2 pounds potato gnocchi
3 tablespoons butter, divided
1 tablespoon plus 1-1/2 teaspoons all-purpose flour
1-1/2 cups whole milk
1/2 cup grated Parmesan cheese
Dash ground nutmeg
1/2 pound sliced baby portobello mushrooms
Minced fresh parsley, optional

Steps:

  • Cook gnocchi according to package directions; drain. Meanwhile, in a small saucepan, melt 1 tablespoon butter. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Remove from heat; stir in cheese and nutmeg until blended. Keep warm., In a large heavy skillet, melt remaining butter over medium heat. Heat 5-7 minutes or until golden brown, stirring constantly. Immediately add mushrooms and gnocchi; cook and stir 4-5 minutes or until mushrooms are tender and gnocchi are lightly browned. Serve with sauce. If desired, sprinkle with parsley.

This dish is the perfect comfort food for a weeknight family dinner. It stores great for leftovers too!

Number Of Ingredients 15

1 (16 ounce) package store-bought gnocchi
1 (8 ounce) ham steaks
4 tablespoons butter
2 garlic cloves, minced
1 medium shallot, finely diced
3 tablespoons flour
3 cups milk
1 teaspoon Dijon mustard
1 teaspoon dried thyme
1 cup peas, divided
3/4 cup shredded cheese (mozzarella, swiss, gruyere, or pepperjack all work well)
1/4 cup grated parmesan cheese
salt and pepper, to taste
1/3 cup breadcrumbs (optional)
fresh parsley, to garnish

Steps:

  • Preheat oven to 375F.
  • Bring a pot of water to a boil and add a small handful of salt. Add gnocchi to boiling water and cook until they float to the surface. Remove and set aside.
  • Meanwhile, heat a deep skillet to medium heat. Lightly oil pan and cook ham steak (4-5 minutes per side). Remove from pan and dice.
  • In the same pan, melt butter and saute garlic and shallot until fragrant (about 1 minute). Whisk in flour until incorporated to form a paste. Slowly add the milk to mixture, stirring constantly until thickened. Stir in dijon mustard and thyme. Bring the mixture to a gentle simmer. Season with salt and pepper. Add the cheeses and stir until melted. Stir in ham, gnocchi, and 3/4 cup of peas.
  • Transfer mixture to a shallow baking dish. Top with remaining 1/4 cup of peas and breadcrumbs if desired. Bake 18-20 minutes or until bubbling.
  • Remove dish from oven and sprinkle with chopped fresh parsley.
  • Serve and enjoy!

1 (16-oz.) pkg. potato gnocchi
1/4 cup butter
1 garlic clove, minced
1 cup whipping cream
6 oz. (1 1/2 cups) shredded fresh Romano cheese
1/4 lb. Cooked ham, coarsely chopped (3/4 cup)
1 (10 oz.) pkg. Green Giant Frozen Broccoli in Cheese Flavored Sauce, thawed
2 (4.5-oz.) jars Green Giant Sliced Mushrooms, drained
1/2 cup Progresso Parmesan Bread Crumbs

Steps:

  • Heat oven to 400 degrees F. Cook gnocchi as directed on package, omitting salt. Meanwhile, melt butter in large nonstick skillet over medium heat. Add garlic; cook and stir 3 minutes. Add cream; mix well. Gradually add 1 cup of the cheese, stirring after each addition until melted. Add ham, broccoli in sauce, mushrooms and cooked gnocchi; mix well. Spoon into ungreased 9-inch square (1 1/2-quart) glass baking dish. In small bowl, combine bread crumbs and remaining 1/2 cup cheese; mix well. Sprinkle over casserole. Bake at 400 for 30 minutes or until golden brown. Cool 5 minutes before serving.;

Cheesy Gnocchi Casserole with Ham and Peas image

1 tablespoon unsalted butter
1 onion, chopped
One 8-ounce piece deli ham, diced
1/2 teaspoon chopped fresh thyme
1/2 cup low-sodium chicken broth
One 17.5-ounce package potato gnocchi
1 cup frozen peas, thawed
1/4 cup heavy cream
Kosher salt and freshly ground black pepper

1 cup shredded Swiss or Gruyere cheese

Steps:

  • Preheat the broiler to high heat.
  • Melt the butter in a large ovenproof skillet over medium heat. Add the onions and cook until softened, about 3 minutes. Add the ham and thyme and continue to cook until the ham is lightly browned.
  • Add the chicken broth and 3/4 cup water and bring to a simmer. Add the gnocchi, stir well, cover and cook until the gnocchi is slightly tender, about 5 minutes. Remove from the heat. Uncover and stir in the peas, cream, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle the cheese over the top and broil until golden and bubbly, about 3 minutes. Serve.
