- Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the oil, flour, garlic and seasonings until blended. Gradually add the milk, broth and water. - Cook pasta as directed on package, adding broccoli to the cooking water for the last 3 min. of the pasta cooking time. Meanwhile, heat dressing in large nonstick skillet on medium heat. Add chicken and garlic; cook 5 min. Turn chicken over; continue cooking 4 to 5 min. or until chicken is cooked through (170 degrees F).
- Drain pasta mixture in colander; return to pan and set aside. Add pasta sauce and cream cheese to chicken in skillet; cook on medium-low heat 2 to 3 min. or until cream cheese is completely melted, mixture is well blended and chicken is coated with sauce, stirring occasionally. Whenever I serve this, I am hounded for the recipe. It's a great summer dish because of the tartness and fruit. It is substantial enough to be served as an entree pasta salad, but great with your favorite picnic dishes.

- Fill a large pot with lightly-salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has nearly cooked through, but is still firm to the bite, about 10 minutes. Drain well, and rinse with cold water in a colander set in the sink. While the pasta is boiling, cook the prosciutto in a small skillet over medium heat until crisp. Drain on a paper towel-lined plate, and set aside.
- Make the dressing by whisking together the mayonnaise, sour cream, milk, garlic, lemon zest and juice, lemon pepper, paprika, and red pepper flakes; season to taste with salt and pepper. Place the drained pasta into a large mixing bowl and pour 3/4 of the dressing overtop; reserve the remaining dressing. Add the peas, cranberries, grapes, green onion, water chestnuts, and Parmesan cheese; stir until the salad is evenly coated with the dressing. Cover and refrigerate at least an hour, or until ready to serve.
- Toss the salad with the remaining dressing, oregano, and thyme to serve.

- Cook bacon in frying pan until crisp. Drain on paper towels. (If using ham, skip this step.).
- Heat 3 tbsp of butter in a large frying pan and add the leeks & garlic. Add ham after a few minutes and cook until brown and the leeks are soft.
- Add in cream, wine, sour cream, and cheese. Stir until the mixture is hot and slightly thickened. Stir in the bacon/ham & pepper to taste.
- Meanwhile cook farfalle (bow-tie) pasta in boiling, salted water. Cook until al dentè.

- 1. Cut up asparagus, zucchini, salami, and garlic. Bring water up to a boil for the pasta.
- 2. Add olive oil to skillet, heat to medium high. Add garlic and red pepper flakes if using. Cook for 1 minute. Add asparagus,zucchini, carrots, and capers. Cook five minutes. Add salami and turn down to medium and cook for 10 minutes Stirring often.
- 3. Divide the cream. Mix 1/4 cup of cream with 1 T of corn starch. Set aside. Add the remaining 3/4 cups of cream to the salami mixture. Stir well. At this time add black pepper to taste. I like a lot of it.
- 4. Cook pasta until al dente. Drain and cover to keep warm.
- 5. Turn skillet up to high and the cream, cornstarch mixture and bring to a boil to thicken. add the pasta to the skillet. Toss to coat the pasta. Check the seasoning. If needed add salt.
- 6. Just before serving fold in the cheese. Garnish with chopped chives, parsley or extra capers. Enjoy!

- 1. In a large skillet at med heat cook bacon pieces until slightly brown, add the smashed garlic. Cook until bacon is crisp. Drain on paper towel and reserve 2 tablespoons of drippings.
- 2. Heat the reserved drippings and add kale. Cook until wilted. Add 1/2 cup water and cook until tender. Prepare bow tie pasta according to package. Drain and reserve 1 cup pasta water.
- 3. In a large bowl whisk eggs and cheeses until combine. Stir in a little of the hot pasta water and then the pasta and kale. Add the bacon pieces and mix until everything is combine.
