2 packages (3 ounces each) cranberry gelatin
1-1/2 cups boiling water
1 can (14 ounces) whole-berry cranberry sauce
1-1/2 cups cold water
1-1/2 cups graham cracker crumbs
1/2 cup sugar, divided
1/2 cup butter, melted
1 package (8 ounces) cream cheese, softened
1 carton (16 ounces) frozen whipped topping, thawed, divided
1 can (15 ounces) mandarin oranges, drained

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in cranberry sauce and cold water until blended. Refrigerate for 45 minutes or until partially set., Meanwhile, in a small bowl, combine the cracker crumbs, 1/4 cup sugar and butter. Press into an ungreased 13-in. x 9-in. dish. Refrigerate until set., In a large bowl, beat cream cheese and remaining sugar until smooth. Fold in half of the whipped topping. Spread filling over crust. , Fold oranges into gelatin mixture; spoon over cream cheese layer. Refrigerate for 4 hours or until firm. Cut into squares; dollop with remaining whipped topping.

1 cup packed brown sugar

8 cups thinly sliced peeled apples (about 5 large)
1 bag (6 oz) sweetened dried cranberries
1/2 cup granulated sugar
1 tablespoon ground cinnamon
1 container (8 oz) sour cream
3 eggs
1/2 gallon vanilla ice cream

Steps:

  • Heat oven to 375°F. Spray 15x10-inch pan with cooking spray.
  • In large bowl, mix Bisquick mix, oats and brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Remove 1 1/2 cups crumb mixture to small bowl; stir in pecans. Set aside for topping. Pat remaining crumb mixture into bottom of pan.
  • In large bowl, toss apples, cranberries, granulated sugar and cinnamon. In small bowl, whisk together sour cream and eggs. Pour over apple mixture; toss to coat. Spoon filling over crust; sprinkle reserved crumb/nut mixture over filling.
  • Bake 45 to 55 minutes or until topping is golden brown and apples are tender. Cool 30 minutes. Cut into 8 rows by 4 rows. Serve warm with ice cream.

2 tablespoons butter
1 apple, peeled and chopped
Pinch of nutmeg
1 cup cranberries
1 cup apple cider
1/2 cup sugar

Steps:

  • In a medium saucepan, melt 1 tablespoon butter over medium heat. Cook apple with nutmeg until apple begins to soften, about 3 minutes.
  • Add cranberries, apple cider, and sugar; bring to a boil. Reduce heat; simmer until apple is tender and sauce is thick, 10 to 15 minutes. Remove from heat; stir in 1 tablespoon butter. Puree in a blender until smooth. If too thick to pour, stir in up to 1/2 cup more apple cider. Spoon the dessert sauce over pound cake or vanilla ice cream.

  • Spread into a greased 9-inch pie plate.

This is a great dessert to serve to guests for the holiday season and you can make this well in advance which is a big plus! Plan ahead this needs to chill for a minimum of 4 hours before serving. If desired sprinkle the top with sugared cranberries if desired for a nice presentation! Prep time includes the 1-1/2 hours and the 4 hour chilling times. I used Ocean Spray whole cranberry sauce for this, I'm not certain how it would work using homemade cranberry sauce. If you want a more intense fruit flavor use a large package of raspberry Jell-o and a small package of cranberry Jell-o, increase the cold water by only a couple of tablespoons.

Steps:

  • Butter a 13 x 9-inch glass baking pan.
  • For the crust; in a bowl combine the graham cracker crumbs with the sugar and 1/2 cup plus 2 tablespoons melted butter; mix to combine then press lightly into the baking pan; set aside.
  • In a heat-proof bowl combine 1-1/2 cups boiling water with the cranberry and raspberry Jell-o powder and 1/3 cup sugar; mix with a spoon until no granules remain.
  • Stir in the cranberry sauce until totally combined (I used my hands for this, it is much easier than using a spoon!).
  • Stir in 1 cup cold water until completely combined.
  • Chill the mixture for about 1-1/2 to 2 hours (stirring with a spoon a few time during chilling) or until a thick jelly-like consistency, not completely set but still able to spread on top of the cream cheese mixture (chilling time will depend on how cold your fridge is).
  • While the gelatin mixture is chilling; in a bowl beat the softened cream cheese with powdered sugar until smooth.
  • Add in the two 8-ounce containers of thawed Cool Whip and beat at low speed until combined.
  • Stir in two 8-ounce container/tub thawed Cool Whip until combined; spread over the crust in the baking dish; chill until ready to top with the gelatin mixture.
  • Spoon the semi-firm cranberry gelatin/orange mixture over the cream cheese layer.
  • Chill for minimum of 4 hours (or longer) or until firm.
  • Top with whipped cream or Cool Whip topping.

2 cups milk
1 cup whipping (heavy) cream
1 tablespoon powdered sugar
1 package (10.75 ounces) frozen pound cake, thawed
1/4 cup orange-flavored liqueur or orange juice
3/4 cup frozen cranberry-orange sauce (from 12-ounce container), thawed
1 cup fresh raspberries
1 can (11 ounces) mandarin orange segments, drained
Additional fresh raspberries, if desired

Steps:

  • Mix pudding mix and milk in 2-quart sauce-pan. Heat to boiling over medium heat, stirring constantly; remove from heat. Place plastic wrap directly on pudding. Refrigerate 2 hours or until completely cooled.
  • Beat whipping cream in chilled small bowl with electric mixer on high speed until soft peaks form. Add powdered sugar; beat until stiff peaks form. Fold 1/2 cup of the whipped cream into the pudding.
  • Cut pound cake into 1/2-inch slices; cut each slice crosswise in half. Arrange about one-third of the cake pieces in bottom of bowl with slanted side, or arrange one-half of the cake pieces in bottom of bowl with straight side. Sprinkle with 2 tablespoons of the liqueur. Spread about one-third or one-half of the cranberry-orange sauce over cake pieces. Top with half each of the raspberries and orange segments. Orange Crème Dessert with Ruby Cranberry Sauce image

Enjoy this orange Crème dessert that's made on a stovetop using gelatin, graham crackers, orange juice and Yoplait® Original orange crème yogurt - dress with ruby red cranberry sauce!

12 chocolate-covered graham crackers, finely crushed (about 1 cup)
2 cups fresh or frozen cranberries
3/4 cup sugar
1 teaspoon cornstarch
3/4 cup water
1 envelope unflavored gelatin
1/4 cup orange juice
4 containers (6 oz each) Yoplait® Original yogurt orange crème
2 teaspoons grated orange peel
2 cups Cool Whip lite frozen whipped topping, thawed

Steps:

  • Heat oven to 375°F. Spray 9-inch springform pan with cooking spray. Press cracker crumbs evenly in bottom of pan. Bake 7 minutes. Place in refrigerator or freezer until completely cooled.
  • Meanwhile, in medium saucepan, mix cranberries, sugar, cornstarch and water until smooth. Heat to boiling over medium heat, stirring constantly. Reduce heat to low; simmer 10 to 15 minutes or until cranberries pop, stirring occasionally. Cool 15 minutes. Refrigerate until serving time.
  • In small saucepan, stir gelatin and orange juice; let stand 2 minutes. Place saucepan over low heat; stir until gelatin is dissolved.
  • In blender container, place yogurt and orange peel; blend until smooth. With blender running, add gelatin mixture. Cover; blend at High speed for 15 to 20 seconds or until combined. Spoon into medium bowl. Gently stir in whipped topping. Spoon and gently spread over cooled crust. Refrigerate 3 hours or until set.
  • To serve, run knife around edge of dessert; remove side of pan. Cut dessert into wedges; place on individual dessert plates. Top each with 2 tablespoons cranberry mixture.
