- In medium bowl, toss greens with oil, vinegar, and a pinch of salt. Set aside. In large bowl, with wire whisk, beat eggs, chives, pepper, 1/2 tsp salt, and 1/4 cup water until blended.
- In nonstick, 10-inch skillet, melt butter over medium-high heat. Add egg mixture to skillet. As egg mixture begins to set around edge, move it gently toward center to allow uncooked egg to flow toward side of pan. When eggs are partially cooked, add cream cheese and continue cooking, stirring occasionally until egg mixture is set but still mosit, about 1 minute.
- To serve, divide greens about four dinner plates. Place two toast halves on each plate, spoon eggs over toast.

- Beat eggs. (I find they get fluffier if you beat the yolks and whites separately and then mix them together.) Add milk and stir.

- 1. Preheat oven to 350 degrees. Spray 4 wells of a 12-cup muffin pan with nonstick cooking spray, spacing them out so there are empty cups between them. Microwave tortillas until warm and pliable. Brush the front and back of each tortilla with 1 beaten egg, then sprinkle with the shredded cheese on both sides, pressing onto the tortilla to make it stick. (The entire tortilla does not need to be covered in cheese.) Place the tortillas in the sprayed muffin cups, lining the inside of the cup to form a well. (Some of the cheese may fall off. That's okay.) Bake for 15-20 minutes or until very golden brown and crispy. (The cheese should look dried out.)
- 2. Meanwhile, whisk together the 8 large eggs and next 3 ingredients. Stir in pimientos. Melt butter in a large nonstick skillet over medium heat; add the onions and cook until soft. Pour in egg mixture and cook, without stirring, until eggs begin to set on bottom. Sprinkle cream cheese cubes evenly over egg mixture; draw a spatula across bottom of skillet to form large curds. Cook until eggs are thickened but still moist. (Do not stir constantly.) Remove from heat.
- 3. Fill each tortilla cup with 1/4 of the eggs. Wrap in a piece of deli wrap paper or paper towel and head out the door!
HERBED CREAM CHEESE SCRAMBLED EGGS
Perfect breakfast for a relaxed morning. It's quick to make but not something that you'll want to hurry through, it's just too good for that. You might want to swap around the herbs to use whats fresh in the garden, new in the fridge, or for a change in flavor.

- Place the cream cheese in a bowl, add the herbs and mash with a fork until the herbs are evenly distributed. Add the green onions, most of the chives, a generous pinch of salt, and mash until those are incorporated as well. Set aside.
- Melt the butter in a small skillet over medium-heat. Add the eggs and let them set a bit. Use a spatula to fold them over themselves, let them set a bit again, and repeat until they are nearly cooked to your liking.
- Remove from heat, add 2 dollops of the cream cheese to the skillet, count to ten, then stir a bit more to work the cream cheese into the eggs. Serve sprinkled with the remaining chives, salt and pepper to taste, and toast, if using, on the side.
