A delicious orange cookie with dried cranberries. Beautiful and tasty!

½ cup white sugar
½ cup packed brown sugar
¼ cup butter, softened
1 egg
3 tablespoons orange juice
½ teaspoon orange extract
1 teaspoon grated orange zest
1 ½ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 cup dried cranberries

Steps:

  • Preheat oven to 375 degrees F(190 degrees C). Lightly grease cookie sheets, or line with parchment paper.
  • In a medium bowl, cream together the white sugar, brown sugar, and butter. Stir in the egg, orange juice, orange extract, and orange zest. Sift together the flour, baking powder, baking soda, and salt; mix into the orange mixture. Stir in the dried cranberries. Drop cookie dough by heaping teaspoonfuls, 2 inches apart, on the prepared cookie sheets.
  • Bake for 10 to 12 minutes, or until edges are starting to brown. Cool on baking sheets for 5 minutes, then remove to a wire rack to cool completely.

1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup butter, softened
¾ cup packed brown sugar
1 egg
¼ cup milk
1 teaspoon orange zest
1 ½ cups quick cooking oats
¾ cup chopped cranberries
¼ cup chopped walnuts
1 cup confectioners' sugar
½ teaspoon orange zest
¼ teaspoon vanilla extract
2 tablespoons orange juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • Sift together the flour, baking powder, cinnamon and nutmeg, set aside. In a medium bowl, cream the butter and sugar. Stir in the egg, milk and orange zest. Add dry ingredients, mix until well blended. Then stir in the quick oats, cranberries and nuts.
  • Drop dough by tablespoons onto the prepared cookie sheets about 2 inches apart. Bake for 10 to 12 minutes in the preheated oven, cookies should be lightly browned. Remove to cool on wire racks.
  • In a small bowl, stir together the confectioners' sugar, orange zest and vanilla. Stir in the orange juice 1 tablespoon at a time until desired consistency is reached. Drizzle onto cooled cookies.

1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup butter
1/2 cup sugar
1/3 cup firmly packed brown sugar
1/2 teaspoon grated lemon zest
1 large egg
1 teaspoon vanilla
1 1/2 cups pecans
1 1/2 cups chopped fresh cranberries
lemon frosting
1 cup confectioners' sugar
2 tablespoons milk
1/4 teaspoon grated lemon zest

Steps:

  • Combine flour, baking powder and cinnamon; set aside.
  • Cream butter, sugars and zest until light and fluffy.
  • Beat in egg and vanilla.
  • Gradually beat in flour mixture.
  • Stir in pecans and cranberries.

  • Bake at 350° for 12-15 minutes, until golden.

1tbsp orange juice

3 Cups Gold Medal All Purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp soda
1 Cup Chopped Nuts
2 1/2 Cups Coursely chopped Cranberries
For Sugar Free Replace the sugar with Splenda nad the brown sugar with the diabetic substitute.

Steps:

  • 1 - Heat oven to 375* 2 - Cream Butter and Sugars together 3 - Beat in Milk, Orange Juice and Egg 4 - Measure flour by dipping method or by sifting 5 - Stir together flour, baking powder, salt and soda 6 - blend well with sugar mixture 7 - stir in chopped nuts and cranberries 8 - Drop dough by spoonfulls on greased cookie sheet 9 - bake 10 to 15 minutes Note - Cool Thoroughly before placingi n container Note - If you use Gold Medal Self Rising flour, omit baking powder, salt and soda.

  • 1. Preheat oven to 375°F (190°C). Lightly grease cookie sheets, or line with parchment paper or Silpat sheets.
  • 2. In a medium bowl, cream together the white sugar, brown sugar, and butter. Stir in the egg, orange juice, orange extract, and orange zest. Sift together flour, baking powder, baking soda, and salt; mix into the orange mixture. Stir in the dried cranberries.
  • 3. Drop cookie dough by heaping teaspoonfuls 2 inches apart on the prepared cookie sheets.
  • 4. Bake for 10-12 minutes, or until the edges are starting to brown. Cool on baking sheets for 5 minutes, then remove to a wire rack to cool completely.
  • 5. NOTE: The cookies spread quite a bit and were fairly thin. To compensate for that, when I make these again, I will probably use butter flavored Crisco. I used a small ice cream scoop and a double recipe made 44 - 2½" cookies.
