This easy creamed spinach side is a wonderful addition to any elegant holiday meal, a neighborhood potluck or even a holiday work function.

1 pound fresh spinach (or 10 oz frozen spinach, thawed and squeezed dry)
1 teaspoon olive oil
¼ cup onion (minced)
1 tablespoon butter
⅓ cup heavy cream
2 ounces cream cheese
¼ teaspoon garlic powder
⅛ teaspoon seasoning salt
black pepper to taste

Steps:

  • Wash and dry spinach if using fresh. Remove any tough stems and roughly chop.
  • Cook spinach in a pan with olive oil over medium heat until wilted and cooked through, about 3 minutes. Remove from pan and place in a strainer to drain.
  • Add onion and butter to the pan and cook on medium low heat until onion is softened. Add remaining ingredients and bring to a simmer while stirring until smooth. Simmer 1-2 minutes or until thickened.
  • Squeeze any excess moisture out of the spinach. Add back to the pan and stir to combine. Heat through and serve.

Creamed Spinach with Crispy Cheese image

Number Of Ingredients 11

2 tablespoons unsalted butter
1 medium onion, finely chopped
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
2 tablespoons all-purpose flour
3 tablespoons heavy cream
One 10-ounce package frozen chopped spinach, thawed and drained
1 cup grated white Cheddar
Juice from 1/2 lemon
Hot sauce, to taste
3/4 cup grated Parmesan

Steps:

  • Melt the butter in a medium pot over medium heat. Add the onion and sprinkle with salt and pepper. Cook until the onion is soft and translucent, 5 to 7 minutes. Add the garlic and cook for about a minute longer. Stir in the flour until combined and cook for 2 minutes to cook out the flour taste. Add the heavy cream and cook, stirring, until the sauce is thick and there are no lumps, about 5 minutes.
  • Add the spinach, breaking up any frozen chunks with the back of a wooden spoon. Stir to combine with the creamy mixture until uniformly incorporated. Taste and season with salt. Cook until the spinach is heated through and mixture begins to bubble, about 3 minutes. Add the Cheddar, lemon juice and hot sauce. Season with salt and pepper. Turn to the lowest setting.
  • Heat a large nonstick pan over medium-high heat and line a baking sheet with parchment paper. Make 2-tablespoon mounds of Parmesan in the pan, leaving 3 inches between each (work in batches if your pan isn't large enough). Allow the Parmesan to melt and bubble until it starts to brown around the edges. Use an offset spatula to carefully lift each cheese crisp to the lined baking sheet. Allow to cool for 2 minutes. Crumble or serve whole on top of the creamed spinach.

CREAMED CHEDDAR SPINACH

We love cheddar spinach at this house. All our sons (5 and one on the way) love it too. This is an excellent side to steak or even a dip in a bread bowl.

2 pkg fresh spinach
1/2 stick butter, unsalted
1 Tbsp chopped garlic
1 1/2 c extra sharp cheddar
1/2 c buttermilk
1 dash(es) lemon pepper salt

Steps:

  • 1. In a large pot, place butter, garlic, and spinach. Cook on medium to high heat. Wilt spinach until soft. You may also use frozen spinach.
  • 2. Add cheese and buttermilk. Lower heat to low medium. Stir occasionally, until thickened.
  • 3. Add lemon pepper salt to taste.

1/3 cup crushed saltines (about 6 crackers)
1 large egg, beaten
1/2 teaspoon onion powder

1 cup shredded cheddar cheese, divided

  • In a small bowl, combine the spinach, saltines, egg, onion powder and salt. Stir in 1/2 cup cheese. , Transfer to a greased 2-cup baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 30 minutes or until cheese is melted and bubbly.

This is a recipe for a delicious and cheesy creamed spinach. It's easy and tastes much better than any store bought or frozen versions. I made it for Thanksgiving and it was great!

3 (10 ounce) bags clean fresh spinach, roughly chopped
1 ¼ cups heavy cream
¼ cup butter
2 tablespoons minced garlic
3 tablespoons minced white onion
6 slices shredded provolone cheese
½ cup freshly grated Parmesan cheese
salt and pepper to taste

Steps:

  • Heat a large skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.
  • Melt the butter in the skillet over medium heat. Add garlic and onions; cook and stir until tender, about 5 minutes. Add the spinach and stir in the heavy cream. Sprinkle in the provolone cheese and stir to melt and coat the spinach. Once the provolone has melted, stir in the Parmesan cheese and continue to cook and stir until thickened. Season with salt and pepper and serve hot.

CREAMED SPINACH WITH GRUYERE

Extra-virgin olive oil, for the pan
4 cloves garlic, smashed
Crushed red pepper
2 1/2 pounds baby spinach
Kosher salt
1 shallot, diced
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup milk
1/4 cup heavy cream
1/2 cup grated Gruyere cheese
1/2 cup grated Parmigiano, plus more for garnish

Steps:

  • Coat a large, straight-sided saute pan with olive oil and heat over medium heat. Add 2 cloves of garlic and a pinch of crushed red pepper and cook until the garlic is golden, about 1 minute. Remove the garlic and discard.
  • Add half of the spinach to the pan, season with salt and saute until gently wilted. Remove the spinach from the pan to a towel-lined colander set inside a bowl to let the spinach drain and cool. Repeat the process with the remaining garlic and spinach and another pinch of crushed red pepper. Squeeze the towel to remove most of the liquid from the spinach.
  • Remove any liquid from the bottom of the saute pan and coat lightly with olive oil. Heat the oil over medium heat, add the shallots and season with salt and a pinch of crushed red pepper. Saute until the shallots are translucent and very aromatic, 5 to 7 minutes. Add the butter and, when melted, stir in the flour. Cook until it is the texture of wet sand, 5 to 6 minutes. Whisk in the milk and heavy cream. Taste for seasoning and season with salt, if needed, (it will). Bring the milk and heavy cream to a boil, then reduce the heat and simmer for 5 to 6 minutes, stirring occasionally so the milk doesn't scorch on the bottom. Stir in the Gruyere and Parmigiano until melted. Add the reserved spinach and stir to combine. Taste and adjust the seasoning, if needed. Transfer to a serving bowl, top with a sprinkle of Parmigiano and serve.

3 tablespoons butter
1 cup minced onion
salt
fresh ground black pepper
3 lbs fresh spinach, washed, stemmed and finely chopped
2 tablespoons chopped garlic
2 cups heavy cream
12 ounces grated sharp cheddar cheese

Steps:

  • Preheat the oven to 375 degrees.
  • Lightly grease a 6 cup casserole.
  • In a large saute pan, melt the remaining butter.
  • Add the onions and season with salt and pepper.
  • Saute for about 2 minutes, or until the onions are soft.
  • Add the spinach.
  • Season with salt and pepper.
  • Saute for 3 to 4 minutes.
  • Add the garlic and cream.
  • Mix well.
  • Season the mixture with salt and pepper.
  • Bring the liquid to a boil and reduce to a simmer.
  • Simmer the mixture for 6 minutes.
  • Remove the pan from the heat and turn into the prepared pan.
  • Add 1/2 of cheese to casserole and stir.
  • Sprinkle the top with the remainder of the grated cheese and place in the oven.
  • Bake for about 4 to 6 minutes or until the cheese is slightly brown and bubbly.

butter-flavored cooking spray
3 tablespoons butter
1 medium onion, chopped
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup grated sharp Cheddar cheese
1 cup mayonnaise
2 large eggs
1 ½ teaspoons Worcestershire sauce
1 ½ teaspoons lemon juice
½ teaspoon seasoned salt
½ teaspoon garlic powder
¼ teaspoon ground black pepper
½ cup seasoned bread crumbs
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 2-quart casserole dish with cooking spray.
  • Melt 3 tablespoons butter in a skillet over medium-low heat. Add onions and saute until translucent, 5 to 7 minutes. Transfer to a bowl.
  • Add spinach, condensed soup, Cheddar cheese, mayonnaise, eggs, Worcestershire sauce, lemon juice, seasoned salt, garlic powder, and pepper to the onions; stir to combine. Pour mixture into the prepared casserole. Sprinkle bread crumbs evenly over top and dot with remaining butter.
  • Bake in the preheated oven for 45 minutes.
