CRANBERRY-WHITE CHOCOLATE CREAM CHEESE COOKIES

A friend of mine bought me a similar cookie at a local fast-food sub-sandwich shop and I knew I'd have to try to match it. Here's my take and I like them even better!

8 Tbsp unsalted butter
3 oz cream cheese, softened
1 c granulated white sugar
1 c all purpose flour
1/2 tsp table salt
3/4 c (about 4.5 ounces) chopped dried cranberries
3/4 c (about 5.5 ounces) white chocolate chips

Steps:

  • 1. Set an oven rack in the center position and preheat the oven to 350°F. Line a baking sheet (or two 1/2-sheets) with parchment paper.
  • 2. Using a hand mixer or a stand mixer fitted with a paddle blade, beat the butter, cream cheese and sugar together until they are light and fluffy, 3 to 5 minutes. Mix in the flour and salt until just incorporated. Mix in the dried cranberries and white chocolate chips. Scrape down the bowl and, make sure everything is evenly mixed.
  • 3. Drop the batter in rounded tablespoonfuls onto the prepared baking sheet(s), leaving about 1 1/2 inches between each cookie. I use a #50 (about 1 1/3 tablespoons) portion scoop and get 24 cookies. Bake them for about 12 minutes, until the edges are golden brown. Do not over-bake or the cookies won't be chewy. Let them cool slightly on the sheet, then, using a spatula, remove them to a rack to cool completely.

Whip up a batch of these Cranberry-Cream Cheese Cookies this Thanksgiving and really wow them. These Cranberry-Cream Cheese Cookies include dried cranberries and apricot preserves, a perfect autumn treat.

1-1/4 cups flour
1/4 tsp. baking soda
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
6 Tbsp. butter, softened
1/2 cup sugar
1 tsp. vanilla
1 cup dried cranberries, finely chopped
1/2 cup apricot preserves, divided
1/4 cup finely chopped pecans, divided

Steps:

  • Combine flour and baking soda. Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Gradually beat in flour mixture. Refrigerate 30 min.
  • Meanwhile, place cranberries in small bowl; add enough boiling water to cover. Let stand 10 min. or until cranberries are softened; drain.
  • Divide dough in half. Place 1 half between 2 lightly floured sheets of waxed paper; roll into 9-inch square. Repeat with remaining dough to make second square.
  • Remove top sheet of waxed paper from 1 dough square. Spread half the preserves over dough to within 1/2 inch of edges. Top evenly with half each of the cranberries and nuts. Roll up, starting at one side of dough and using bottom sheet of waxed paper to help roll dough up. Wrap in plastic wrap. Repeat with remaining ingredients. Freeze logs 2 hours.
  • Heat oven to 350°F. Unwrap logs. Cut each log into 18 slices. Place, 2 inches apart, on parchment-covered baking sheets.
  • Bake 12 to 14 min. or until edges are golden brown. Cool 1 min. on baking sheets. Remove to wire racks; cool completely.
