White Chocolate Chip Cookie Bars with Oatmeal and Cranberry image

A friend of my daughter's made these white chocolate chip cookie bars, and they are now one of my daughter's favorites.

1 cup butter, softened
1 cup brown sugar, packed
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
salt
3 cups oatmeal
1 cup dried cranberries
1 cup white chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Beat butter, brown sugar, and white sugar together in a mixing bowl using an electric mixer until creamy. Add eggs and vanilla extract; continue mixing until well blended.
  • Add flour, baking soda, cinnamon, and salt to sugar mixture; mix well. Stir in oats, cranberries, and white chocolate chips. Pour into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the bars comes out clean, 25 to 28 minutes.
  • Remove baking pan from the oven and let stand for 30 minutes. Cut into bars.

1 1/2 cups flour
1 1/2 cups granulated sugar
2 eggs
2 sticks of melted butter or margarine
2 cups of chopped fresh cranberries
3/4 cup semi-sweet chocolate chips
1 cup chopped walnuts

Steps:

  • Mix together the sugar and flour, add the melted butter, then add the slightly beaten eggs. Add the chopped cranberries, chocolate chips and walnuts. Batter will be thick. Spread better into a buttered and floured 9x13 pan. Bake at 350 for 35 minutes or until edges are lightly browned and center is set. When cool, cut into triangles, Lighly sprinkle a layer of sifted, powdered sugar over the top. Enjoy!

1/2 cup rolled oats (quick or old fashioned)
1/2 cup whole wheat flour
1/2 cup wheat germ, toasted
1/2 teaspoon cinnamon
1/2 cup honey
2/3 cup dried sweetened cranberries
2/3 cup dark chocolate chips, divided

Steps:

  • Preheat oven to 300 degrees farenheit.
  • Spray an 8" square pan with cooking oil spray or coat sides and bottom of pan with canola oil.
  • In a large bowl, combine oats, flour, wheat germ, and cinnamon.
  • Stir in honey until dry ingredients are well coated.
  • Stir in dried cranberries and 1/3 cup of the chocolate chips.
  • Pat mixture into oiled pan.
  • Top mixture with remaining 1/3 cup of chocolate chips.
  • Bake for 18 - 20 minutes or until top is golden.
  • Cool in pan, then cut into squares.

2 teaspoons grated orange peel
2 cups semi-sweet chocolate chips
1 cup dried sweetened cranberries
8 ounces light cream cheese, softened
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350°F
  • Grease a 13 x 9-inch baking pan.
  • Beat butter and brown sugar in large mixer bowl until creamy.
