Number Of Ingredients 10

1/2 cup crab claw meat, bits removed
2 cups boiled crawfish tails
1/2 pound boiled, peeled shrimp
2 large celery stalks, sliced (about 1 cup)
1/4 cup green bell pepper
3/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup mayonnaise
3 tablespoons lemon juice
Pinch of cayenne pepper

Steps:

  • Mix everything together in a bowl and then refrigerate until you are ready to serve. It's really that easy. (I like to mix the mayo and lemon juice together before stirring it into the rest of the ingredients.)
  • Do Ahead: Will keep in an airtight container for up to three days before getting funky.

3 eggs, hard boiled
1 tablespoon Durkee's sauce
1 lb crawfish, Chopped or 1 lb shrimp
2 tablespoons mayonnaise
salt
2 tablespoons dill pickles, finely chopped
1 teaspoon red cayenne pepper
1 teaspoon Grey Poupon

Steps:

  • To cook crawfish:
  • In a saucepan bring 2 quarts water to boil with 2 tsp salt and 1/2 tsp of red pepper.
  • Add peeled crawfish tails to water.
  • Bring to boil and remove from heat immediately.
  • Drain and cool.
  • Chop hard-boiled eggs.
  • Chop crawfish and mix with eggs.
  • Add pickles.
  • Mix mustard, Durkee's, and mayonnaise and add to egg mixture.
  • If needed, add more pepper and salt.

2 tablespoons margarine
1 tablespoon garlic, minced
1 bunch green onion, Chopped
2 lbs crawfish, cooked how you liked it
1 tablespoon liquid smoke
2 tablespoons Worcestershire sauce
2 lbs bacon, fried and crumbled
5 lbs red potatoes, boiled in skins and Roughly chopped
1 1/4 cups mayonnaise
12 hard-boiled eggs, separated whites chopped
1 cup creole mustard
1/2 cup yellow mustard
2 tablespoons hot sauce
salt
pepper

Steps:

  • In medium-size skillet, melt margarine over medium heat.
  • Add garlic and shallots and cook until wilted. Add craw fish tails, liquid smoke and Worcestershire sauce.
  • Cook for 15 minutes and cool.
  • Add bacon and set aside.
  • Mix potatoes, mayonnaise and egg whites in a Large Bowl bowl.
  • In a separate bowl, mash egg yolks and mix with mustards and Hot Sauce.
  • Combine mustard mixture and potatoes. Stir in craw fish.
  • Salt and pepper to taste.

I was going to cook up some traditional Cajun maquechoux one night, but instead decided to use its typical ingredients as the basis for a salad. It's a refreshing change from the usual corn preparations, and shrimp could be used in place of the crawfish but I don't believe it has quite the same flavor. Prep time includes allowing dressing to sit for awhile.

1 (29 ounce) can whole kernel corn, drained
8 ounces cooked crawfish tail meat
1 stalk celery, chopped
3 plum tomatoes, seeded and chopped
1/2 green bell pepper, chopped
2 green onions, sliced
1/2 cup olive oil
6 tablespoons sugar
4 tablespoons cider vinegar
1 1/2 teaspoons salt
3/4 teaspoon coarse-grind black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder

Steps:

  • In a large bowl, combine corn, crawfish tail meat, celery, tomatoes, bell pepper and onions.
  • In a smaller bowl, whisk together the olive oil, sugar, cider vinegar, salt, peppers and garlic powder.
  • Let sit at least 30 minutes so sugar dissolves completely.

1 bag corkscrew pasta
1 lb crawfish tails
2 tbs oregano
1 tbs liquid crab boil
1 cup shredded parmesan cheese
1 small bottle cardinis Cesar salad dressing
1/8 cup lemon juice
Spring Mix or field greens Lettuce
toasted pine nuts

Steps:

  • Toasted pine nuts Spray pan with Pam, sprinkle salt on nuts, toast at 300 for 5 minutes (be very careful, they burn easily) Boil pasta with Oregano & crab boil to directions on package 1 - minute less than al dente directions, put in crawfish. Cook for 2-3 more minutes. Drain & cool Pasta/Crawfish, this can take a long time Add dressing and cheese. Up to this part can be done night before Right before serving, add lettuce and pine nuts.

1 avacodo
1 bunch green onion
Fresh parsley
2 tbs Heinz chili sauce
2 tbs real mayonaise

  • Cook and peel crawfish. shred lettuce, chop approx 1-2 tbs parsley, several green onoins to preference, chop cheese to small cubes. slice avacodo to thin strips. mix all ingredients in large bowl(Do not add avacodo or crab meat until other ingredients are mixed well) Then lightly stir in avacod and meat.

1/3 cup(s) red wine vinegar
1 1/2 pint(s) crawfish tails, cooked and shelled
DRESSING INGREDIENTS
1 cup(s) half & half
2 1/2 cup(s) olive oil mayonnaise
1 tablespoon(s) brown sugar-more if you wish
1 tablespoon(s) mr. pete's cajun spice
1 small sweet onion, chopped
1 1/2 tablespoon(s) chives, chopped
2 - carrots, chopped
2 - celery ribs, chopped
- zest of 1 lemon
- salt & pepper to taste

Steps:

  • Combine cooked macaroni and vinegar in a large mixing bowl. Mix well.
  • Combine dressing ingredients in a medium size mixing bowl. Whisk thoroughly.
  • Add dressing to macaroni a mix well. Fold in ¾ crawfish tails "reserve ¼ for topping right before serving". Chill in fridge until ready to serve.

3-4 drops hot sauce
mix together & soak crawfish in for 10 min's
1/2 cup flour
cayenne
mix together dipped crawfish dredged in and put in oil

Steps:

  • vegetable oil 360 degrees for frying crawfish mixed greens etc, mix w/oil & vinagar dressing top w/crawfish
