Sour Cream Cranberry Bars image

A filling made with dried cranberries is layered between a buttery crust and a golden crumb topping in these flavorful bars. They're recommended by Barbara Nowakowski from Mesa, Arizona.

1 cup butter, softened
1 cup packed brown sugar
2 cups quick-cooking oats
1-1/2 cups plus 2 tablespoons all-purpose flour, divided
2 cups dried cranberries
1 cup sour cream
3/4 cup sugar
1 large egg, lightly beaten
1 tablespoon grated lemon zest
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Combine oats and 1-1/2 cups flour; add to the creamed mixture until blended. Set aside 1-1/2 cups for topping. , Press remaining crumb mixture into an ungreased 13x9-in. baking pan. Bake 10-12 minutes or until lightly browned., Meanwhile, in a large bowl, combine the cranberries, sour cream, sugar, egg, lemon peel, vanilla and remaining flour. Spread evenly over crust. Sprinkle with reserved crumb mixture. , Bake 20-25 minutes or until lightly browned. Cool on a wire rack. Refrigerate leftovers.

This recipe came from Mr. Food, and was adapted from the Wisconsin State Cranberry Growers Association. These are very good and a little rich. You can use a store-bought bag of cranberries OR fresh cranberries.

Number Of Ingredients 7

2 1/2 cups all-purpose flour, divided
3/4 cup confectioners' sugar
1 cup butter, softened
4 eggs
1 1/2 cups granulated sugar
1/4 teaspoon salt
1 (12 ounce) bag cranberries or 3 cups fresh cranberries, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, combine 2 cups flour, the confectioners sugar, and butter. Mix with a fork or your hands until mixture starts to hold together.
  • Press into the bottom of a 15" x 10" x 1" jelly roll pan. Bake for 15 minutes then remove from the oven.
  • Meanwhile, in another large bowl, combine the eggs, granulated sugar, salt, and remaining 1/2 cup of flour; mix with a wooden spoon until smooth. Fold in the chopped cranberries. Spread mixture over the hot crust, and bake for 32 to 35 minutes.
  • Remove from the oven; let cool then cut into bars.

1 teaspoon orange zest
3/4 cup fresh cranberries
8 ounces cream cheese (room temperature)
2 packets Sweet'N Low® or 1/2 teaspoon Sweet'N Low® 8 oz.
3/4 teaspoon orange extract
pinch kosher salt
1 ounce sugar-free cheesecake pudding mix
1 1/2 cups whole milk
6 ounces cream cheese (room temperature)
1 3/4 teaspoon pure vanilla extract
1 teaspoon orange zest
2 packets Sweet'N Low® or 1/2 teaspoon Sweet'N Low® 8 oz.
1 1/2 cups heavy whipping cream

Steps:

  • Prepare a 9 X 9-inch baking pan, by lining the bottom and sides with parchment.
  • In a medium bowl, mix the sugar-free pudding mix with the 1 1/2 cups milk as directed here in the recipe. Put into the refrigerator to chill.

2 cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
¾ cup butter, chilled and cut into small pieces
1 egg, beaten
1 (8 ounce) package cream cheese, softened
½ cup white sugar
1 egg
2 tablespoons maple syrup
1 teaspoon vanilla extract
2 cups cranberry sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan.
  • Combine flour, sugar, and salt in a large bowl. Cut in butter using a pastry cutter or fork until mixture resembles coarse crumbs. Stir in 1 egg until mixture is evenly combined but still crumbly. Firmly press 1/2 of the mixture into the bottom of the prepared pan to form an even crust.
  • Beat cream cheese, sugar, egg, maple syrup, and vanilla extract in a bowl until creamy. Spread mixture evenly over the crust. Drop spoonfuls of cranberry sauce on top until evenly distributed. Crumble the remaining crust mixture on top.

3/4 cup sugar
1/2 cup water
2 cups fresh or frozen cranberries
1/4 cup orange juice
1 tablespoon grated orange zest
1 tablespoon butter
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup chopped walnuts
CRUST:
2 cups all-purpose flour
1/4 teaspoon salt
1-1/4 cups cold butter
1 cup sugar
3 cups quick-cooking oats

Steps:

  • In a saucepan, bring sugar and water to a boil. Add cranberries and cook until they pop, about 4-6 minutes. Add orange juice, orange zest, butter, cinnamon and salt. Cook 5 minutes longer or until mixture thickens. Remove from the heat; stir in walnuts and set aside. , For crust, combine the flour and salt in a bowl; cut in butter until mixture is crumbly. Add sugar and oats; mix well. Spoon half into an ungreased 13x9-in. baking pan; pat firmly into pan. Spread filling evenly over crust. 2 1/2 cups Gold Medal™ all-purpose flour
1 cup sugar
1/2 cup ground slivered almonds
1 teaspoon baking powder
1/4 teaspoon salt
1 cup cold butter
1 egg
1/4 teaspoon ground cinnamon
4 cups fresh or frozen cranberries
1 cup sugar
Juice of 1/2 orange (4 teaspoons)
1 tablespoon cornstarch
1 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Grease 13x9-inch pan with butter or cooking spray.
  • In large bowl, mix flour, 1 cup sugar, the almonds, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in egg. Press 2 1/2 cups of crumb mixture in bottom of pan. Stir cinnamon into remaining crumb mixture; set aside.
  • In medium bowl, stir all filling ingredients. Spoon evenly over crust. Spoon reserved crumb mixture evenly over filling.
  • Bake 45 to 55 minutes or until top is light golden brown. Cool completely. Refrigerate until chilled. Cut into 6 rows by 4 rows. Store tightly covered in refrigerator.
