A very tasty coleslaw using a pre-packaged cabbage mix and dressing it up with cranberries and nuts. Feel free to lighten it up with low/no fat mayo & Splenda.

1/4 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons water
1 tablespoon sugar
salt, to taste
10 ounces shredded cabbage coleslaw mix
1 large carrot, peeled and grated
2 scallions, green and white parts thinly sliced
1/3 cup dried cranberries
1/4 cup chopped walnuts (optional)

Steps:

  • In a small bowl, whisk together mayonnaise, lemon juice, water, sugar and salt.
  • Combine shredded cabbage, carrot, scallions, cranberries and optional nuts in a large bowl.
  • Pour dressing over cabbage mixture and toss well to coat.
  • Allow coleslaw to chill for at least 15 minutes before serving, tossing occasionally.

1/2 cup mayonnaise
1 to 2 tablespoons honey
1 teaspoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon celery seed

Steps:

  • In a small bowl, combine the first six ingredients. Place cabbage in a serving bowl. Add mayonnaise mixture and toss to coat evenly. Fold in cranberries. Serve immediately.

1/4 cup sugar
3 cups finely shredded cabbage
1/2 cup orange juice
2 tablespoons chopped celery
2 tablespoons chopped green bell peppers
1 cup green seedless grape, halved
2 tablespoons mayonnaise or 2 tablespoons salad dressing
2 tablespoons plain yogurt

  • In a small bowl, add the cranberries and sugar; stir to combine; set aside.

½ large sweet onion, chopped
1 stalk celery, chopped
½ cup dried cranberries
¼ cup chopped walnuts
½ cup distilled white vinegar
⅓ cup white sugar
½ cup vegetable oil
1 ½ teaspoons salt
1 ½ teaspoons dry mustard
ground black pepper to taste

Steps:

  • In a large bowl, toss together the coleslaw mix, onion, celery, cranberries, and walnuts. Mix the vinegar, sugar, oil, salt, mustard, and pepper in a jar with a lid. Pour over the slaw mixture, and toss to coat. Refrigerate until serving.

I'm not a fan of coleslaw in general but I am a fan of this version. A good friend of mine had made coleslaw for a get together one day that had pine nuts and cranberries in it but she didn't have a "recipe" for it so here is my version...

11 ounces pre-shredded coleslaw mix (white cabbage, red cabbage & carrots 10 - 12 oz. package)
1 1/2 cups dried cranberries
1/2 cup pine nuts, toasted
1/4 cup celery, chopped
1/2 cup mayonnaise
1/4 cup sweet pickle relish
1 tablespoon yellow mustard
2 tablespoons honey
1/4 teaspoon salt (to taste)
1/8 teaspoon black pepper (to taste)

Steps:

  • In a skillet on low heat toast pine nuts until golden brown stirring regularly and set aside until cool before adding to slaw.
  • Combine mayonnaise, sweet pickles, yellow mustard, honey, salt and pepper and set aside.
  • In a large mixing bowl add the pre-shredded coleslaw mix, dried cranberries, toasted pine nuts and celery and top with mayonnaise/mustard mixture made earlier, mix well and serve.
  • Best served immediately to enjoy crunchiness of pine nuts but definitely still good the next day! Mmmm Mmmm Good!

This is one of our families favorites and it is requested for the family get togethers throughout the year. It is bright, colorful, easy to make and since it uses low fat ingredients guilt free. The recipe was adapted from one served at the Kimbell Museum in Fort Worth Texas.

6 -7 cups green cabbage, finely shredded
1 cup shredded carrot
1/2 cup golden raisin
1/2 cup dried cranberries
1/4 cup sliced green onion
1/2 cup chopped fresh parsley
3 tablespoons flaked coconut
1/2 cup red seedless grapes (optional) or 1/2 cup green seedless grape, sliced lenghtwise (optional)
1/2 cup chopped dried apricot (optional)
1/2 cup light mayonnaise (but not fat free)
1/2 cup light sour cream (but not fat free)
3 tablespoons raspberry vinegar or 3 tablespoons cider vinegar
salt and pepper

Steps:

  • Note: Sometimes certain heads of cabbage are a little bitter, I taste and add a teaspoon or two of sugar if needed; The dried fruit& coconut usually provide enough sweetness to this salad.
  • Mix all vegetables& fruit in a large bowl.
  • Mix the dressing ingredients& pour over.
  • Chill at least 30 minutes& stir before serving.

2 oranges, peeled and thinly sliced

1 large apple - peeled, cored, and chopped

  • In a small bowl, toss together the cranberries and sugar. Cover and refrigerate.
  • In a large bowl, toss together the oranges, onion, cabbage, apple and mayonnaise until evenly coated. When ready to serve add cranberry mixture and toss again.
