I was delighted when she would ask me to help grind the cranberries in her old food grinder...I could go on turning its crank forever. How I loved hearing the cranberries pop as they passed through!"

8 cups fresh cranberries
2-1/2 cups sugar
2 tablespoons unflavored gelatin
1/3 cup orange juice
2 cups diced apples
1 cup chopped nuts
Leaf lettuce and mayonnaise for garnish

Steps:

  • Finely grind the cranberries in a food chopper. Add sugar and mix thoroughly. Let stand 15 minutes, stirring occasionally. (If using frozen berries, let them stand until the mixture is at room temperature.) Place the gelatin and orange juice in the top of a double boiler; stir over hot water until gelatin is dissolved. Add to cranberries along with apples and nuts; place in a 7-cup mold that has been rinsed in cold water. Chill until set. Unmold onto leaf lettuce. Garnish with mayonnaise.

2 packages (3 ounces each) cranberry gelatin
3 cups boiling water
1 cup cranberry juice
6 ounces cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed
1 cup chopped walnuts
1 cup chopped celery
1 cup chopped fresh or frozen cranberries

Steps:

  • In a large bowl, dissolve the gelatin in boiling water; stir in cranberry juice. Refrigerate until slightly thickened. In a small bowl, beat cream cheese until smooth. Add the whipped topping until blended. Fold into the gelatin mixture. Fold in walnuts, celery and cranberries., Pour into a 3-qt. ring mold coated with cooking spray. Refrigerate until set. Unmold onto a serving plate.

1 package (12 ounces) cranberries
3/4 cup plus 2 tablespoons sugar, divided
1-1/2 cups water, divided
3/4 cup pineapple tidbits, drained
1 medium tart apple, peeled and diced
1/4 cup chopped walnuts
1 envelope unflavored gelatin
1/4 teaspoon salt
1/2 cup mayonnaise
2 tablespoons lemon juice
1 teaspoon grated lemon zest

Steps:

  • In a saucepan, combine the cranberries, 3/4 cup sugar and 1/2 cup water. Bring to a boil; boil for 3-4 minutes or until berries pop. Remove from the heat; stir in pineapple, apple and nuts. Chill until cooled. , Place gelatin and remaining water in another saucepan; let stand for 1 minute. Add salt and remaining sugar; cook and stir over low heat until dissolved. Remove from the heat; stir in the mayonnaise, lemon juice and zest. , Transfer to a bowl; chill until partially set, about 1 hour. Beat until fluffy. Fold in cranberry mixture. Pour into a 6-cup mold coated with cooking spray. Chill until firm, about 8 hours.

1 (3 ounce) package cranberry Jell-O gelatin or 1 (3 ounce) package sugar-free cherry gelatin
1 cup boiling water
1 cup diced celery
1 (7 1/4 ounce) can crushed pineapple, in juice
1/2 cup chopped walnuts

Steps:

  • Bring cranberries and 1 cup water to a boil.
  • Remove from heat when cranberries have popped open.
  • Add splenda and stir, set aside to cool.
  • Dissolve gelatin with 1 cup boiling water.
  • Add cranberry sauce; mix thoroughly.
  • Add celery, pineapple and walnuts.
  • Pour into mold or bowl.
  • Place in refrigerator until set.

1 (6-ounce) package strawberry-flavored gelatin
1 cup boiling water
1 (20-ounce) can crushed pineapple
1 (16-ounce) can whole cranberry sauce
3 tablespoons lemon juice
1 teaspoon grated lemon peel
1/4 teaspoon nutmeg
2 cups sour cream
1/2 cup pecans

Steps:

  • 1. In a large bowl, dissolve the gelatin in the boiling water. Set aside. 2. Drain the can of crushed pineapple in a sieve over a bowl, saving the juice. Set aside the crushed pineapple and add all the pineapple juice to the gelatin. 3. Stir in the whole cranberry sauce, lemon juice, lemon peel, and nutmeg. 4. Chill in the refrigerator uncovered for about 1 and 1/2 hours, or until the mixture thickens. 5. With a rubber spatula, fold in the sour cream, crushed pineapple, and pecans. 6. Pour the mixture into a glass serving bowl or a greased or sprayed 9-cup mold. 7. Chill in the refrigerator until set, at least 2 hours.
