For a deluxe side dish that's easy yet has big impact, I whip up this recipe. It features corn and peppers in a comforting cream cheese sauce.

1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
2 green onions, thinly sliced
2 tablespoons butter
1 package (8 ounces) cream cheese, cubed
2/3 cup milk
3/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon dill weed
1 package (16 ounces) frozen corn, thawed

Steps:

  • In a saucepan over medium heat, saute peppers and onions in butter until tender. Add cream cheese, milk, salt, pepper and dill. Cook and stir over low heat until cheese is melted. Add corn; heat through.

This cream cheese-corn casserole is a Thanksgiving classic at our house. Since we like it spicy, I add jalapeno peppers.

2 (8 ounce) packages cream cheese, softened
1 stick butter
1 cup milk
4 tablespoons all-purpose flour
3 (15.25 ounce) cans whole kernel corn, drained
3 canned jalapeno peppers, chopped, or to taste
salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Combine cream cheese and butter in a microwave-safe bowl and heat until melted, 1 to 2 minutes. Pour into a large skillet and add milk and flour. Cook, stirring occasionally, over medium heat until mixture thickens, 3 to 5 minutes.
  • Combine corn and jalapeno peppers in a bowl; add to cream cheese sauce. Season with salt and mix well. Pour into the prepared casserole dish.
  • Bake in the preheated oven until lightly browned, about 30 minutes.

2 cans corn
1/2 stick butter
4 oz. pkg. cream cheese or Neufchatel cheese (may increase up to 8 oz. if desired)
1/2 green bell pepper
1/2 red bell pepper

Steps:

  • Melt butter in a pan. Add bell peppers and sautee for a few minutes. Add cream cheese. Drain the corn but reserve 1/2 can of juice. Once the cream cheese has melted, add the corn and reserved juice. Cover and slowly simmer on medium - low heat until heated through.

8 ounces cream cheese, cut in chunks
1/4 teaspoon salt
1/8 teaspoon pepper
parsley

Steps:

  • In medium saucepan, warm corn slightly covered in water to about room temperature.
  • DO NOT OVER COOK.
  • Drain corn, place back in pan.
  • Add butter and cream cheese.
  • Cook, stirring over medium heat only until melted, add salt and pepper.
  • Pour into serving bowl and sprinkle slight amount of parsley for color.
