1 cup graham cracker crumbs
1/4 cup granulated sugar
4 tablespoons butter
15 ounces all-purpose flour
5 ounces cocoa powder
1 pound 8 ounces sugar

1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
4 eggs
1 1/2 cups buttermilk
3 ounces vegetable oil
2 teaspoons vanilla extract
1 1/2 cups hot coffee
12 ounces cream cheese
8 ounces butter
1 1/2 pounds powdered sugar, sifted
1 teaspoon vanilla extract
8 ounces creamy peanut butter
2 cups granulated sugar
1/2 teaspoon cream of tartar
4 egg whites
2 teaspoons vanilla extract

Steps:

  • For the crust: Preheat the oven to 325 degrees F. Line muffin pans with 36 muffin liners. Combine the graham cracker crumbs, granulated sugar and butter in a bowl. Mix with your hands until well combined. Press 2 tablespoons of the mixture into the cupcake liners and bake for 7 minutes. Remove and let cool.
  • For the chocolate cake: Preheat the oven to 325 degrees F. In the bowl of an electric mixer with the whisk attachment, whisk the flour, cocoa powder, granulated sugar, baking soda, baking powder and salt until well combined. Add the eggs, one at a time, scraping the bowl as needed. Add the buttermilk, vegetable oil, vanilla and coffee and mix for about a minute until well combined. Fill the 36 muffin pans with the pre-baked graham cracker crust three-quarters full with batter and bake until a toothpick inserted comes out clean, about 20 minutes.
  • For the peanut butter cream cheese filling: Whip the cream cheese and butter in an electric mixer with the paddle attachment until fully incorporated. With the mixer on low, gradually add the powdered sugar until combined. Add the vanilla and mix until combined. Finally, add the peanut butter and mix until fully incorporated.
  • For the marshmallow frosting: In small saucepan, combine the granulated sugar, 5 ounces water and the cream of tarter and boil until the sugar dissolves, stirring occasionally.
  • In the bowl of an electric mixer with the whisk attachment, beat the egg whites and vanilla until firm peaks form. With mixer on high, slowly stream the hot sugar mixture into the egg whites and mix for about 3 minutes.
  • To assemble: Use a knife to cut a hole out of the center of the cupcakes. Fill with peanut butter cream cheese filling with a spoon and frost with marshmallow frosting.

2 teaspoons cold water
1 teaspoon cold cider vinegar
1 1/2 cups all-purpose flour, plus more for surface
1/2 teaspoon salt
4 ounces (1 stick) cold unsalted butter, cut into small pieces
4 ounces cold cream cheese, cut into small pieces

Steps:

  • Combine water and vinegar in a small bowl. Combine flour and salt in another bowl. Using a pastry cutter or your fingers, cut butter and cream cheese into flour mixture until mixture resembles coarse crumbs with some larger pieces remaining.
  • Add water mixture to dough in a slow, steady stream, stirring, until mixture just begins to hold together. (Alternatively, pulse ingredients in a food processor.) Turn out onto a piece of plastic wrap, and wrap. Press dough into a disk using a rolling pin. Refrigerate until firm, about 1 hour or overnight. (Dough can be frozen for up to 1 month; thaw before using.)
  • Roll dough into a 12-inch round on a lightly floured surface. Fit dough into a 9-inch pie dish. Trim edge, leaving a 1-inch overhang. Turn overhang under so that edge is flush with rim. Flute edge. Freeze until firm, about 15 minutes.

This is my favorite pie crust. It took several years and over fifty tries to get it just right and is the soul of this book. It is unlike any other cream cheese pie crust because, in addition to being tender, it is also flaky. In fact, it is very similar in texture to almost as flaky but a little softer and more tender, and it browns more when baked, resulting in a rich golden color.

  • Food processor method:
  • Cut the butter into small (about 3/4-inch) cubes. Wrap it in plastic wrap and freeze it until frozen solid, at least 30 minutes. Place the flour, salt, and baking powder in a reclosable gallon-size freezer bag and freeze for at least 30 minutes.
  • Place the flour mixture in a food processor with the metal blade and process for a few seconds to combine. Set the bag aside.
  • Cut the cream cheese into 3 or 4 pieces and add it to the flour. Process for about 20 seconds or until the mixture resembles coarse meal. Add the frozen butter cubes and pulse until none of the butter is larger than the size of a pea. (Toss with a fork to see it better.) Remove the cover and add the water and vinegar. Pulse until most of the butter is reduced to the size of small peas. The mixture will be in particles and will not hold together. Spoon it into the plastic bag. (For a double-crust pie, it is easiest to divide the mixture in half at this point.)
  • Holding both ends of the bag opening with your fingers, knead the mixture by alternately pressing it, from the outside of the bag with the knuckles and heels of your hands until the mixture holds together in one piece and feels slightly stretchy when pulled.
  • Wrap the dough with the plastic wrap, flatten it into a disc (or discs) and refrigerate for at least 45 minutes, preferably overnight. (For a pie shell and lattice, divide it in a ratio of two thirds:one third - use about 9.5 ounces for the shell and the rest for the lattice, flattening the smaller part into a rectangle.)
  • Hand method:
  • Place a medium mixing bowl in the freezer to chill.
  • Cut the butter into small (about 3/4-inch) cubes. Wrap it in plastic wrap and refrigerate it for at least 30 minutes.
  • Place the flour, salt, and baking powder in a medium bowl and whisk to combine. Add the cream cheese and rub the mixture between your fingers to blend the cream cheese into the flour until it resembles coarse meal. Spoon the mixture, together with the cold butter, into a reclosable gallon-size freezer bag. Expel any air from the bag and close it. Use a rolling pin to flatten the butter into thin flakes. Place the bag in the freezer for at least 10 minutes or until the butter is very firm.
  • Transfer the mixture to the chilled bowl, scraping the sides of the bag. Set the bag aside. Sprinkle the mixture with the water and vinegar, tossing lightly with a rubber spatula. Spoon it into the plastic bag. (For a two-crust pie, it is easiest to divide the mixture in half at this point.)
  • Holding both ends of the bag opening with your fingers, knead the mixture by alternately pressing it, from the outside of the bag, with the knuckles and heels of your hands until the mixture holds together in one piece and feels slightly stretchy when pulled.

  • Understanding
  • A classic cream cheese crust contains no water and is more tender than an all-butter crust but not at all flaky. I have found it to be so tender it is impossible to use for a lattice top and the bottom crust often develops cracks through which a filling will leak and stick to the bottom of the pan. Very little water is needed, because the cream cheese contains 51 percent water. The addition of a small amount of water connects the two gluten-forming proteins in the flour, producing the rubbery, stretchy gluten that strenghtens the structure just enough to prevent cracking when the crust bakes. This pie crust does not shrink or distort as much as an all-butter crust because there is less development of gluten. The acidity of the vinegar weakens the gluten that forms, making the crust still more tender and less likely to shrink. If desired, it can be replaced with water.
  • Cream cheese is 51 percent water and 37.7 percent fat, so 3 ounces contain 1.53 ounces (about 3 tablespoons) or water and 1.13 ounces of fat. That means that the pie crust with 6.5 ounces of flour contains the equivalent of about 4 1/2 tablespoons of water. Compared to the all-butter crust, this crust has about 1 tablespoon more water, 1.13 ounces more of fat, and .34 ounce more milk solids. The extra fat in the cream cheese coats some of the proteins in the flour, limiting the development of gluten, which would make it tougher. The milk solids add both flavor and smoothness of texture.
  • The baking powder lifts and aerates the dough slightly without weakening it, but it also makes it seem more tender.
  • In developing this recipe, I found that if not using the vinegar and baking powder to tenderize the crust, it is advisable to add one quarter of the butter together with the cream cheese when using all-purpose flour. This helps to moisture-proof it but, of course, takes away a little from the flakiness, as there is less butter available to add in larger pieces to create layers.

This is an older recipe from a church cookbook. It's a nice, quick cheesecake recipe....just no crust or springform pan!

  • Preheat oven to 350.
  • Grease (or spray w/ nonstick cooking spray) a 10-inch pie dish.
  • In a mixing bowl, beat together cream cheese, eggs, 1/2 cup sugar and vanilla until creamy. Pour into greased pie dish. Bake at 350 for 25 minutes. Remove from oven and cool for about 10 minutes (Don't turn off oven). In a small bowl, mix together sour cream and 3 Tbsp sugar---pour on top of pie.

1 gallon peach slices in heavy syrup (6 lbs, or light syrup)
1/4 cup sugar
2 teaspoons cinnamon
6 tablespoons minute tapioca
2 tablespoons lemon juice
6 ounces cream cheese, softened
1/2 cup butter, softened
2 tablespoons sugar
1 1/2 cups flour
1 large egg white

Steps:

  • Drain canned peaches; reserve 3/4 cup of syrup.
  • Place peaches in a large non-reactive bowl; add reserved syrup, tapioca, and lemon juice. Mash 1/3 of the peaches with a potato masher and set aside. You may also use fresh peaches (increase sugar to 1 cup),or combine with another fruit: blueberries, pineapple, or pears to make one gallon total.
  • Combine sugar and cinnamon. Add half of spice mixture to peaches and stir.
  • Stir peaches gently every 5 minutes.
  • Meanwhile, cream together cream cheese, butter,and sugar.
  • Add flour slowly mixing until the dough comes together and is well blended.
  • Pat out dough into a ball and flatten to 1 inch thick. Wrap in plastic wrap and chill 30 minutes.
  • Preheat oven to 350 degrees.
  • Roll out dough into a rectangle approximately 1 inch larger than the baking pan on a lightly floured piece of waxed paper.
  • Pour peach mixture into baking pan.
  • Place dough on top of peaches. Method 1. Gently roll dough onto rolling pin; transfer to the pan and roll dough over the top. Method 2. Pick up waxed paper with dough on it and gently put the dough side down over the pan; then peel off the waxed paper.
  • Fold edges of pastry under so pastry edges are flush against the pan.
  • Cut slashes in top of the pastry to let steam out.
  • Beat 1 large egg white until foamy; then brush lightly on pastry.
  • Sprinkle remaining cinnamon sugar blend on top of pastry.
  • Bake at 350 degrees for 1 hour or until golden brown.
  • Serve warm with vanilla ice cream.

1 quart fresh strawberries
2 tablespoons minute tapioca
1/4 cup granulated sugar
9 graham crackers, crushed
1/4 cup butter, melted
1/4 cup granulated sugar
1 (4 ounce) package cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla
1/2 pint heavy whipping cream

Steps:

  • Combine strawberries, tapioca and 1/4 cup granulated sugar in 2 quart saucepan.
  • Cook on medium heat, stirring constantly until mixture thickens.
  • Remove from heat and let cool.
  • Combine graham cracker crumbs and 1/4 cup granulated sugar.
  • Add melted butter to the cracker/sugar mixture until evenly coated.
  • Press into pie tins.
  • Bake for about 10 minutes at 350 degrees.
  • Let cool.
  • Mix cream cheese, powdered sugar and vanilla until well blended.
  • Whip cream until stiff.
  • Fold whipped cream into cream cheese mixture.
  • Pour cream cheese filling into cooled pie crusts, spreading evenly on bottoms and sides, creating a shallow depression.
  • Store in refrigerator until strawberry topping is cooled.
  • Carefully spoon strawberry topping into the depression previously made in the filling.
  • Store in refrigerator until ready to serve.

10 ounces pecan halves (2 3/4 cups), toasted
4 large eggs, lightly beaten
1 cup packed dark-brown sugar
1 cup light corn syrup
4 ounces (1 stick) unsalted butter, melted and cooled
2 tablespoons pure vanilla extract
1/2 teaspoon salt
Cream Cheese Pie Crust

Steps:

  • Preheat oven to 325 degrees. Set aside 16 pecan halves for garnish; coarsely chop remaining pecans. Stir together eggs, sugar, corn syrup, butter, vanilla, and salt in a medium bowl until well combined. Stir in chopped pecans, and pour mixture into prepared piecrust, spreading evenly. Garnish edges with remaining pecan halves.
  • Place dish on a rimmed baking sheet, and bake, rotating halfway through, until filling is just set and crust is golden brown, about 90 minutes. (Tent with foil if nuts are getting too dark.) Transfer to a wire rack, and let cool completely.

1 1/2 cups lightly packed crushed shortbread cookies with pecans (16 cookies)
3 tablespoons Gold Medal™ all-purpose flour
3 tablespoons butter or margarine, melted
1 cup sugar
3 tablespoons Gold Medal™ all-purpose flour
1 package (8 oz) cream cheese, softened
1 package (3 oz) cream cheese, softened
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3 eggs
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 tablespoon milk

Steps:

  • Heat oven to 375°F. In medium bowl, mix all crust ingredients until crumbly. Press firmly on bottom and side of ungreased 9-inch glass pie plate. Bake about 12 minutes or until light golden brown.
  • In large bowl, beat sugar, 3 tablespoons flour and both packages of cream cheese with electric mixer on low speed until smooth; reserve 1/2 cup. Add all remaining filling ingredients except milk to cream cheese mixture. Beat on medium speed, scraping bowl constantly, until smooth. Pour into crust.
  • In small bowl, mix reserved 1/2 cup cream cheese mixture and the milk. Spoon over pumpkin mixture. Cut through cream cheese and pumpkin mixtures with knife in S-shaped curves in one continuous motion. Turn pie plate one-fourth turn and repeat. Cover edge of crust with 2- to 3-inch strip of foil to prevent excessive browning.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean, removing foil for last 15 minutes of baking. Cool 30 minutes. Cover loosely and refrigerate at least 4 hours before serving. Store in refrigerator.

1 cup flour
1/2 teaspoon salt
1/3 cup vegetable shortening
1/2 cup cream cheese
2 tablespoons water

Steps:

  • Preheat the oven to 425°F if you are baking the pie shell.
  • Combine the flour and salt in a mixing bowl and stir with a fork to mix, or put into the food processor.
  • Add the shortening and cream cheese, and cut them into the flour until the mixture looks like small pebbles, it will be irregular, and some pieces will be larger than others, or process with"pulses" in a food processor.
  • Sprinkle the water evenly over the mixture, a little at a time, stirring with a fork or with"pulses" after each addition to distribute the water evenly.
  • Depending on the moisture in the cream cheese, the dough might not need all of the second tablespoon.
  • If it feels quite soft (but not sticky), and holds together in a rough ball, it is ready to roll out.
  • Shape it into a cake about 1 inch thick.
  • Dust your rolling surface and rolling pin with flour, and roll the dough into a circle about 1/2 inch thick and at least 2 inches larger than the inverted pie pan.
  • Transfer the dough to the pie pan, trim and crimp the edges, and the pie shell is ready to he filled before baking, or to be partially baked or fully baked.
  • To bake the pie shell; Prick the dough all over with a fork at 1/2-inch intervals.
  • Press a 12-inch square of heavy-duty foil snugly into the pie shell.
  • Bake for 6 minutes, then remove the foil and bake for 4 minutes more if you want a partially baked shell.
  • If the dough begins to puff or swell, push it down with the tines of a fork.
  • If you want a fully baked shell, bake for 8 to 10 minutes more, or until it is lightly browned.

3/4 cup all purpose flour
6 tablespoons firmly packed golden brown sugar
1/4 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into pieces
1 tablespoon cold water
1/2 cup finely chopped pecans
FILLING
8 ounces cream cheese, room temperature
6 tablespoons sour cream
1/2 cup sugar
2 large eggs
1 cup canned solid-pack pumpkin
3/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves

Steps:

  • For Crust: Butter 9 inch diameter tart pan with removable bottom. Blend flour, sugar, and salt in processor using on/off turns. Add butter and process until mixture resembles coarse corn meal. Add water and process just until moist clumps form. Transfer to large bowl. Add pecans and knead gently until pecans are incorporated and dough comes together. Press dough on bottom and up sides of prepared pan. Refrigerate until dough is firm, about 30 minutes. (Can be prepared 1 day ahead. Wrap tightly and keep refrigerated.) Position rack in center of oven and preheat to 375. Line crust with foil; fill with beans or pie weights. Back until crust sides are firm, about 10 minutes. Remove beans and foil and bake until crust begins to brown, about 10 minutes. Transfer crust to rack. Maintain oven temperature. For filling: Beat cream cheese and sour cream in large bowl until smooth. Gradually add sugar and beat until blended. Add eggs 1 at a time, beating just to blend after each addition. Transfer 1/3 cup cheese mixture to small bowl. Add pumpkin, cinnamon, ginger and cloves to cheese mixture in large bowl and beat until blended. Spread pumpkin filling in crust. Drop reserved 1/3 cup cheese mixture by teaspoonfuls over pumpkin filling. Using tip of small sharp knife, gently swirl cheese mixture into pumpkin mixture in decorative pattern. Bake pie until filling is firm in center, about 30 minutes. Cool pie on rack. Cover and chill. (Can be made 1 day ahead. Keep refrigerated.)

GLUTEN-FREE CREAM CHEESE PIE CRUST

1 cup rice flour (or your favorite GF flour blend)
1 teaspoon xanthan gum
1/2 teaspoon salt
8 tablespoons butter (1 stick)
3 ounces cream cheese
2 -4 tablespoons ice water

Steps:

  • Combine dry ingredients in a medium bowl.
  • Cut butter and cream cheese into flour mixture until you have pea-sized pieces or smaller. (Dough can't really be overworked since there is no gluten).
  • Sprinkle with 2 tbsp ice water and stir together with a fork until dough starts to form a ball. Use more water if needed to get dough to form. Don't let it get too wet though.
  • When ball starts to form, bring dough together with hands and knead slightly to get a uniform texture. Pat into a disk.
  • If you want to roll the crust, let the disk chill in the refrigerator at least one hour, or up to 24 hours. Roll between sheets of parchment paper to desired size. Because of the high butter content keep dough and rolling pin cold for best results.
  • You can use the dough without chilling if you want to simply press into shape. If you press it too thin or make a whole, simply patch it by pressing it back together or adding a bit more dough and pressing it inches This is what I usually do to form a bottom crust for a pie. I don't often make a top crust because I hate rolling them out and crimping them to the bottom.
  • Fill pie as desired and bake according to the directions for the type of pie you are making. You can blind bake the crust by baking at 350°F for 30-35 minutes, or until lightly browned. Let cool and fill.

This recipe was originally submitted by Mean Chef (IHHDRO), and I adopted it after he left the site. I prepared this to use with Recipe #64295. This promises us a very tender and flaky crust, and does not disappoint. Adapted from Rose Levy Bernanbaum. Prep time does not include resting dough.

6 tablespoons unsalted butter, cold
5 ounces pastry flour (1 cup plus 1 Tablespoon) or 1 cup all-purpose flour
1/8 teaspoon salt (for savory recipes use 1/4 tsp)
1/8 teaspoon baking powder
1/4 cup cream cheese, cold
1 tablespoon ice water
1 1/2 teaspoons cider vinegar

Steps:

  • FOOD PROCESSOR METHOD: Cut the butter into small (about 3/4-inch) cubes.
  • Wrap it in plastic wrap and freeze it until frozen solid, at least 30 minutes.
  • Place the flour, salt and baking powder in resealable gallon-size freezer bag and freeze for at least 30 minutes.
  • Place the flour mixture in food processor with the metal blade and process for a few seconds to combine.
  • Set the bag aside.
  • Cut the cream cheese into 3 or 4 pieces and add it to the flour.
  • Process for about 20 seconds or until the mixture resembles coarse meal.
  • Add the frozen butter cubes and pulse until none of the butter is larger than the size of a pea.
  • (Toss with a fork to see it better.) Remove the cover and add the water and vinegar.
  • Pulse until most of the butter is reduced to size of small peas.
  • The mixture will be in particles and will not hold together.
  • Spoon it into the plastic bag.
  • (For a double-crust pie, it is easiest to divide the mixture in half at this point.) Holding both ends of the bag opening with your fingers, knead the mixture by alternately pressing it, from the outside of the bag, with the knuckles and heels of your hands until the mixture holds together in one piece and feels slightly stretchy when pulled.
  • Wrap the dough with plastic wrap, flatten it into a disc (or discs), and refrigerate for at least 45 minutes, preferably overnight.
  • HAND METHOD: Place a medium mixing bowl in the freezer to chill.
  • Cut the butter into small (about 3/4-inch) cubes.
  • Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  • Place the flour, salt and baking powder in medium bowl and whisk to combine.
  • Add the cream cheese and rub the mixture between your fingers to blend the cream cheese into the flour until it resembles coarse meal.
  • Spoon the mixture, together with the cold butter, into reclosable gallon-size freezer bag.
  • Expel any air from bag and close it.
  • Use a rolling pin to flatten the butter into thin flakes.
  • Place the bag in the freezer for at least 10 minutes or until the butter is very firm.
  • Transfer mixture to the chilled bowl, scraping sides of bag.
  • Set bag aside.
  • Sprinkle mixture with water and vinegar, tossing lightly with a rubber spatula.
  • Spoon it into the plastic bag.
  • Holding both ends of the bag opening with your fingers, knead the mixture by alternately pressing it, from the outside of the bag, with knuckles and heels of your hands until mixture holds together in one piece and feels slightly stretchy when pulled.
  • Wrap the dough with plastic wrap, flatten it into a disc (or discs) and refrigerate for at least 45 minutes, preferably overnight.
  • MASCARPONE CHEESE CRUST- variation: An equal weight of mascarpone cheese can be substituted for the cream cheese, but omit the vinegar and use bleached all-purpose flour, not pastry flour, or the crust will be too tender.

3 oz pkg. cream cheese
1/3 c margarine, softened
1 c all purpose flour
1/8 tsp salt

Steps:

  • 1. Combine softened cream cheese and margarine, mixing until well blended. Add flour and salt; mix well. Form into ball; chill thoroughly. On lightly floured surface, roll out dough to 12 inch circle. Place in 9-inch pie plate. Trim and flute edge; prick bottom and sides with fork. Bake at 400^ for 15 minutes or until golden brown.
  • 2. For tart shells, divide dough into 24 balls; press into mini muffin pan. Bake at 400^ , 10-12 minutes. --- For pies that bake longer that 40 minutes, cover rims of pie with foil to prevent excess browning.

PLAN/PURCHASE
1 c flour, all-purpose variety
1 tsp salt, kosher variety, fine grain
1/4 tsp white pepper, freshly ground
1/8 tsp baking powder
8 Tbsp sweet butter, unsalted, cut into cubes, and frozen
4 oz cream cheese, cold, cut into cubes
1 Tbsp whipping cream
1 Tbsp apple cider vinegar

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. Add the flour, salt, and white pepper, and baking powder to a food processor, fitted with an S-blade, and give the ingredients several one-second pulses to combine.
  • 4. Place the butter, cream cheese, cream, and vinegar into the blender.
  • 5. Use one-second pulses to bring the ingredients together.
  • 6. Chef's Note: Do not completely blend... you should still see bits of butter, and cream cheese.
  • 7. Remove the dough from the food processor, and place on a clean work surface, lightly dusted with flour.
  • 8. Knead, once or twice, and then press, or roll into a 10-inch (25.5cm) round.
  • 9. Cover and place into the fridge for up to two days, or freeze for up to several months.
  • 10. PLATE/PRESENT
  • 11. Blind bake the pie dough in a preheated 350f (175c) oven for about 10 minutes, and begins to brown. Remove and fill with your favorite savory pie ingredients. Enjoy.
  • 12. Keep the faith, and keep cooking.

12 tbsp. unsalted butter (6oz)
2 cups flour
1/4 tsp. salt
1/4 tsp. baking powder
1/2 cup cream cheese (4.5 oz)
2 tbsp. ice water
1 tbsp. cider vinegar

Steps:

  • 1. Cut butter into small cubes and freeze for 30 minutes. 2. Put dry ingredients in a ziploc bag and freeze for 30 min. 3. Add dry ingredients to a food processor and mix with the metal blade. 4. Break the cream cheese into a few pieces and add to the flour in a few pieces. Process until fully incorporated--should be of a sandy consistency. 5. Add the frozen butter and pulse until fully incorporated--should be of a coarser sandy consistency. 6. Add water and vinegar and process until the dough comes together. 7. Put in a ziploc bag and knead until dough has an elastic quality. Separate dough for pies and refrigerate for 45 minutes before using. Dough can also be frozen until needed. 8. Roll dough out between two pieces of floured plastic wrap.
