Steps:
- In a medium pot, combine the cranberries, sugar and water. Stir to blend. Bring the mixture to a boil over medium heat. Reduce to a simmer and add the cinnamon stick, allspice and nutmeg. Stir to blend and simmer for an additional 5 to 7 minutes. Some of the cranberries will burst and some will remain whole. Add the orange juice and zest, stir and allow to cool before serving.

MAKE-AHEAD CRANBERRY SAUCE
Steps:
- Cook the cranberries, sugar, and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open. Add the apple, zests, and juices and cook for 15 more minutes. Remove from the heat, let cool, and serve chilled.

- In a medium saucepan, boil water and sugar until the sugar dissolves. - In a saucepan, combine cranberries, sugar, orange zest and juice, cinnamon, 1/4 teaspoon salt, and 1/4 cup water. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries burst and mixture thickens slightly, 12 to 15 minutes. (Sauce will thicken more as it cools.) Remove from heat; let cool completely. Refrigerate in an airtight container up to 1 week.

I use either Grand Marnier or Cointreu in this recipe. The additions of liqueur and orange zest make this cranberry sauce a holiday favorite at our house.

- Combine sugar and water in a medium saucepan.
- Bring to a boil; add cranberries, return to a boil.
- Reduce heat and boil gently for 10 minutes, stirring occasionally.
- Remove from heat. Add orange zest and Cointreau (or Grand Marnier) and stir.
- Let cool at room temperature.
- Refrigerate until cold, or serve at room temperature.
