For a deluxe side dish that's easy yet has big impact, I whip up this recipe. It features corn and peppers in a comforting cream cheese sauce.

- In a saucepan over medium heat, saute peppers and onions in butter until tender. Add cream cheese, milk, salt, pepper and dill. Cook and stir over low heat until cheese is melted. Add corn; heat through.

HOT CREAM CHEESE-CORN CASSEROLE
This cream cheese-corn casserole is a Thanksgiving classic at our house. Since we like it spicy, I add jalapeno peppers.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
- Combine cream cheese and butter in a microwave-safe bowl and heat until melted, 1 to 2 minutes. Pour into a large skillet and add milk and flour. Cook, stirring occasionally, over medium heat until mixture thickens, 3 to 5 minutes.
- Combine corn and jalapeno peppers in a bowl; add to cream cheese sauce. Season with salt and mix well. Pour into the prepared casserole dish.
- Bake in the preheated oven until lightly browned, about 30 minutes.

CREAM CHEESE CORN AND PEPPERS
Steps:
- Melt butter in a pan. Add bell peppers and sautee for a few minutes. Add cream cheese. Drain the corn but reserve 1/2 can of juice. Once the cream cheese has melted, add the corn and reserved juice. Cover and slowly simmer on medium - low heat until heated through.

- DO NOT OVER COOK.
- Drain corn, place back in pan.
- Add butter and cream cheese.

- Pour into serving bowl and sprinkle slight amount of parsley for color.
