2 bag(s) (16 oz.ea.) frozen white corn
1 pkg (8 oz.) cream cheese
1/2 c butter
1/2 c chopped green pepper
1/2 c onion, chopped fine
2 c shredded cheddar cheese
2 c diced or cubed cooked ham
FOR TOPPING (OPTIONAL):
4 slice bacon
2 Tbsp butter
3 slice bread

Steps:

  • 1. Spray the slow cooker with cooking spray. Place the corn into the slow cooker. Add cream cheese, butter, green peppers and onion, and ham.
  • 2. Cover and cook on HIGH until butter and cream cheese are melted, about 30 minutes.
  • 3. Stir in the shredded cheddar, cover, and cook on HIGH for about 2 hours.
  • 4. (Optional) After the first hour and a half, top with breadcrumb mixture and crumbled bacon. Turn setting to LOW for the last 1/2 hour.
  • 5. TO MAKE TOPPING: Cook 4 slices of bacon until crisp; drain on paper towels. Melt 2 Tbsp. butter in microwave. Tear up 3 slices bread into small crumbs and mix with melted butter. Spread the buttered crumbs over the corn mixture in the slow cooker and top with crumbled bacon. Continue cooking, covered, for another 1/2 hour, as stated above.

Everyone always wants the recipe! Note: The ingredients can be doubled and baked in a 9x13 inch baking dish in almost the same amount of cooking time.

½ cup butter, melted
2 eggs, beaten
1 (8.5 ounce) package dry corn bread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can creamed corn
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
  • In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
  • Bake for 45 minutes in the preheated oven, or until the top is golden brown.

Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

Nonstick cooking spray, for the baking dish
8 ears fresh corn, shucked
4 tablespoons unsalted butter
1/4 cup whole milk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 8.5-ounce package cornbread mix, such as Jiffy
One 8-ounce carton sour cream
2 large eggs
One 8-ounce block sharp Cheddar, shredded
2 green onions, thinly sliced, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
  • Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
  • Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.

2 cups potatoes, cubed
2 cups cooked ham, cubed
1 (15.25 ounce) can whole kernel corn, drained
¼ cup finely minced fresh parsley
¼ cup butter
1 tablespoon chopped onions
⅓ cup all-purpose flour
1 ¾ cups milk
⅛ teaspoon ground black pepper
4 ounces processed cheese food, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
  • Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
  • Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.

1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
2 cups milk
1/2 teaspoon Worcestershire sauce
2 cups cooked ham, cubed
1 (10 ounce) can corn
1 cup cheddar cheese, grated

Steps:

  • In a large saucepan, melt butter and add flour and salt. Stir until well blended.
  • Slowly add milk, stirring until thickened.
  • Stir in Wocestershire sauce, potatoes, ham and corn.
  • Pour mixture into a 1 1/2 quart baking dish and sprinkle top with Cheddar.
  • Bake at 350 for 40 minutes.
