2 Ripe Avocados
1/2 c. Low-fat Mayonnaise
1/2 c. Chopped Scallions, Green And White Parts
1/4 c. Chopped Fresh Dill
1/4 c. Chopped Fresh Parsley
1 tbsp. Fresh Lemon Juice
1 clove Garlic
Salt And Pepper, to taste
1 tsp. Salt (or More To Taste)
1/4 tsp. Ground Black Pepper, Or More To Taste

Steps:

  • Scoop the avocado flesh out of the peel and place it in the bowl of a food processor. Add all remaining ingredients. Puree until very smooth. Taste, then season with additional salt and pepper as needed.Cover and chill until ready to serve. Serve with cut veggies, or baked vegetable chips.

1 tablespoon neutral vegetable oil
3 large scallions, white and pale-green parts thinly sliced, dark-green parts trimmed, finely chopped
3/4 teaspoon kosher salt, plus more
1 avocado, coarsely chopped
3/4 cup plain Greek yogurt
Tortilla chips or pita chips (for serving; optional)

Steps:

  • Heat oil in a small saucepan over medium. Add sliced scallions and a pinch of salt; cook, stirring frequently, until scallions just start to brown around the edges, about 3 minutes.
  • Transfer scallions and oil to a medium bowl. Add avocado, yogurt, and remaining 3/4 tsp. salt; stir to combine, lightly mashing avocado so mixture is slightly chunky. Taste and adjust seasonings. Top with finely chopped scallions. Serve with tortilla chips or pita chips alongside, if using.
