ORANGE BLUEBERRY MUFFIN TOPS

Steps:
- Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment.
- Cream together the butter and granulated sugar in an electric mixer. Add the egg and beat well. Set aside 1 tablespoon of the flour for the blueberries, then add the remaining flour to the butter mixture and mix until combined.
- In a separate bowl, dissolve the baking soda in the buttermilk. Add the buttermilk mixture to the batter along with the orange zest and mix well.
- Toss the reserved 1 tablespoon flour with the blueberries in a bowl. Using a spatula, fold the blueberry mixture into the batter until combined.
- Use a standard ice cream scoop (1/4 cup) to scoop out the dough onto the lined baking sheets, spacing the scoops 2 to 3 inches apart. Bake until lightly browned, about 11 minutes. Transfer the muffin tops to a rack set over a baking sheet to cool completely.
- In a small bowl, combine the confectioners' sugar and orange juice and mix well. Drizzle the glaze over the cooled muffin tops and let set.
ARCTIC CRANBERRY ORANGE MUFFINS WITH ORANGE GLAZE
These cranberry orange muffins burst with flavour and natural goodness, especially delightful during the cold winter months. Made with hand picked kimmingnat (arctic cranberries), a traditional Inuvialuit comfort food, they're a delicious and bold way to start your day! Plus, they're easy to make and freezer-friendly, so they make for a great after-school snack. For me, these muffins are a taste of home and a way to share my traditional food and culture with others. I enjoy mine with a good cup of tea.Kimmingnat, or arctic cranberries, grow on the tundra, across the arctic. It was and still is an important food source for Inuvialuit, the Inuit of the Canadian Western Arctic. Each fall, we wait with anticipation the time for cranberry picking. Usually around the first snowfall the berries are ripe, plump and perfect for picking. Though tiny compared to cultivated cranberries, kimmingnat are packed full of nutrients like vitamin C, omega 3, 6, 9, fibre, minerals, antioxidants and are beneficial for oral, kidney and bladder function. Naturally tart, they pair perfectly with other traditional Inuvialuit food and are easily incorporated into modern recipes.Arctic cranberries in the wildIn my culture, it's a sign of love to be given traditional food. You know you're loved when you receive a bag of berries. We understand that it's labour and time intensive to hand pick, only seasonally harvested in cold, damp conditions; therefore, they are a precious and valuable food. Eating and sharing our traditional food is an important way to maintain our cultural connection, provides a sense of belonging and benefits our health and well-being as contemporary Inuvialuit. My parents and my aunt tell stories of my Inuvialuit and Gwich'in grandmothers picking 45-gallon drums of berries not only for their families yearly supply but to trade with other families and communities. I have fond childhood memories of berry picking with my mom and extended family. Last fall I was able to share this joy with my own children, they were quite excited to do some of the same things our ancestors did! While there is nothing like eating freshly picked cranberries directly from the tundra, we pick an abundance and freeze them to last throughout the year.During the fur trade era, our diets changed to include new ingredients like flour, sugar, baking powder and tea, and as a result, new ways to prepare traditional foods. One of my favorite recipes is cranberry orange muffins with orange glaze. I appreciate every bite, and it's extra delicious knowing that they're baked with kimmingnat that my mom picked especially for me. Mamaqtuq! - Mix dry ingredients: flour, baking powder, baking soda and salt. Gently stir in orange zest and cranberries until they're coated. Set aside.
- Fold in half of flour mixture and half of the milk. Add remaining milk and remaining flour mixture, gently mix until just moistened. Do not overmix so as not to crush the cranberries. Batter will be lumpy.
- With a spoon, fill batter evenly into prepared muffin pan.
- For the orange glaze: Mix ingredients together and bring to light boil over medium low heat. Drizzle over warm muffins.
JUMBO CRANBERRY CITRUS MUFFINS
These cranberry orange muffins will be a delicious treat to wake up to. They're bursting with citrus flavor. Perfectly sweet, with little bits of tart cranberries throughout, these muffins are just as good as anything you'd find at a bakery.

- 1. Preheat oven to 375 degrees. Grease a 6 ct jumbo muffin pan or line with muffin papers.
- 2. Put cranberries in a microwave safe cup or bowl and cover with liquid. (I use orange juice.)
- 3. Microwave for 1 minute, stir, microwave for another minute.
- 4. Then pour into a strainer to drain.
- 5. Mix dry ingredients together in a medium bowl.
- 6. Add orange zest and mix well.
- 7. Then, add drained cranberries and mix well.
- 8. Mix orange juice, milk, oil, egg, sour cream, and orange extract together in a large bowl.
- 9. Stir dry ingredients into the juice mixture. DO NOT OVER MIX!
- 10. Then spoon batter into a greased or paper-lined jumbo muffin tin.
- 11. Bake for 30 minutes. Remove from oven to rack.
- 12. Let stand for 5 minutes then remove muffins from pan to completely cool on the rack.
LEMON CRANBERRY MUFFINS
These sweet and tangy muffins bake up very quickly -- perfect for those unexpected guests!

- Preheat oven to 400 degrees F (205 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
- Combine flour, sugar, baking powder, and salt in a large bowl. Mix lemon juice and milk in a measuring cup, to sour milk; beat eggs, oil, and milk mixture in a bowl. Stir egg mixture into flour mixture until just moistened; fold in cranberries. Fill prepared muffin cups two-thirds full; sprinkle with almonds.
- Bake in preheated oven until a toothpick inserted into a muffin comes out clean, 18 to 20 minutes. Cool for 5 minutes before removing from pan to wire rack.

CRANBERRY CRUMB MUFFINS
In these tender muffins, a crunchy topping adds nice textural contrast, and supertart cranberries keep the sweetness balanced. Fresh or frozen cranberries work well, but if using frozen cranberries, do not thaw them before they go into the batter. The batter may seem extra stiff from the cold berries, but it will bake up just fine. (They may need an extra minute or two in the oven.) Blueberries, raspberries, blackberries or a mix of the three would be lovely. If you use berries, you can expect some color streaking, but they will taste great. Chopped up in-season peaches or plums would be tasty, too. Use a spring-loaded ice cream scoop to portion muffin batter into the prepared pan: It's easy, quick and helps to keep the muffins the same size.

- Heat the oven to 375 degrees. Line a standard 12-cup muffin tin with liners.
- Prepare the crumb mixture: In a medium bowl, whisk together the flour, brown sugar, cinnamon and salt. Add the butter, and stir to combine.
- Prepare the muffins: In a separate medium bowl, whisk together the flour, baking powder, salt and baking soda. Add the cranberries and pecans, and gently toss to combine.
- In a small bowl, mix together the sour cream and the milk. In a large bowl, with an electric mixer, beat the butter and sugar until fluffy, about 3 minutes. Beat in the eggs, one at a time.
- Fold the flour mixture into the butter mixture. Fold in the sour cream mixture. Divide the batter evenly between the muffin cups. Squeeze the crumb mixture to create clumps of varying size, and sprinkle evenly over the tops. (It's OK if some of the crumb mixture lands on the tray.)
- Bake the muffins until they are puffed and set, and a toothpick inserted into the center comes out clean, 26 to 30 minutes. Let cool in the pan for 10 minutes, then transfer to a rack to cool completely.
WINNING CRANBERRY MUFFINS
Our town is the hub of all the area's large cranberry bogs, which are beautiful year-round. I've had this particular recipe for quite a while and have modified it over the years. - Preheat oven to 350 degrees F (175 degrees C). Spray or grease a 12 cup and 6 cup muffin tin.
- Mix together the flour, sugar, baking powder, baking soda, orange peel, nutmeg, cinnamon and ginger.
- Cut in shortening; stir in juice, vanilla, eggs, cranberries and nuts. Pour into muffin cups and bake for 25 minutes or until brown.
- Prepare the topping in a saucepan over low heat by whisking together the cranberry sauce, brown sugar and margarine. Cook until heated and smooth. Remove from heat and serve as a spread for the muffins.
