stirring and scraping up any brown bits from bottom of pan. Add crushed tomatoes, sugar, remaining Cajun seasoning, thyme and heavy cream then turn down to a simmer.
  • Once simmering, add Parmesan and stir into sauce, simmer a few more minutes and taste if sauce needs any extra salt or pepper.
  • If serving directly from the skillet, mix in pasta and top with shrimp, sausage and the parsley. Depending on the size of your skillet I poured the pasta into a serving dish, and topped with the sauce, shrimp, sausage and sprinkled the chopped parsley.

1 lb Shrimp (peeled and deveined)
2 tbsp Cajun or Creole Seasoning
1/2 tsp Salt (more or less to taste)
1/4 tsp Freshly Ground Black Pepper
1-2 tbsp Olive Oil
1 lb Smoked Sausage (Andouille or Schneiders Spicy Sicilian Smoked Sausage, sliced)
454 g Fettuccine Pasta
1 Onion (large, julienned)
6 Cloves Garlic (minced)
1 cup Chicken Broth
3/4 cup Heavy (Whipping) or Half & Half Cream
2 cups Crushed Tomatoes
1 tsp Worcestershire Sauce
3 Sprigs Fresh Thyme
2 tbsp Cajun or Creole Seasoning
2 tbsp Granulated White Sugar
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Dried Oregano
1 tsp Dried Parsley Flakes
1 tsp Cayenne Pepper (optional, more or less to taste)
1/4 tsp Smoked Paprika
1/4 tsp Freshly Ground Black Pepper
1/2 tsp Salt (more or less to taste)
1/4 cup Freshly Grated Parmesan (plus more for garnish)
2 tbsp Fresh Chopped Parsley (for garnish)

Steps:

  • Season shrimp with cajun seasoning, salt and freshly ground black pepper until well coated. Then, slice sausage, cut onions, mince garlic and set aside. Then heat a large pot of water, add pasta to boiling water and cook pasta according to package instructions or until al dente.
  • Heat a large skillet or sauté pan over medium high heat and drizzle with 1 tbsp of olive oil. Add shrimp and cook for 2-4 minutes, flipping at the halfway point. Transfer to a plate and set aside. Add sausage (add a little more olive oil if needed) and brown sausage until caramelized on both sides, around 4 to 5 minutes. Transfer to a plate and set aside.
  • If needed add another drizzle of olive oil to the pan, and sauté onions, garlic, and thyme until fragrant and softened. Add chicken broth, cream, crushed tomatoes, worcestershire sauce. Stir until combined and bring to a simmer scraping up any brown bits from the bottom of the pan.
  • Continue to allow sauce to simmer, and season with cajun seasoning, granulated white sugar, garlic powder, onion powder, dried oregano, dried parsley flakes, cayenne pepper (optional), smoked paprika, salt, and freshly ground black pepper. Stir until well combined and allow to simmer on medium heat for 5 minutes.
  • Add in parmesan cheese, and continue to stir occasionally for another 5 minutes. Then add in cooked pasta and sausage stirring to combine and heated through around 2 - 3 minutes. Then add shrimp, stir and remove from heat. Garnish with fresh parsley, fresh cracked black pepper and more parmesan cheese if desired.
