BACON WRAPPED BBQ CHICKEN THIGHS
Juicy, delicious chicken thighs, wrapped up in crispy, salty bacon with a smoky sticky bbq sauce. PERFECTION!

- Preheat the oven to 375 1. Pat dry and season the chicken thighs with garlic & onion powder, salt, and pepper. 2. Take one strip of bacon and starting from below the thigh, begin to wrap the bacon around the thigh as many times so the end of the bacon ends underneath the thigh. Place the thigh with the ends of the bacon facing down in a shallow roasting tray 3. After repeating this on all 8 thighs, place in the oven and roast the thighs for 40 - 45 minutes or until the internal temp of the chicken comes to 165F 4. About 10 minutes before cooking time ends, baste the chicken with the bbq sauce. Flip the thighs over first and baste, then flip them back, right side up, and baste again. 5. Two minutes before cooking time ends, baste any remaining sauce over the thighs. 6. Remove the chicken thighs from the oven and let rest for 5 minutes. 7. Plate and enjoy!

- Preheat oven to 400 degrees F (200 degrees C).
- Mix cream cheese and green onions in a bowl; season with salt and black pepper. Spread about 1/4 cup of cream cheese mixture over each chicken breast. Starting at the narrow end, roll chicken breasts over filling. Wrap each chicken breast in 4 slices of bacon. Set wrapped chicken on a rack set in a baking dish.
- Bake in the preheated oven until bacon is browned and an instant-read meat thermometer inserted into the thickest part of a breast reads 160 degrees F (70 degrees C), about 1 hour.

- Preheat the oven to 400 degrees F.
- Trim any excess fat from the thighs and cut them in half if they are larger than five ounces. Set aside.
- Combine the seasonings for the chicken rub in a small bowl.
- Sprinkle the seasonings evenly over all sides of the thighs and pat it in.
- Roll the chicken thighs up jelly-roll style as tightly as you can. Then, wrap the bacon around each thigh and place seam side down in a well-seasoned cast-iron skillet. Sprinkle any remaining rub over each piece.
- Bake uncovered for 25 minutes or until the thighs register 165 degrees as measured by an instant-read digital thermometer. Remove the skillet from the oven and spoon any pan juices over the chicken. Serve immediately.

- Preheat oven to 400°. Flatten chicken to 1/2-in. thickness. Spread 3 tablespoons cream cheese over each. Dot with butter and sprinkle with salt; roll up.
