I developed this recipe after sampling a similar cookie while traveling in North Carolina. These pretty cookies keep well in the freezer, so I always have some on hand for midday munching.

Number Of Ingredients 13

1 cup butter-flavored shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2-1/2 cups old-fashioned oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
1-1/3 cups dried cranberries
1 cup coarsely chopped walnuts

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the oats, flour, baking soda, cinnamon, salt and baking powder; gradually add to creamed mixture and mix well. Stir in the cranberries and walnuts. , Drop by tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

Chock-full of cranberries, chocolate chips and nuts, these cookies are fun to eat. They offer a change of pace from traditional Christmas cookies...but don't wait until December to make them. My family requests them all year-round.

1 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/2 cups semisweet chocolate chips
1-1/2 cups dried cranberries
3/4 cup chopped pecans
1/2 cup English toffee bits or almond brickle chips, optional

Steps:

  • In a large bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in chocolate chips, cranberries, pecans and toffee bits if desired (dough will be stiff)., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten slightly. Bake at 350° for 11-14 minutes or until set and edges are lightly browned. Cool for 2 minutes before removing to wire racks.

1 cup unsalted butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamon
3 cups rolled oats
1 cup dried cranberries (or other dried fruit)

Steps:

  • Preheat oven to 350 degrees. Cream butter and sugars until fluffy. Add eggs and vanilla. Combine dry ingredients. Add to butter mixture and stir until well blended. Add dried cranberries. Drop by teaspoonful onto parchment covered baking sheet. Bake about 10 to 12 minutes, or until lightly golden. Cool.

1 tablespoon Gold Medal™ all-purpose flour
1/3 cup butter or margarine, softened
1/2 teaspoon almond extract
1 egg
1/2 cup finely chopped toasted almonds*
1/2 cup chopped sweetened dried cranberries
1 tablespoon sugar

Steps:

  • Heat oven to 350°F. In large bowl, stir together cookie mix, flour, butter, almond extract and egg until soft dough forms. Stir in almonds and cranberries.
  • On lightly floured surface, roll dough to 1/4-inch thickness. Cut dough with 2-inch round cookie cutter. Place 1 inch apart on ungreased cookies sheets.
  • Bake 9 to 11 minutes or until edges are light golden brown. Sprinkle with sugar. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completey, about 15 minutes. Store loosely covered at room temperature.

3/4 cup butter, softened
1 1/4 cups packed brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups rolled oats (not instant)
1 1/2 cups all-purpose flour
1/2 cup shredded sweetened coconut
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup dried cranberries

Steps:

  • Line rimless baking sheets with parchment paper or grease; set aside.
  • In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla.
  • In separate bowl, whisk together rolled oats, flour, coconut, baking powder, baking soda and salt.
  • Add to butter mixture along with cranberries; stir until combined.
  • Drop by heaping 1 tbsp about 2 inches apart, onto prepared pans.

1/2 c butter, room temperature
1/2 c shortening, butter flavor
1 c sugar
1 c brown sugar, firmly packed
2 large eggs
2 c all purpose flour
1 c oats, regular (uncooked)
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 Tbsp orange juice, fresh
1 c toasted rice cereal, i used rice krispies
1 c coconut, flaked sweetened
1 c dried cranberries, i used craisins (you can use raisins or dried cherries)
1 c walnuts, chopped
1/2 c chocolate chips, i used mini chips
zest of one orange (about 1/2 tbsp)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. At a medium speed, mix butter and shortening until fluffy; add both sugars and mix well. Add eggs beating well after each.
  • 3. Combine flour, oats, salt, baking powder and baking soda; gradually flour mixture add to sugar mixture. Scrap down bowl as needed. Add orange juice; mix well.
  • 4. Combine rice cereal, coconut, cranberries, walnuts, chocolate chips and orange zest; gently mix to combine. Hand stir into batter.
  • 5. Drop by tablespoon onto baking sheet; bake for 10 to 12 minutes until lightly golden. Remove to wire racks to cool.
  • 6. NOTE: when zesting the orange peel be sure to only zest the orange part, not any of the white.

2 cups all-purpose flour
1/2 teaspoon table salt
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon pure vanilla extract
3 tablespoons milk
2 large eggs
1/2 pound (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
3 cups old-fashioned oats
1 cup dried cranberries

Steps:

  • In a medium bowl, whisk together flour, salt, cinnamon, baking powder, and baking soda. Set aside. In a small bowl, whisk together the vanilla, milk, and eggs. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars, and beat on medium speed until light and fluffy. Reduce speed to low, gradually add milk mixture, and beat well. Add the flour mixture, and beat until just combined. Remove bowl from the electric mixer, and stir in the oats and cranberries. Place dough in the refrigerator until firm, at least 2 hours or overnight.
  • Preheat oven to 350 degrees. Line several baking sheets with parchment paper, and set aside. Shape 2 tablespoons of dough into a ball; place on one of the prepared sheets. Repeat with the remaining dough, placing 3 inches apart. Press with the bottom of a glass to flatten dough into 2-inch-diameter rounds.
  • Bake until golden but still soft in center, 16 to 18 minutes, rotating halfway through. Remove from oven; transfer with parchment to a wire rack to cool. Store in an airtight container at room temperature for up to 1 week.

1/2 cup finely chopped walnuts
1 egg
1/2 cup dried cranberries

Steps:

  • In a bowl, combine the bread mix, butter, walnuts and egg; mix well. Stir in cranberries. Using a 1 1/4 inch melon baller drop ball of dough 3 inches apart on ungreased baking sheet. Flatten to 1/8 inch thickness with a glass dipped in sugar. Bake at 350 degrees for 10 to 12 minutes or until light golden brown. Remove to wire racks to cool. Makes 2 1/2 dozen.
