1 package (10 ounces) fine egg noodles
1-1/4 cups 4% cottage cheese
1-1/4 cups sour cream
1 medium onion, finely chopped
1 tablespoon Worcestershire sauce
1/8 teaspoon garlic salt
2 tablespoons grated Parmesan cheese
Paprika, optional

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions; drain. Transfer to a large bowl. Add the cottage cheese, sour cream, onion, Worcestershire sauce and garlic salt. Spoon into a greased 2-qt. baking dish. Sprinkle with Parmesan cheese., Bake, uncovered, until top is lightly browned, 35-40 minutes. If desired, sprinkle with paprika.

2 teaspoons instant beef bouillon powder
2 teaspoons minced onion flakes

1/2 teaspoon dried dill
1/2 teaspoon paprika
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger

1/4 teaspoon sea salt
1 lb ground meat (beef, pork, veal, turkey, or a mixture)
1/3 cup unseasoned breadcrumbs
1/4 cup all-purpose flour
1/3 cup butter
4 ounces thinly sliced white mushrooms (optional)
1/3 cup flour
3 1/2 cups beef broth (two 14.5 ounce cans)
1/2 tablespoon lemon juice
1/2 tablespoon Worcestershire sauce
1 tablespoon minced fresh parsley, divided
1/2 teaspoon granulated sugar
1 1/4 teaspoons paprika
1 teaspoon minced onion flakes (or 3/4 teaspoon onion powder)
1/2 teaspoon dill weed
1/4 teaspoon ground ginger

1 cup sour cream
8 -12 ounces cooked wide egg noodles
1 1/2 tablespoons water
1 tablespoon salted butter
remaining minced fresh parsley

Steps:

  • WHISK 1 large egg in a large mixing bowl (or standing mixer bowl) with 3 tablespoons sour cream, 2 teaspoons flour and 1 teaspoon baking powder; ADD the following meatball ingredients and whisk again: 2 teaspoons instant beef bouillon powder, 2 teaspoons minced onion flakes, 1 teaspoon baking powder, 1 1/2 teaspoons dried parsley flakes, 1 teaspoon lemon pepper, 1/2 teaspoon dried dill, 1/2 teaspoon paprika, 1/4 teaspoon ground allspice, 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 1/4 teaspoon fresh ground pepper and 1/4 teaspoon sea salt; PLACE 1 lb. of ground beef or pork or veal or turkey (or a combination of any) into bowl with mixture; ADD 1/3 cup unseasoned breadcrumbs; MIX well using hands, or using a large fork.
  • ADD 1/4 cup flour DREDGE to a large mixing bowl and place into working area; ROLL meat mixture with hands into 1-inch balls; GENTLY place formed meatballs into the flour DREDGE; REPEAT with remaining meatballs; SWIRL meatballs in bowl of flour until coated.
  • MELT a few tablespoons butter in a large non-stick skillet or saucepan over medium heat to brown meatballs in; GENTLY place dredged meatballs into buttered skillet, reserving dredge bowl and setting aside; BROWN meatballs, scraping and turning gently with a spatula.
  • POUR one (14.5 ounce) can beef broth over browned meatballs; BRING to a gentle boil; COVER to steam meatballs for 5 minutes; WIPE the previous dredge bowl clean; PLACE a large fine mesh strainer over bowl; CAREFULLY pour broth and meatballs into strainer; STIR in the remaining can broth; RESERVE broth mixture until needed.
  • WIPE browning skillet and place over medium-low heat; MELT 1/3 cup butter; ADD 4 ounces thinly sliced mushrooms if using and saute until golden; SPRINKLE in 1/3 cup flour; COOK mixture, stirring, just until bubbly and light golden.
  • ADD the seasonings for the SAUCE into reserved broth mixture in bowl: 1/2 tablespoon lemon juice, 1/2 tablespoon of the fresh minced parsley, 1/2 tablespoon Worcestershire sauce, 1 teaspoon onion flakes (or 3/4 teaspoon onion powder), 1/2 teaspoon sugar, 1 1/4 teaspoons paprika, 1/2 teaspoon dill weed, 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 1/4 teaspoon fresh ground black or white pepper, and 1/8 teaspoon ground allspice,.
  • WHISK seasoned broth into roux skillet until smooth; BRING to a boil while whisking constantly, until fully thickened; REDUCE heat to low to keep warm.
  • COOK 8-12 ounces wide egg noodles according to package directions; DRAIN; RETURN cooked noodles to same pot over low heat; ADD 1 - 2 tablespoons salted butter, 1 1/2 tablespoons water (to refresh noodle consistency) and the remaining minced fresh parsley; TOSS noodles gently until butter melts; COVER and keep warm on lowest heat, re-moistening with water if needed.
  • WHISK in 1 cup sour cream into warm sauce mixture (NOTE: DO NOT RAISE HEAT ABOVE MEDIUM LOW, OR SOUR CREAM WILL CURDLE); SEASON the sauce to taste if desired; ADD meatballs and heat gently uncovered, stirring occasionally; COVER and reduce heat to lowest setting (sauce will thin to proper consistency from heat condensation); STIR just before serving.
  • ARRANGE warm buttered egg noodles on serving plates; LADLE warm meatballs and sauce over noodles; GARNISH each serving with a light dusting of paprika (or a pinch of dried dill), and a fresh parsley sprig; SERVE and enjoy!

1 lb extra wide noodles
4 Tbsp butter or margarine
1/2 c sour cream
2 dash(es) fresh ground mixed pepper
1 dash(es) fresh ground white pepper
1 Tbsp fresh parsley, chopped, or 1 teaspoon dried parsley flakes

Steps:

  • 1. Cook the noodles according to package. When they are cooked the way you like, drain noodles, letting them sit in the colander in the sink for a minute or two.
  • 2. While noodles are draining, put butter in the same pot and let it start to melt a little.
  • 3. Add noodles back to pot and mix with the butter, until the butter is melted and noodles are coated.
  • 4. Lightly salt and pepper the noodles, mixing gently, then add sour cream and thoroughly combine. Adjust salt and pepper to taste.
  • 5. Mix in parsley and serve.

This recipe came from the Rachael Ray show. Now, sometimes the recipes are good and sometimes, the recipes are not so tasty. This one, however I think was pretty good. I think the cream of mushroom is better than the canned soup, but that's my opinion. I am not above using the canned stuff, but sometimes, it's not what I want. I have adapted this to my taste and the things I keep on hand.

1 lb egg noodles
salt
4 tablespoons oil, divided
1 1/2 lbs chicken breasts (or chicken tenders, cut into bite-size pieces)
salt & freshly ground black pepper
1 lb mushroom (large ones cut in quarters small ones cut in half)
3 tablespoons butter, divided
1 tablespoon flour
2 cups chicken stock, divided
1/2 cup cream or 1/2 cup half-and-half
1 -2 tablespoon Dijon mustard
chives, chopped
1/4 cup chopped parsley

Steps:

  • Cook the noodles in salted water according to package directions.
  • While the water is coming up to a boil, preheat a large skillet over high heat with oil, about 2 tablespoons.
  • Add the chicken, spreading it out in an even layer, and season with salt and pepper.
  • Cook 3 minutes on each side.
  • In another large preheated skillet, heat remaining 2 tablespoons of oil and add the mushrooms.
  • Cook until tender, stirring occasionally.
  • Once the mushrooms have browned up, season them with salt and freshly ground pepper.
  • Melt 1 tablespoon of butter in the mushroom skillet, then add the flour.
  • Cook for 1 minute and whisk in 1 1/2 cups chicken stock, the heavy cream and Dijon mustard.
  • While the mushroom skillet is coming up to a bubble, add remaining 1/2 cup chicken stock to the skillet with the chicken and scrape the bottom of the pan with a wooden spoon to loosen up the browned bits on the bottom of the skillet.
  • Transfer chicken and the liquid to the skillet with the mushrooms.
  • Stir to combine, and cook about 1 minute more, or until thick.
  • Drain and then return the noodles to the pot and add the 2 tablespoons of butter a little salt, pepper, chives, and parsley and stir to melt the butter.
  • To serve, divide the noodles between 4 serving plates, spoon the chicken and mushrooms over the noodles and garnish with chives.

2 chicken breasts, tenders removed (5 oz each, boneless & skinless)
1/2 teaspoon fresh ground pepper
1/4 teaspoon salt
1 pinch crushed red pepper flakes
1 tablespoon canola oil
1 medium shallots or 1 small white onion, minced
2 teaspoons roasted garlic
1 cup thinly sliced shiitake mushroom caps or 1 cup white button mushrooms
3 tablespoons dry vermouth or 3 tablespoons dry white wine
1/4 cup reduced-sodium chicken broth
2 tablespoons heavy cream (we used light cream)
2 tablespoons minced fresh chives (we used the scallions) or 2 tablespoons scallions, green parts only (we used the scallions)

Steps:

  • Season chicken with pepper and salt on both sides.
  • Heat oil in a medium skillet over medium heat; add crushed red pepper & let flavor your oil for 2 minutes.
  • Add the chicken and cook, turning once or twice and adjusting the heat to prevent burning, until brown and an instant-read thermometer inserted into the thickest part registers 165°F, 12 to 16 minutes.
  • Transfer to a plate and tent with foil to keep warm.
  • Add shallot to the pan and cook, stirring, until fragrant, about 30 seconds:. (we allowed it to cook a bit longer to caramelize).
  • Add mushrooms; cook, stirring occasionally, until tender, about 2 minutes.
  • Pour in vermouth (or wine); simmer until almost evaporated, scraping up any browned bits, about 1 minute.
  • Pour in broth and cook until reduced by half, 1 to 2 minutes.
  • Stir in cream and chives (or scallions); return to a simmer.
  • Return the chicken to the pan, turn to coat with sauce and cook until heated through, about 1 minute.
  • Serve on a platter with the parslied noodles, a nice bottle of wine with a salad of greens.

  • OPEN both cans of beef broth; QUICKLY whisk in beef broth into butter and flour roux until smooth; STIR in the remaining minced parsley, lemon juice, Worcestershire sauce, seasonings and freshly ground pepper to taste; ADD the mushrooms and meatballs; BRING mixture to a boil while stirring; REDUCE heat to medium-low until fully thickened.
  • STIR in 1 cup sour cream; KEEP sauce warmed until serving, stirring as needed.

OLD FASHIONED SOUR CREAM KLUSKI DOUGH (NOODLES, DUMPLINGS, PIEROGI DOUGH) image

2-1/4 cup of flour
1/2 tsp salt
2 Tbsp butter, melted
1 egg
3 Tbsp sour cream, heaping
1/8 - 1/4 warm water

Steps:

  • In a medium sized mixing bowl, stir salt into the flour. Add butter, sour cream, and egg; mix to incorporate. Slowly add a little water at a time while mixing until dough comes together nicely. Turn dough out on floured surface. Knead until smooth. Wrap in plastic wrap and chill overnight or for at least 2 hours before rolling out. Kluski Dough 2 Roll the dough out on a floured surface; cut into strips. Separate strips and toss liberally with flour. Allow kluski to sit for at least 20 minutes before boiling, giving the dough time to rest. Kluski Dough 3 Take a few handful of noodles, shaking the excess flour off, toss into a pot of rapidly boiling salted water. Boil for about 10 minutes. Remove from water with slotted spoon to colander to rinse and drain. At this point I normally stir in a teaspoon of butter for flavor and so the noodles won't stick together. Continue until all of the noodles are cooked. Add more water to the pot in between batches and allow the water to return to boiling before adding the next batch of noodles. These noodles freeze fairly well. Toss liberally with flour. Evenly distribute noodles in one layer on a sheet pan. Place pan in freezer until noodles are frozen. Store in freezer bags until ready to use. This recipe is also the same recipe I use for pierogi and dumplings. This recipe does not keep well in the refrigerator for more than 24 hours.

BAKED SOUR CREAM NOODLES (LOW-FAT)



Baked Sour Cream Noodles (Low-Fat) image

A creamy, cheesy, treasure of a find from the American Heart Association's cookbook. Traditionally we would think of this as a side dish, but at 396 calories per serving I wanted to make sure this recipe would fill us up without having to add large servings of meat or bread. It did! We like it served with 1/2 of a small grilled/broiled chicken breast and steamed veggies, but shrimp would also be a nice accompaniment. I am in constant search of low-fat, heart healthy recipes that actually fill us up. So often we find recipes listed as "low-fat" or "heart healthy" and the serving size is so small a person walks away from the table hungry or we are deceived by the words "low-fat" and eat 4x what the recommended portion size is defeating the original intent. This filling dish generously serves 4. We also like a tsp or so of onion powder added to the cheese mixture. If you are not on a sodium restricted diet, feel free to add salt to taste. The recipezaar database doesn't seem to recognize the yolk free egg noodles or low sodium worcestershire sauce so I will list the Nutrition Values as stated by the AHA. 8 ounces yolk-free egg noodles (such as No-Yolks)
1 1/2 cups fat free sour cream
1 cup fat-free cottage cheese, drained
1/4 cup skim milk
2 garlic cloves (we use 4)
1 teaspoon low-sodium worcestershire sauce
1/8 teaspoon white pepper (or to taste)
1/4 cup parmesan cheese, shredded or 1/4 cup parmesan cheese, grated

Steps:

  • Preheat the oven to 350 degrees farenheit, 175 celsius, or gas mark 4.
  • Lightly spray a 2 quart casserole dish with cooking spray.
  • Prepare the egg noodles per package directions omitting the oil and salt, drain well.
  • While noodles are cooking, in a large bowl stir together the sour cream, cottage cheese, milk, garlic, worcestershire, and pepper.
  • Stir in the cooked noodles, and spoon into the casserole dish.
  • Bake uncovered, for 15 minutes.

Not diet food. So rich. So creamy. Decadent. Make it. Enjoy it. I've made this 3 times now and my family just loves it. I made it to serve at the big family Christmas, too. Not your traditional orange "Mac and Cheese". From "Everyday Italian" show on Food Network. The original recipe claims 8 servings, but we get more like 8 from a 3/4 recipe. I would say it does 12 servings. It is very rich.

12 ounces wide egg noodles
2 cups heavy cream (no substitutions. This is a rich dish. Go with it. Don't try to slim it down.)
2 1/2 cups whole milk (No substitutions)
2 tablespoons all-purpose flour (original recipe said 2 tsp, but I have used tbsp to get this to set up and thicken)
1/2 teaspoon salt, plus more for pasta water
1/4 teaspoon fresh ground black pepper
2 cups grated Fontina cheese, packed
3/4 cup finely grated parmesan cheese, packed
3/4 cup grated mozzarella cheese, packed
4 ounces cooked ham, finely diced (optional)
2 tablespoons finely chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees.
  • Butter a 13 by 9 inch baking dish.
  • Cook noodles in a large pot of boiling salted water until tender, but still firm to bit, stirring frequently. About 5 minutes. Drain well, but do not rinse.
  • Whisk the cream, milk, flour 1/2 tsp salt and pepper in a large bowl to blend.
  • Stir in PART of the cheese only to the milk/cream mixture. 1 cup Fontina. 1/2 cup parmesan. 1/2 cup mozzarella. Also stir in ham, if using, and parsley. Add the noodles and toss to coat.
  • Transfer noodle mixture to the prepared baking dish.
  • In a small bowl combine all the remaining cheeses and toss to blend. Sprinkle the combined cheeses over the noodle mixture.
  • Bake until the sauce bubbles and the cheese melts and begins to brown and get a bit crispy on top, about 20 minutes.
  • Remove from oven and let stand 10 minutes before serving.

4 bone-in pork chops, at room temperature
2 tablespoon vegetable oil
1 1/2 teaspoon dried thyme, divided
1 onion, chopped
1 clove garlic, halved
2 cloves garlic, minced
1/2 cup boiling water
1 beef bullion cube
1 cup sour cream
1 tablespoon all purpose flour
1/2 package egg noodles
salt & pepper to taste

Steps:

  • Place a large pot of salted water onto boil. Heat the vegetable oil in a large straight sided skillet over medium high heat. Rub the pork chops on both sides with the cut side of the halved garlic. Then season both sides with salt and pepper and sprinkle with 1 tsp thyme. You can use more if you like the flavor. Place the pork chops in the skillet and allow them to brown. About 5 minutes on each side - more or less depending on your cook top. When they're golden brown and firm to the touch you know you're done. Remove the pork chops and place them on a plate to rest. Add the onions to the skillet and let saute for a few minutes then add the garlic and remaining thyme and cook until the onions are translucent. Dissolve the bullion cube in the boiling water. Combine the flour and the sour cream. Add the egg noodles to the boiling water. Add the beef bullion water to the skillet. Make sure you scrape up all the yummy bits! Creamy Decadent Homemade Noodles, a North Dakota Favorite! My Husband's Grandmother taught me how to make these and now we eat them at least once a week. Caution: These are NOT low-fat, low-carb, or low-cholesterol!

2 1/2 cups flour
1 teaspoon salt
1 egg
milk, enough to make the dough come together
2 tablespoons butter
2 cups heavy cream

Steps:

  • Mix flour, salt, egg and milk until dough comes together. Do not overmix, do not knead. When the dough loosely forms a ball, roll it out on the countertop, using lots of flour so it doesn't stick. Roll to 1/4 inch thickness with a rolling pin, then cut into strips 1x4 inches with a pizza cutter.
  • Heat a 13x9 electric skillet to 350 degrees, melt the butter and pour in cream.
  • Add the noodles to the butter cream mixture quickly, layering them, if needed. Cover and cook for 15 minutes or "until you can smell them" as Grandma says. I think you can smell them as soon as the butter melts, so I just cook them for 15 minutes. Do not lift cover. After 15 minutes, turn off heat. The cream will have absorbed and the noodles will be crispy on the bottom and creamy on the top. Sprinkle with a little salt and enjoy or you can eat them with a little jelly or maple syrup.

3 cups noodles, uncooked
3 cups V8 vegetable juice or 3 cups tomato juice
2 teaspoons salt
1 teaspoon celery salt (optional)
2 teaspoons Worcestershire sauce
1 dash pepper
1 (6 ounce) can mushroom stems and pieces
1 cup sour cream

Steps:

  • In a large frying pan or Ducth oven saute onion in butter until tender then add meat, brown lightly.
  • Place noodles in a layer over meat.
  • Combine tomato juice and seasonings and pour over noodles.
  • Bring to a boil then cover.
  • Simmer over low heat 30 minutes or until noodles are tender.
  • Stir in sour cream and mushrooms and bring to a boil.
  • Serve hot.

1 tsp minced garlic
2 Tbsp butter
1/2 Tbsp seasoning salt
1/4 tsp black pepper
3 oz cream cheese
3/4 c sour cream
1 Tbsp dried chives
8 oz medium egg noodles

Steps:

  • 1. Cook noodles according to package directions.
  • 2. While cooking noodles, add butter & garlic to a saucepan over medium heat, cook until fragrant, stirring constantly (do not burn!).
  • 3. Add seasoning salt & pepper.
  • 4. Add chunked cream cheese,stirring constantly to melt(add a splash of milk if needed). Reduce heat to low.When melted , add chives & sour cream. Cover while straining noodles.
  • 5. Toss with noodles. serve immediately!

cooking spray
2 eggs
1 cup sour cream (8oz)
1/2 cup grated cheddar cheese
1/2 cup creamy cottage cheese
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon salt
freshly ground coarse black pepper, to taste
1/2 teaspoon dry mustard
1/8 teaspoon freshly grated nutmeg
4 ounces fresh spinach, stems removed or
4 ounces frozen spinach, chopped, thawed & drained

Steps:

  • Preheat oven to 350°F.
  • Cook the noodles in salted water according to pkg directions.
  • Spray 5(1 cup) ramekins or casserole dish with cooking spray.
  • Fill a pan slightly bigger than the ramekins or casserole dish with very hot tap water and place in oven as it preheats.
  • When the noodles cook, whisk the eggs, then whisk in the sour cream, then stir in the 2 cheeses, salt, black pepepr, onion powder, garlic powder, dry mustard, and nutmeg.
  • Drain the noodles and return them to the hot pan.
  • Stir in the spinach, stirring gently to let the hot noodles slightly cook spinach, a couple of minutes.
  • Stir in the egg mxiture.
  • Transfer to the ramekins/casserole dish.
  • Place the ramekins/casserole in the water-filled container in the oven and bake for about 20 minutes for the ramekins or about 50-60 minutes for the casserole dish.

I had some V-8 juice that was sitting in my fridge going to waste so this worked great for me. I used only celery salt, the flavor really adds something. Noodles are egg noodles in my house, but I am sure elbows or corkscrew would work fine. Hope you enjoy!

2 tablespoons olive oil
3 garlic cloves, chopped
2 medium zucchini, cut into spaghetti-like strips (best to use mandolin slicer)
8 ounces light sour cream
2 tablespoons lemon juice
1/4 cup parmesan cheese

Steps:

  • Sprinkle chicken liberally with all the seasoning, using paprika the most. Cayenne pepper is to your liking.
  • Heat grill, or grill pan, to medium high heat.
  • Grill chicken breast until done, about 5 minutes per side.
  • Meanwhile, heat olive oil over medium heat in a large pan with lid. Add zucchini. Once zucchini cooks to al dente, drain excess water, then return to heat and add sour cream and lemon juice.
  • Stir to coat "noodles.".
  • Add Parmesan cheese to taste.
