This is a family favorite I make every year for Thanksgiving. The raspberries give it that added sweetness that makes you go for seconds! It's best served chilled or warm over ice cream.

1 cup fresh orange juice
1 cup white sugar
1 (12 ounce) bag fresh cranberries
2 cups fresh or frozen raspberries

Steps:

  • Stir the orange juice and sugar together in a pan over medium heat. Add the cranberries and bring to a boil. Cook and stir until the cranberries burst. Stir in the raspberries; reduce heat and simmer 10 to 15 minutes. Refrigerate or serve warm.

A moist and flavorful fall dessert. The warm butter sauce really compliments the tart cranberries. I have purchased fresh cranberries in season and frozen for use later. The frozen cranberries work well in the recipe.

2 3/4 cups flour
2 1/4 cups sugar, divided
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups sour cream
1/2 cup milk
1/4 cup oil
1/2 teaspoon almond extract
2 eggs
3 1/2 cups fresh cranberries
1/2 cup butter
1/2 cup whipping cream or 1/2 cup half-and-half
1 teaspoon vanilla

Steps:

  • Preheat oven to 375°F.
  • Grease and flour bottom only of 9x13 pan.
  • Combine flour, 1 1/4 cups sugar, baking powder, soda, and salt.
  • Mix well.
  • In medium bowl, beat sour cream, milk, oil, almond extract and eggs.
  • Add sour cream mixture to flour mixture.
  • Stir just until dry ingredients are moistened.
  • Gently fold in cranberries.
  • Spoon into prepared pan.
  • Bake at 375F for 45 to 55 minutes or until toothpick inserted in center comes out clean.
  • BUTTER SAUCE: In small saucepan, combine 1 cup sugar, butter and whipping cream.
  • Bring to a boil.
  • Simmer over low heat for 2 minutes, stirring constantly.
  • Remove from heat, stir in vanilla.
  • Serve warm sauce over cake.

2 tablespoons butter
1 apple, peeled and chopped
Pinch of nutmeg
1 cup cranberries
1 cup apple cider
1/2 cup sugar

Steps:

  • In a medium saucepan, melt 1 tablespoon butter over medium heat. Cook apple with nutmeg until apple begins to soften, about 3 minutes.
  • Add cranberries, apple cider, and sugar; bring to a boil. Reduce heat; simmer until apple is tender and sauce is thick, 10 to 15 minutes. Remove from heat; stir in 1 tablespoon butter. Puree in a blender until smooth. If too thick to pour, stir in up to 1/2 cup more apple cider. Spoon the dessert sauce over pound cake or vanilla ice cream.

12 chocolate-covered graham crackers, finely crushed (about 1 cup)
2 cups fresh or frozen cranberries
3/4 cup sugar
1 teaspoon cornstarch
3/4 cup water
1 envelope unflavored gelatin
1/4 cup orange juice
4 containers (6 oz each) Yoplait® Original yogurt orange crème
2 teaspoons grated orange peel
2 cups Cool Whip lite frozen whipped topping, thawed

Steps:

  • Heat oven to 375°F. Spray 9-inch springform pan with cooking spray. Press cracker crumbs evenly in bottom of pan. Bake 7 minutes. Place in refrigerator or freezer until completely cooled.
  • Meanwhile, in medium saucepan, mix cranberries, sugar, cornstarch and water until smooth. Heat to boiling over medium heat, stirring constantly. Reduce heat to low; simmer 10 to 15 minutes or until cranberries pop, stirring occasionally. Cool 15 minutes. Refrigerate until serving time.
  • In small saucepan, stir gelatin and orange juice; let stand 2 minutes. Place saucepan over low heat; stir until gelatin is dissolved.
  • In blender container, place yogurt and orange peel; blend until smooth. With blender running, add gelatin mixture. Cover; blend at High speed for 15 to 20 seconds or until combined. Spoon into medium bowl. Gently stir in whipped topping. Spoon and gently spread over cooled crust. Refrigerate 3 hours or until set.
  • To serve, run knife around edge of dessert; remove side of pan. Cut dessert into wedges; place on individual dessert plates. Top each with 2 tablespoons cranberry mixture.
