This was my Grandmothers' recipe. We always had it on Sunday with her famous stuffed meatloaf ;) It is especially wonderful as a side dish on a hot summer afternoon. I think this and her butterscotch pie bring back a smile or dozen for me. I hope you enjoy it!!

4 c broken lettuce
1/2 c mayonnaise
1/4 c canned milk/ or cream
3 Tbsp apple cider vinegar
1/8 to 1/4 c granulated sugar
1/8 tsp fresh ground black pepper
dash(es) sea salt
1 hard boiled egg-shelled and sliced small pieces
1/2 small onion-slivered

Steps:

  • 1. Whisk together mayonnaise,canned milk(or cream-it's up to you),apple cider vinegar,granulated sugar(use the lesser amount and add from their to suit your personal taste).
  • 2. Then add the pepper and salt(you can use regular salt).Put your lettuce in a bowl and add the slivered onion..pour the mayo mixture over the lettuce and then fold in the egg. Make sure you mix it so all is blended.
  • 3. Cover and refrigerate until ready to use. Enjoy!!

3 hard-boiled large eggs
1 package (16 ounces) ready-to-serve salad greens
1 medium tomato, seeded and chopped
1/4 cup chopped onion
DRESSING:
3/4 cup mayonnaise
3 to 4 tablespoons milk
2 tablespoons sugar
2 tablespoons cider vinegar

Steps:

  • Cut one egg into wedges for garnish; set aside. Chop remaining eggs. In a salad bowl, combine the greens, tomato, onion and eggs. , In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Garnish with reserved egg wedges.

ANN J'S POLISH SOUR CREAM LETTUCE

Different and refreshing. If you like cucumbers in sour cream, you'll like this. A vintage recipe made by my little old Polish mother, who received it from an even older Polish lady. I've never seen this recipe anywhere else. I suspect it might have a bit of a German history somewhere. Use these measurements as a guide; this is for a fairly large head of lettuce.

1 head iceberg lettuce, washed and drained
1/2 pint sour cream
4 tablespoons cider vinegar
2 tablespoons sugar
1 tablespoon milk (may or may not need)

Steps:

  • Tear lettuce in bowl. Sprinkle with salt, don't use too much, let wilt. Squeeze out lettuce.
  • Combine dressing ingredients and blend until smooth. Pour over lettuce and mix.
  • The ribs of the lettuce will have just a very slight crunch.
  • Can adjust sugar or vinegar to taste.

1/2 cup milk
1/4 cup ceder vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
8 bacon strips, cut into 1-inch pieces
1 head medium head iceberg lettuce or 1 bunch leaf lettuce, torn
1 large onion, sliced into rings

Steps:

  • In a small bowl, beat the eggs, milk, vinegar, salt and pepper until smooth; set aside. In a large skillet, cook bacon over medium heat until crisp. Remove bacon to paper towels to drain, reserving drippings., Whisk egg mixture into drippings. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. , In a large salad bowl, combine the lettuce, onion and bacon. Pour dressing over salad; toss to coat. Serve immediately.

2 hard-boiled large eggs, chopped
2 green onions, sliced
1/2 cup sugar
1/2 cup vinegar

1/2 teaspoon garlic powder
1/4 teaspoon ground mustard

Steps:

  • In a skillet, cook bacon until crisp. Remove the bacon; crumble and set aside. Drain, reserving 1/4 cup drippings. In a large bowl, combine the greens, eggs, onions and bacon. Add remaining ingredients to the drippings; bring to a boil. Drizzle over the salad and toss to coat. Serve immediately.
