  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble.

1 cup quinoa
¾ cup dried cranberries
1 cup bite-size broccoli pieces
2 tablespoons olive oil

Steps:

  • Combine water and quinoa in a saucepan. Bring to a boil; reduce heat to medium-low and simmer until most of the water has been absorbed, about 8 minutes. Add cranberries; cook until plump and quinoa is tender, 4 to 5 minutes more. Transfer to a bowl.

1 onion
1 dried bay leaf
4 to 5 whole black peppercorns
2 1/2 pounds fresh cranberry beans, shelled (about 3 cups)
5 tablespoons olive oil
Coarse salt and freshly ground pepper
4 slices bacon, (4 ounces)
1 small butternut squash, (about 1 3/4 pounds), cut into 1/2-inch pieces
4 cloves garlic, minced
1 bunch broccoli rabe, washed and trimmed (about 1 pound)

Steps:

  • Cook the beans: Using a sharp knife, slice off stem end of onion, and score shallow slits all over, making sure it stays intact. Place in a large saucepan with the bay leaf and the peppercorns; fill with enough water to just cover (about 3 quarts). Bring to a boil; reduce heat, and simmer 20 minutes. Add beans; simmer until cooked through, about 15 minutes.
  • Drain beans, reserving cooking liquid. In a medium bowl, toss beans with 1 tablespoon each oil and cooking liquid; season with salt and pepper. Set aside.
  • Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels to drain. Pour off all but 2 tablespoons rendered bacon fat, and return the skillet to medium heat. Working in batches if necessary, saute squash until cooked through and golden, about 10 minutes. Season with salt and pepper, and transfer to a bowl; set aside.
  • Heat 3 tablespoons oil in the same skillet over medium heat. Add garlic, and saute until just golden, 1 to 2 minutes. Add broccoli rabe; saute until wilted and heated through, about 5 minutes. Season with salt and pepper.
  • Add beans and squash to skillet, and cook just until heated through. Drizzle with remaining tablespoon oil, and season with salt and pepper. Sprinkle reserved bacon on top, and serve.

I found some recipes that were close, but I couldn't find the *exact* recipe that I usually make (ever since I hounded it out of a co-worker after a potluck years ago, even before I had any desire or ability to cook much at all). This salad is always good with almost anything, except maybe pancakes... nah, even then I bet the bacon would make it would be good ;) The whole Craisins thing make this a natural for the holidays that involve some form of cranberries. That said, it's great in the summer, too.

1 tablespoon honey
1 tablespoon champagne vinegar

4 cups broccoli, coarsely chopped, cooked to al dente, and chilled (microwave 3 minutes)

1 Broccoli Crown, washed and cut into bite sized pieces (about 1″)
1/2 cup White Quinoa
1/2 cup Dried Cranberries
2 Limes
2 teaspoons Honey
1/4 cup Olive Oil

Steps:

  • In a medium sized saucepan, bring one cup of water to a boil over medium high heat. Add the quinoa to the boiling water and stir. Cover and lower heat to simmer. Let stand for 15 minutes or until all water has been absorbed. Place in a medium bowl and set aside
  • Wash and cut broccoli crown into bite sized pieces (about one inch pieces). Fill a medium saucepan three quarters full of water and bring to a boil over medium high heat. Add cut up broccoli and cook 5 to 7 minute or until crisp-tender. Do not over cook. Drain broccoli and add to quinoa.
  • Make your dressing. Juice the two limes and place juice in a small bowl. Add the two teaspoons of honey and whisk well. Add the olive oil and whisk until slightly thickened.
  • Pour over the broccoli and quinoa. Add the cranberries and mix well.
  • This recipe can be served warm or cold. Serves 4
