1 navel orange
1 (12 ounce) package fresh cranberries
½ cup white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  • Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  • Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.

1 orange
1 medium apple (a sweeter variety such as Gala or Fuji)
3 cups fresh cranberries
1 celery stalk, cut into 1-inch pieces
1/2 cup shelled walnuts
3/4 cup sugar
1 tablespoon orange liqueur

Steps:

  • Grate the zest from the whole orange and set aside. Cut off any remaining pith from the orange. Cut the orange into chunks. Peel the apple and remove the core; cut into large pieces.
  • In a food processor, combine the orange zest and chunks, apples, cranberries and celery and process until finely chopped; be careful not to process too long because the mixture will become mushy. Add the walnuts and pulse until chopped. Stir in the sugar and orange liqueur. Refrigerate until serving time, at least 2 hours and up to overnight.

1 bag whole fresh cranberries
1 tablespoon grated orange rind

Steps:

  • Make this a day ahead and serve chilled. In a non-reactive saucepan, combine the water, orange juice and sugar. Bring to a boil, stirring continuously. Add the cranberries and cook only for about minutes or until the skins of the berries pop. Remove pan from heat and add orange rind. Transfer mixture to a bowl and let cool to room temperature.
  • Leftovers can be thinned with some liqueur and used as a hot sauce to spoon over frozen yogurt or pound cake.

When we made this relish, here's what we discovered: Test Kitchen Discoveries Add an orange--peel and all--for a deep citrus flavor and a mild bitterness to temper the relish's sweetness. 1 thin skinned, seedless oranges, well washed and dried
1 cup sugar

Steps:

  • Make sure there are no seeds in oranges. Cut the oranges into quarters and then chop them up roughly. Either in a meat grinder or in a food processor chop the raw cranberries and oranges. Transfer to glass or ceramic serving bowl and add the sugar. Cover with plastic and let stand for 24 hours. Refrigerate after that; this will keep for 2 weeks. Leftovers can be combined with mayonnaise and used as a dressing for leftover turkey sandwiches.

This is a very refreshing recipe I have used for years. It comes from the bag of Ocean Spray Cranberries bought in the grocery store. This time of year cranberries are plentiful where I live (in fact I have a huge bag 21 pounds in the refrigerator) so right now I try to give new recipes a try before the fresh ones have to go into the freezer. Give it a try it goes great with your Thanksgiving dinner. Enjoy!

2 cups cranberries (fresh or frozen, 1 12oz bag is also enough)
1 medium orange, quartered (ends removed)
3/4-1 cup sugar (or eqivalent artificial sweetener)

Steps:

  • Slice unpeeled orange into eighths and remove any seeds. Place half of the cranberries and half of the orange in food processor. Pulse until evenly chopped. Tranfer to a bowl and repeat with the other half of orange and cranberries. Stir in sugar to taste and store in refrigerator of freezer.
  • You can also use a food grinder for the food processor step. The grinder is my preferred method, becaue that's how my Mom made it so many many years ago.

2 green onions, minced
1 seeded jalapeno pepper, minced

2 pork tenderloins (3/4 pound each)
1 tablespoon olive oil

  • To make relish, pulse cranberries in food processor until finely chopped. Combine with next seven ingredients. Reserve 1/2 cup relish for grilling; cover and refrigerate the rest., Brush tenderloins with olive oil; sprinkle with salt and pepper. Grill, covered, over direct heat 12-15 minutes, turning occasionally and spooning with reserved relish, until thermometer reads 145°. Let stand 10-15 minutes. Discard used relish. Slice meat; serve with refrigerated relish.

  • Place cranberries in food processor and pulse to chop coarsely, about 5 pulses. Transfer to a medium bowl.

4 c whole cranberries
2 good quality seedless oranges, cut into 16 wedges, (peel and pulp intact)
2 c sugar
for the cranberry orange with cherry gelatin
2 - 3 oz pkgs, cherry gelatin
2 1/2 c boiling water
1 c crushed pineapple, juice and all
10 oz frozen, cranberry orange relish

Steps:

  • 1. For the Cranberry Orange Relish:
  • 2. Put cranberries and oranges in food processor and pulse until finely chopped. (A food grinder can be used instead of the food processor)
  • 3. Place cranberry orange mixture into large bowl and add sugar. Mix well, and let sit for 1 hr or so, until sugar has disolved.
  • 4. When sugar is disolved *pack in 10oz quantities to freeze. *Note: If using to make Cranberry Orange with Cherry Gelatin, you want to drain off most of the juice before packing and freezing.
  • 5. For the Cranberry Orange with Cherry Gelatin
  • 6. Disolve gelatin in boiling water. Stir in cranberry orange relish and pineapple. Pour into mold or serving dish. Refrigerate until firm.

Steps:

  • Process cranberries in food processor until finely chopped; spoon into medium bowl. Add sugar; mix well.
  • Add boiling water to combined dry gelatin mix and cinnamon in large bowl; stir 2 min. until gelatin is completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until thickened.
  • Stir oranges and cranberry mixture into gelatin mixture. Spoon into 6-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold just before serving.
