1 package (1.9 oz) frozen mini phyllo shells (15 shells)
1/4 cup chopped dried cranberries
3/4 cup finely chopped cooked chicken breast
1 container (6 oz) Greek Fat Free plain yogurt
1 tablespoon fresh lemon juice
3 tablespoons chopped walnuts, toasted
2 green onions, chopped (2 medium)
1 teaspoon chopped fresh rosemary leaves
1/2 teaspoon salt

Steps:

  • Thaw phyllo shells as directed on package.
  • In medium bowl, mix 2 tablespoons of the cranberries and the remaining ingredients.
  • Spoon generous teaspoonfuls mixture into shells. Garnish with remaining 2 tablespoons cranberries and, if desired, rosemary sprigs.

2 pounds boneless chicken breasts (either four 8-ounce breasts or two 1-pound breasts)
7 tablespoons butter, divided
1 cup onions, diced fine
½ cup celery, diced fine
1 tablespoon garlic, minced
½ cup dried cranberries
½ teaspoon celery salt
½ teaspoon freshly ground black pepper
½ teaspoon poultry seasoning
1 cup chick stock, divided
½ cup heavy cream, divided
3 slices white or wheat bread, no crusts
2 tablespoons whole berry cranberry sauce
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 ½ tablespoons flour
Pan liquid after cooking chicken
½ teaspoon gravy browning & seasoning sauce such as Kitchen Bouquet or Gravy Master
2 tablespoons whole berry cranberry sauce
Salt and pepper, as needed
Prepared Cranberry Rice Pilaf, for serving

Steps:

  • If using two one-pound breasts, butterfly the breast open then pound to ¼ inch thick. Once pounded, cut into two equal pieces. Repeat for second breast yielding four pieces.
  • If using 8-ounce breasts, pound each to ¼ inch. The pounded-out breasts should be about eight inches long and six or seven inches wide.
  • Keep refrigerated until later.
  • In a large saute pan or skillet, melt 4 tablespoons of butter over medium heat and once melted and frothy, add onions, celery, garlic and dried cranberries and saute for five minutes. Add celery salt, pepper and poultry seasoning and stir.
  • Add half of the stock and half of the cream and once hot, reduce to low and add bread and cranberry sauce and stir and mix to break up the bread and melt the cranberry sauce.
  • Mixture should be soft and spreadable. If not, add more bread or stock to get correct consistency.
  • Taste and season more if needed.
  • Pour out onto a large dish and refrigerate to cool.
  • Wash and dry the pan out and set back on the stove for later.
  • Preheat the oven to 350 degrees F.
  • Once the filling is cool, lay out one pounded breast and run one quarter of the filling from one end to the other, keeping an inch free along one outer long edge. *
  • Start with the free edge away from you and roll the chicken over the filling and end on the free edge.
  • Repeat for the remaining filling and chicken.
  • Turn each over one at a time and using toothpicks, close the seam by piercing through one side to the other. I ran 8-10 toothpicks through each roll.
  • In the large skillet over medium heat, add the remaining 3 tablespoons of butter along with the two tablespoons of olive oil.
  • Once hot, add chicken seam side down and brown. Using a long spatula, like a fish turner, flip each roll over and brown the other side. I cooked mine for about three minutes per side.
  • Add remaining stock and cream into the pan and over the chicken, cover and place in the preheated oven for five minutes. Remove cover and cook five more minutes then remove.
  • While chicken is cooking, melt butter in a small sauce pan over medium heat and once melted, add flour and cook over low for about three minutes stirring with a wooden spoon. The mixture should be slightly tan in color and no longer smell like raw flour. Set this aside off heat.
  • Once the chicken is out of the oven, transfer to a clean cutting board and pour all liquid (and any stuffing pieces that fell out) into the pan with the butter flour mixture, whisking vigorously. Return heat to medium heat and add gravy color and cranberry sauce and whisk again. Taste and only add salt and pepper if needed.
  • Slice the chicken rolls into thick slices and serve with the sauce over our Cranberry Rice Pilaf.

PECAN-STUFFED CHICKEN BREAST

2 tablespoons olive oil, plus for drizzling
4 boneless skinless chicken breast halves (6 to 7 ounces each), butterflied
1 tablespoon molasses, mixed with 2 teaspoons hot water
1 teaspoon ground fennel
Salt and fresh ground pepper
1 medium onion, diced
2 cloves garlic, chopped
1 cup pecans, toasted, roughly chopped
2 tablespoons chopped fresh tarragon
3 tablespoons vegetable or canola oil
1 cup white wine
1 cup chicken broth
Half 15-ounce can crushed tomatoes
1/4 teaspoon crushed red pepper

Steps:

  • Lay out a 15-inch-long piece of plastic wrap on a cutting board and drizzle it with a little olive oil. Lay a butterflied chicken breast, cut side up, on the plastic wrap. Fold the plastic wrap over to cover. Using a meat pounder, pound out the thicker parts of the breast so that it's uniformly thick. Fold the plastic wrap open and brush the chicken breast with the molasses; season with generous pinches of fennel, salt and pepper. (This will be the inside part of the breast that gets stuffed.) Fold the plastic wrap back over and flip the breast over. Fold plastic wrap open and season the other side of the breast with salt and pepper. (This is the outside that will later get seared in the pan.) Re-cover with the plastic wrap and place on a plate. Repeat this process with the remaining chicken breasts. Refrigerate for 1 hour or up to overnight.
  • Heat the 2 tablespoons olive oil in a large skillet over medium heat. Add the onions, season with salt and pepper, and saute until soft and translucent, about 5 minutes. Add the garlic and pecans, and cook another 2 minutes. Add the tarragon and cook another minute. Taste and adjust the seasoning if necessary. Remove from heat and let cool to room temperature.
  • Remove a butterflied breast from the plastic wrap. Place it on a cutting board, molasses-side up. Place 1/4 cup of the filling on half of the chicken breast. Fold over the other half to enclose the filling. Using a bamboo skewer, close up the opening by threading the skewer through one end of the opening to the other to secure. Repeat with the remaining chicken breasts and filling.
  • Heat the canola oil in a large skillet over medium-high heat. Add the stuffed chicken breasts and cook for about 3 minutes per side, until nicely browned. Add the wine, chicken broth and crushed tomatoes. Turn down the heat to low, cover, and poach until the chicken is cooked through, another 8 minutes.
  • Transfer the chicken to a plate, remove the skewers, cover the chicken with foil and let rest for 5 minutes. While chicken is resting, turn up the heat on the poaching liquid to medium, add the crushed red pepper, and let simmer until thickened and reduced by a third, about 5 minutes. Taste and adjust the seasoning if necessary. Strain the sauce into a small pot and keep warm over low heat until ready to serve.
  • To serve: Slice the chicken, if desired, and arrange on a serving platter. Pour some sauce over the top. Serve immediately, with extra sauce on the side.

Sunny's Easy Cheese and Cranberry Stuffed Chicken with Cranberry Glaze image

4 ounces goat cheese, at room temperature
4 ounces Italian blend shredded cheese
1/2 cup dried cranberries
1 tablespoon Italian seasoning
Kosher salt and freshly ground black pepper
4 chicken breasts, at ROOM TEMPERATURE!
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 1/2 cups chicken stock
1/2 cup dried cranberries
1/4 cup honey
1 teaspoon Italian seasoning
Kosher salt and freshly ground black pepper

Steps:

  • Make and freeze the stuffing: Mash together the goat cheese, shredded cheese, cranberries, Italian seasoning and salt and pepper to taste in a bowl with a fork. (You can use your hands to mix it really well.) Taste a 'lil bit and add a pinch of salt if needed. Divide the cheese mixture into four sections and shape into torpedo-like logs a bit shorter than the length of the chicken breasts. Wrap each in plastic wrap. Freeze until firm, at least 1 hour or up to overnight.
  • Prepare the chicken: Use a paring knife to cut a pocket into the short, fat end of a chicken breast, that will run through much of the length of the breast, without cutting all the way through. It may take a few strokes with the knife. Repeat with the remaining chicken breasts. Remove the stuffing from the freezer and insert one log in each pocket. If necessary, trim the logs to fit into the pockets. Secure the openings with toothpicks.
  • Season and grill the chicken: Preheat the grill for direct and indirect grilling at 350 degrees F and oil the grates.
  • Brush olive oil on the chicken and sprinkle on all sides with salt and pepper. Place the chicken over the direct heat of the grill and cook until a peek beneath reveals grill marks, 5 to 7 minutes. Flip and place over the indirect heat of the grill to finish. Remove when a check with a thermometer shows the chicken to be at around 155 degrees F, 20 to 25 minutes. Remove the chicken from the grill and tent with aluminum foil for 5 to 10 minutes. The temperature of the chicken should increase to 165 degrees F.
  • Make the glaze: Combine the chicken stock, cranberries, honey, Italian seasoning and salt and pepper to taste in a small saucepan over medium-high heat. Cook, stirring, until reduced and slightly thickened, about 15 minutes.
  • Remove the toothpicks from the chicken, transfer to plates, and serve each with a spoon of glaze over the top.

CRANBERRY-BRIE PHYLLO TRIANGLES

1 package (16 ounces, 18-inches x 14-inches sheet size) frozen phyllo dough, thawed
1 to 1-1/2 cups cranberry-orange sauce or whole-berry cranberry sauce
8 ounces Brie cheese, rind removed, cubed

Steps:

  • Cut phyllo sheets lengthwise into 2-in. strips; cut each strip in half widthwise. Using five strips at a time, brush each strip with butter and stack on top of one another. (Keep remaining phyllo covered with waxed paper to avoid drying out.) Place 1 teaspoon cranberry sauce and one to two cheese cubes at the end of each stack. Fold into a triangle as you would fold a flag., Place in an ungreased 15x10x1-in. baking pan; brush with butter. Bake at 400° for 10 minutes or until golden brown. Let stand for 5 minutes before serving.

1/3 cup pecans
1/3 cup sugar
three 17-by-12 phyllo sheets, thawed if frozen, stacked between 2 sheets of waxed paper and covered with a towel
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 350°F.
  • In a food processor grind pecans with sugar until finely chopped. In a piece of parchment paper on a work surface arrange 1 phyllo sheet and brush with some butter. Sprinkle phyllo sheet evenly with half of pecan sugar and top with a second phyllo sheet, some butter, remaining pecan sugar, and remaining phyllo sheet, pressing down gently with your fingers and brushing with some butter. Slide a baking sheet under parchment and chill phyllo 10 minutes.
  • Transfer phyllo with parchment to a cutting board and with sharp knife cut stack lengthwise into 2-inch-wide strips, cutting through parchment and discarding excess. Cut each rectangle diagonally in half and transfer triangles on parchment to baking sheet, separating triangles slightly. Cover triangles directly with another parchment sheet and bake in lower third of oven 15 minutes, or until golden. Cool crisps on baking sheet on a rack. Crisps keep in an airtight container at room temperature 1 week.

CHICKEN STUFFED WITH CRANBERRIES AND PECANS

This is originally from www.TheSimpleSkillet.com. They used pine nuts, but we didn't have any - so we used toasted pecans. Wow! I wouldn't try pine nuts - the toasted pecans were a perfect complement. This made 6 servings for us, but I can see it only making 4 if you have children in the house.

1 1/2 lbs boneless skinless chicken breasts
1/3 cup cranberries, dried
1/4 cup pecans, chopped
1/2 cup swiss cheese, grated
1 teaspoon butter
2 teaspoons olive oil
3 tablespoons flour
1 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon black pepper, ground
3/4 cup chicken broth, reduced sodium

Steps:

  • Preheat the oven to 375 degrees.
  • Toast pecans and set aside.
  • Reserve 2 teaspoons each of cranberries and pecans for the sauce.
  • For the stuffing, combine remaining cranberries, pecans and shredded cheese in a small bowl and mix well.
  • Carefully make a slit lengthwise down the side of each chicken breast to butterfly, careful not to cup all the way through. Open chicken up and lay fat.
  • Divide filling among the chicken breasts and spread over each one, then fold the top of the chicken over the filling and secure with a toothpick.
  • Spread flour onto a plate.
  • Lightly dredge chicken with flour.
  • Season chicken with salt, pepper and garlic powder.
  • Place oil and butter in the skillet and heat over medium to medium high.
  • Add chicken breasts to skillet and allow to brown on each side for about 3 to 4 minutes.
  • Remove chicken from skillet and place in a baking dish. Place baking dish in the oven for approximately 10 minutes until cooked through.
  • While chicken is baking, use the same skillet and add remaining cranberries and pine nuts.
  • Add broth and bring to a light boil.
  • Reduce heat and allow sauce to slightly thicken and cranberries to soften.
  • Remove chicken from the oven and slice.
  • Serve on a plate with sauce over top.
