1/4 cup olive oil
1 pound fresh Brussels sprouts, trimmed and halved lengthwise
1/2 cup dried cranberries
2 tablespoons water
1/3 cup chopped walnuts
2 tablespoons balsamic vinegar

Steps:

  • In a large skillet, heat oil over medium heat. Place Brussels sprouts in pan, cut side down; cook 4-5 minutes or until bottoms are browned., Add cranberries and water; cook, covered, until Brussels sprouts are crisp-tender, 1-2 minutes. Stir in walnuts; cook and stir until water is evaporated. Stir in vinegar.

1 pound Brussels sprouts, trimmed and halved
2 tablespoons olive oil
1 tablespoon minced fresh thyme
salt and ground black pepper to taste
1 cup fresh cranberries
2 tablespoons pure maple syrup

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place Brussels sprouts in a bowl and toss with olive oil, thyme, salt, and pepper.
  • Spread out evenly on the baking sheet and roast for 10 minutes. Stir in cranberries. Continue roasting for 10 minutes.

3 pounds Brussels sprouts
1/2 cup olive oil
1 cup sugar
3/4 cup balsamic vinegar
1 cup dried cranberries

Steps:

  • Preheat the oven to 375 degrees F.
  • Trim/clean the Brussels sprouts, then cut them in half. Arrange on 2 baking sheets and toss with the olive oil. Roast until brown, 25 to 30 minutes.
  • Combine the balsamic vinegar and sugar in a saucepan. Bring to a boil, then reduce the heat to medium-low and reduce until very thick.
  • Drizzle the balsamic reduction over the roasted sprouts, then sprinkle on the dried cranberries.
