Blue cheese stuffed celery is a great on-the-go protein snack. Only 4 ingredients and 15 minutes and stores for up to a week.

10 stalks celery
5 ounces blue cheese, room temperature (see notes for types of blue cheese)
5 tablespoons sour cream (or plain Greek yogurt)
1 teaspoon Dijon mustard (or yellow mustard)
10 medium pecans, optional (chopped)
1 pinch paprika (for color)

Steps:

  • Wash and dry the celery. You can keep the celery leaves attached to the stalks or even chop the leaves for garnish.Leave the celery sticks in full length or cut into 3" appetizer lengths or 1" bite size lengths. Cut on an angle for "looks".
  • Crumble the blue cheese (room temperature is easier to crumble). With a fork add and mix in the sour cream and Dijon mustard. Mix until smooth.
  • If using nuts, chop into small pieces.
  • Fill the celery sticks with the blue cheese dip. A knife will help get the dip into the thin crevices of the celery.
  • Sprinkle with paprika for color.

3 tablespoons crumbled Danish blue cheese, room temperature
2 tablespoons mayonnaise
1/3 cup sour cream
2 tablespoons white vinegar
1/2 teaspoon kosher salt
10 grinds black pepper
1/2 head celery, with leaves

Steps:

  • In a medium mixing bowl, whisk together the blue cheese, mayonnaise, sour cream, vinegar, salt, and pepper until well combined.
  • Pick the celery leaves and set aside. Thinly slice the celery stalks on the bias and add both the celery and the leaves to the dressing and toss to coat. Serve immediately.

I have a summer job in the local museum and I have access to the exhibits. On display are some old cookbooks and I often have time to browse them. My favorite is dated 1928. This recipe comes from that book.

1 lb fresh celery
2 tablespoons butter
2 tablespoons flour
1 cup milk
salt and pepper
1/2 cup grated cheese
4 tablespoons breadcrumbs
1 teaspoon butter

Steps:

  • Cut celery to 1 inch pieces.
  • Cover with water and cook till tender but not soft.
  • Drain, saving the celery liquid.
  • Melt the butter, mix in the flour and gradually blend in the milk to make a smooth white sauce.
  • Use some saved celery liquid to thin the sauce if needed and save the rest for the soup pot.
  • Mix the cooked celery into the sauce and turn into a well buttered dish (oven proof).
  • Sprinkle the cheese over the top.
  • Sprinkle the crumbs that have been lightly browned in the butter over the top of the dish.
  • Bake in a moderate oven (350 degrees) for about 20 mins or until the cheese melts and the mixture is heated through/.

4 tablespoons butter
1 head celery, chopped (include the leaves!)
1 small onion, chopped
2 garlic cloves, minced
1 large russet potato, ptato peeled and diced very small
1/4 cup flour
2 cups chicken stock (or veggie stock)
1/2 cup white wine (or can use apple juice or white grape juice)
1/4 teaspoon white pepper
1/8 teaspoon cayenne pepper (to taste)
salt, if needed, to taste
3/4 cup heavy cream (or half and half or light cream)
4 ounces crumbled blue cheese

Steps:

  • In a soup pot over medium heat, melt butter. Add celery, onion, garlic and potato and saute for 5 - 7 minutes.
  • Add flour and stir constantly for 1 minute.
  • Slowly add stock, wine, white pepper and desired amount of cayenne. Bring to a boil; reduce heat and simmer for 15 - 20 minutes (stirring often), or until veggies are very tender.
  • Stir in cream and blue cheese. Heat through but do not allow to boil. Add salt, if needed.
  • Serve.

1 tablespoon olive oil
1 onion, finely chopped
2 large potatoes, peeled and diced
6 stalks celery, washed and chopped
1 teaspoon caraway seed
2 1/2 cups vegetable stock
1 1/4 cups 1% low-fat milk
2/3 cup light cream
3 ounces blue cheese
1 ounce fresh chives, roughly chopped

Steps:

  • Heat the oil in a large saucepan then add the onion, potato, celery and caraway seeds.
  • Fry gently for approximately 5 minutes until the onion is softened but not browned.
  • Add the stock and milk and simmer uncovered for 20-30 minutes. Transfer the soup in batches to a blender and whizz until smooth, then return to the rinsed saucepan.
  • Gently reheat the soup, then stir in the cream. Do not allow to boil.
  • Crumble the blue cheese into individual soup bowls and pour over the soup.
  • Sprinkle with chives and serve immediately.
