1/4 cup(s) solid shortening
3 ounce(s) pkg. cream cheese
1 1/4 cup(s) all purpose flour
1/2 teaspoon(s) salt
3 tablespoon(s) ice water
1/2 pound(s) ground lean beef
1/3 cup(s) pizza sauce
1 tablespoon(s) chopped onion
1 teaspoon(s) oregano
1/4 teaspoon(s) salt
1 dash(es) pepper
1/2 cup(s) shredded mozzarella cheese

Steps:

  • Cut shortening and cream cheese into flour and salt. Sprinkle with water one Tablespoon at a time until dough holds together. Chill about 25 minutes. Brown beef. Pour off fat. Stir in pizza sauce, onion, oregano, salt and pepper. Set aside. Roll out pastry into two 8-inch circles on a floured surface. Cover 1/2 of each circle with meat mixture, and top each with cheese. Fold over pastry to cake a half moon. Press our edges with fork to seal . Bake on a lightly greased cookie sheet at 425^ for 20 minutes , until golden brown.

6 ounces whole milk or part-skim ricotta, preferably Our Family
4 ounces shredded mozzarella, preferably Our Family
2 tablespoons all-purpose flour, plus more for dusting
A good pinch kosher salt
Pinch dried oregano
Freshly ground black pepper
1/2 green pepper, chopped
2 large eggs
1 sheet puff pastry, thawed
6 tablespoons (94 grams) pizza sauce, plus more for serving
Mini pepperoni, for topping
Additional toppings as desired: onions, sausage, etc.

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • Combine the ricotta, mozzarella, flour, salt, oregano, a few turns of pepper, the chopped green pepper and 1 of the eggs in a large bowl.
  • On a work surface lightly dusted with flour, roll the puff pastry out to 10-by-15 inches. If it gets sticky, dust with more flour. Cut the pastry into 6 squares and transfer to the lined baking sheet. Place a dollop of the cheese mixture into one of the corners of each square, leaving a 3/4-inch border. Create a well in the center of the cheese mixture and add a spoonful of sauce. Sprinkle with the mini pepperoni and any additional desired toppings. Beat the remaining egg with a splash of water in a bowl to make an egg wash and brush the edges of the pastry with it. Fold the pastry over and press to seal well, using a fork to pinch the edges. Repeat with the remaining pastry squares and filling. Brush the tops with the egg wash.
  • Refrigerate for 30 minutes. Meanwhile, preheat the oven to 375 degrees F.
  • Bake until golden brown; begin checking for doneness at 30 minutes. (It's alright if some of them break open at the seams while baking; it's part of their rustic charm.) Let cool slightly, then serve warm with additional pizza sauce for dunking. Leftovers can be stored in the refrigerator and are great cold the next morning for breakfast! You can also prepare a whole batch a day or two in advance, store them in the fridge, and reheat them for a few minutes in a 325 degree F oven before serving.

Creamy Chicken and Garlic Picnic Pasties-Parcels With Boursin image

Delectable litle pasties or pastry parcels filled with tender chunks of chicken breast and French Boursin cream Cheese, delicious! These are so easy to make, as they use cooked chicken breast, making them very handy for any leftovers you might have. France meets England in these pastry parcels, I have taken the idea of a traditional pasty, then added a little French touch with the Boursin cheese, thus dispensing with any need to make a white sauce to bind the chicken! Great for lunch boxes, picnics, lunch, supper or a light meals or snacks.NB: (I would not advise re-heating these, as the chicken has already been cooked twice before - they are just as delicious warm or cold.)

8 ounces pre-prepared puff pastry
8 ounces cooked chicken breasts, chopped
5 ounces cream cheese with garlic and herbs, such as Boursin
3 ounces mushrooms, chopped
1 tablespoon fresh parsley, chopped
fresh ground black pepper
eggs or milk, for glaze

Steps:

  • Heat oven to 200ºC, 400ºF, Gas Mark 6. Grease and line a large baking tray.
  • Thoroughly mix together all the filling ingredients, seasoning with black pepper. (You can pre-fry the mushrooms if you wish.).
  • Roll out the pastry to a 30 cm (12 inch) square, then cut into 4 squares, place them on the baking tray.
  • Pile the ingredients into the middle of the pastry sqaures. With the back of a spoon firmly press ingredients together.
  • Brush edges with milk, fold corners to the centre sealing edges.
  • Brush with beaten egg or milk and bake for 35 minutes until golden brown.
  • Eat warm or cold.

Found this recipe several years ago. Delicious. Our 2 year old Grandson enjoyed eating a piece. It met his approval for sure.

1 - 8 oz. pkg cream cheese, room temperature
2 large eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 c grated parmesan cheese
FOR TOPPING
1/2 c pizza sauce
1 1/2 c shredded mozzarella cheese
pkg pepperoni slices
1/4 c green & red peppers, small pieces
slice baby portebello mushrooms

Steps:

  • 1. Preheat oven to 350
  • 2. Lightly spray a 9x13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined.
  • 3. Spread into baking dish. Bake for 12-15 minutes, or until golden brown. Allow crust to cool for 10 minutes.
  • 4. Spread pizza sauce on crust. Top with cheese and toppings. Bake 8-10 minutes until cheese is melted.
