3 cups (375g) all-purpose flour
2 cups (400g) packed brown sugar
½ teaspoon baking powder
½ teaspoon baking soda
2 teaspoons ground cinnamon
1½ cups (3 sticks or 340g) butter, (melted)
2 packages (16 ounces) cream cheese, (room temperature)
½ cup (100g) granulated sugar
1 teaspoon vanilla extract
2 large eggs, (room temperature)
4 large Granny Smith apples, (peeled, cored, and thinly sliced)
2 tablespoons all-purpose flour
2 tablespoons brown sugar
1 teaspoon cinnamon
Caramel topping, (for garnish)

Apple Butter Cream Cheese Oat Bars feature layer upon layer of deliciousness, from the nutty oat crust to the spiced apple butter to the sweet cream cheese.

16 ounces (454g) cream cheese, at room temperature
3/4 cup (150g) granulated sugar
2 large eggs
1 tablespoon fresh lemon juice
2 teaspoons vanilla extract
2 cups apple butter*
2 cups (240g) all-purpose flour
2 cups (198g) quick-cooking oats
2 cups (about 120g) chopped nuts, such as cashews or pecans
1 cup (200g) granulated sugar
1/2 teaspoon baking soda
1 cup (226g) unsalted butter, melted and slightly cooled

Steps:

  • Preheat oven to 350°F. Grease a 9″x 13″x 2″ baking pan.
  • Combine the flour, oats, nuts, 1 cup sugar, and baking soda in a large bowl.
  • Stir in the melted butter. Reserve 1 & 1/2 cups of mixture for the topping.
  • Press the remaining mixture into the bottom of the prepared pan.
  • Bake for 12-15 minutes or until lightly browned.
  • Set the pan on a wire rack to cool.
  • Using an electric mixer on medium speed, beat the cream cheese and 3/4 cup sugar until creamy. Add the eggs, one at a time, beating well after each addition. Add the lemon juice and vanilla extract, mixing until combined.
  • Spread the apple butter over the cooled crust. Spread the cream cheese mixture over the apple butter. Top with the reserved oat mixture.
  • Bake 35-40 minutes or until the cream cheese layer is set. Cool completely before cutting into bars. Refrigerate at least 2 hours before serving.

Butter, water and egg called for on cookie mix pouch
5 cups coarsely chopped, peeled Granny Smith apples (5 medium)
1/2 cup sugar
3 tablespoons Gold Medal™ all-purpose flour
1 pouch (17.5 oz each) Betty Crocker™ oatmeal cookie mix
1/2 cup cold butter
4 oz (from 8-oz package) cold cream cheese

Steps:

  • Heat oven to 375°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, mix Crust ingredients with spoon until soft dough forms. Pat in bottom of pan. Bake 12 to 15 minutes or until golden brown. In medium bowl, toss Filling ingredients. Spread on baked crust.
  • In medium bowl, place remaining cookie mix pouch. Cut in cold butter and cream cheese, using pastry blender or fork, until mixture is crumbly (do not overmix). Sprinkle over apples. Bake 32 to 37 minutes or until topping is golden brown and apples are tender when poked with tip of sharp knife. Remove from oven to cooling rack. Cool completely, about 2 hours. Cut into 4 rows by 3 rows.

1/2 cup brown sugar
1/4 cup granulated sugar
3/4 cup butter

1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 cup granny smith apple, peeled and chopped
2 tablespoons granulated sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice

Steps:

  • Preheat oven to 350 degrees and grease a 9x13 pan.
  • Combind topping and crust ingredients.
  • Press all but one cup of mixture into pan.
  • Bake 12 to 15 minutes until crust is set (it will not be brown) and cool.
  • With a mixer, beat cream cheese and sugar together in a bowl until smooth (note: if your cream cheese just came out of the refrigerator, you can microwave it on the defrost setting for a couple of minutes so that it's a little less difficult to beat with the mixer) Beat in eggs and vanilla.

1/2 cup firm butter or margarine
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon vanilla
1 egg
1 can (21 oz) apple pie filling
1/2 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.
