My mom used to make this recipe. It can also be made with 3/4 pound browned, drained hamburger. We called it SOS: Same Ole Stuff. Great comfort food! Either recipe is easy to make and tastes great with a cold beer. Serve over toast.

Steps:
- Cut the beef and onions very fine.
- Melt the butter or margarine in a large skillet. First add onions for 1-2 minutes then add beef.
- Sprinkle the flour over the mixture and stir well to cook the flour and melted butter,be sure it doesn't stick or burn-stir constantly.
- Gradually add the milk, continue stirring until the mixture boils, then turn the fire down and cook slowly.
- It should thicken enough to be a good gravy consistency.
- Serve over toast.
- Some people serve it on the toast with chopped hard boiled eggs.

This recipe came from my mother-in-law. It's a variation of the classic chipped beef on toast, or SOS, as my husband called it. It may sound kind of strange but once I tried it I have never gone back to the original.

- 1. Cut the chipped beef into small, bite-size pieces. In a large, deep skillet, melt 4 Tbsp. butter at medium temperature. Add the beef and cook until hot, stirring to break up pieces.
- 2. Stir in flour until a thick paste is formed. Add remaining 2 Tbsp. of butter. Gradually stir in milk.
- 3. When mixture begins to bubble, add creamed corn and cheese. Mix well and simmer 5 minutes over low heat. Season with salt and pepper. Serve hot over toast.
- 4. My mother-in-law added a chopped green pepper to her recipe--add with the beef and cook until tender. I prefer it without the pepper.

This was a staple for my family when we had young kids because it was cheap, delicious and easy. These days the kids are all adults and not only do they love it, but all 4 generations in our house love it! We do tend to like things a bit saltier than a lot of folks, so because the beef is already a bit salty, you can leave out the bouillon and just add salt to your taste. - In a medium saucepan over medium heat, melt the butter.
- Add in the flour and whisk for a minute to cook the flour.
- SLOWLY add in the milk whisking constantly to break up the clumps.
- Reduce heat to medium low and cook, whisking often until the mixture thickens. ~3-6 minutes. Watch so it doesn't burn!
- Once the mixture thickens add in the ham and using a rubber tipped spatula, mix to combine, gently scraping on the base on the pan.
- Cook for 1 minute.
- Add in the peas, stir gently and turn off the heat.
- Toast the bread and place 2 slices of toast on a plate.
- Ladle a generous portion over the toast.

- 1. In a large fry pan, saute the onions (if using) in butter until translucent. Add in the chipped beef and fry until edges just start to crisp slightly.
- 2. Sprinkle in the flour. Mix well. Add in the milk. Stir until it starts to thicken. If it's a bit too thick, you can thin it with a little more milk.
- 3. Meanwhile, get the toast ready on plates.
