1 box cake mix, any flavor (15.25 oz)
8 oz cream cheese, room temperature
1/4 c butter, room temperature
1 large egg
1 tsp vanilla (optional, depending on flavor)
1 c any add-ins (flavored chips, candy, nuts, etc) amounts can be varied. For chocolate chip I added a 12 oz bag of semi-sweet chips

Steps:

  • 1. Preheat oven to 375 degrees. Cream together butter and cream cheese. (I used a mixer for this part only.)
  • 2. Add egg and vanilla; mix until well blended.
  • 3. Stir in cake mix a little at a time.
  • 4. Continue until it's all blended.
  • 5. Then add any chips, candy, or nuts, as you like.
  • 6. Spoon onto cookie sheer and bake for 10 minutes, until edges are brown.

Strawberry Cake Mix Cookies with Vanilla Cream Cheese Frosting Recipe - (4.5/5) image

COOKIES:
1/4 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1 cup + 1/8 cup strawberry cake mix (about half of an 18.25-ounce box)
FROSTING:
1/4 cup unsalted butter, softened
1/4 cup cream cheese, softened
1 teaspoon vanilla extract
2 to 4 cups confectioners' sugar

Steps:

  • COOKIES: Preheat oven to 350°F. In a mixing bowl combine the softened butter, egg, vanilla and stir by hand or with a mixer until combined. Add the cake mix and stir until smooth. If the dough seems too wet to be cookie dough, add a bit more cake mix, one tablespoon at a time, until it's less wet. Conversely, if the dough seems dry and it's not combining, add a tablespoon or two of water. If time permits, I recommend chilling the dough by placing the mixing bowl in the freezer for 15 to 20 minutes. Chilled dough spreads less during the baking process. Form 1 inch balls on a Silpat-lined, parchment paper-lined, or cookie sheet that has been sprayed with cooking spray. Allow for adequate spacing because they do spread; which is why I recommend chilling the dough and do not exceed 1 rounded tablespoon-sized or 1 inch sized balls (I only placed 9 cookies on one cookie sheet and do not recommend trying to fit the batch on one cookie sheet). Bake at 350°F for 8 to 10 minutes or until cookies are barely browned. They make look a bit loose and jiggly after only 8 to 10 minutes but they will continue to cook on the sheets after you remove the from the oven and will firm up as they cool. Do not overbake. Allow the cookies to cool well (on the cookie sheets is fine) before attempting to move them. While the cookies are baking, make the frosting. FROSTING: In a large mixing bowl, beat together the butter and cream cheese with an electric mixer or whisk by hand. Add the vanilla extract and add two cups of powdered sugar and mix until smooth. If you like thick(er) frosting, add more powdered sugar until desired consistency is reached. I used nearly 4 cups of powdered sugar in mine because I like very thick frosting (shown in the photos). After the cookies have cooled, frost them (I applied a thick layer). Finish with sprinkles, sanding sugar, or other garnishes such as coconut flakes or chocolate shavings, as desired. Optionally, make sandwich cookies. Because these cookies are frosted with cream cheese frosting, you may want store them in the refrigerator if they're going to be out more than a day or so.

I came up with these after seeing a recipe for Devils Food Cream Cheese Cookies. My mom does not care for chocolate, so I decided to try using a Butter Pecan cake mix instead. They were a hit. Very soft and chewy. I hope you enjoy them!

1/4 cup softened butter or 1/4 cup margarine
1 (8 ounce) package cream cheese, softened
1 egg
1/4 teaspoon maple flavoring or 1/4 teaspoon vanilla flavoring
1 (18 ounce) box butter pecan cake mix (2 layer)

Steps:

  • Preheat oven to 375 degrees.
  • Cream butter and cream cheese together.
  • Blend in egg and maple flavoring.
  • Add dry cake mix 1/3 at a time, mix well after each addition.
  • Chill for 30 minutes.
  • Drop by spoonful on an ungreased cookie sheet and bake for 8-10 minutes or until just lightly browned.

8 ounces cream cheese, softened
1/2 cup butter, softened
1 egg
3 Tablespoons lemon juice
1 Tablespoon lemon zest
1 15 ounce box white cake mix

Steps:

  • Preheat oven to 350°. Prepare baking tray lining with parchment paper or silicone baking mat. Set aside.
  • In a mixing bowl combine softened cream cheese and butter. Beat until fluffy using an electric mixer.
  • Add in the egg, beating until combined. Add in the lemon juice and lemon zest, mix until incorporated.
  • Add in the white cake mix, mix until combined.
  • Using a cookie scoop, scoop onto the prepared baking tray.
  • Bake approximately 9-11 minutes, just until the edges are firm. The cookies may appear underbaked, which is simply due to the texture.
  • Remove from oven and allow to cool completely on the baking pan prior to storing or serving.

Oh my gosh, these are good and so easy. Use your imagination. I stumbled upon this recipe after realizing just how many cake mixes I had in my pantry. I love the flavor the cream cheese gives it. I'm a chocolate chip fiend, so I used a Duncan Hines French Vanilla cake mix and a small package of chocolate chips. Comments from the Test Kitchen: Deliciously sweet and buttery! We used a butter cake mix and added chocolate chips. This, along with the cream cheese, turned these cookies into the ultimate sweet treat. Seriously good!
