These bars are incredible. They are so rich with a shortbread like taste and the yummy cream cheese frosting on top. Even if you are not a big cranberry fan you will like these! A co-worker brought these to work and I kept sneaking more througout the day. I love them chilled. They are good anytime of year, but I especially love to make them in the fall and at Christmas.

2 eggs, well beaten
1 1/4 cups sugar
1/2 cup butter or 1/2 cup Butter Flavor Crisco
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups fresh cranberries
1 teaspoon vanilla
frosting
3 ounces cream cheese, softened
1/2 cup butter or 1/2 cup margarine
1 teaspoon milk
1 teaspoon vanilla
2 cups powdered sugar

Steps:

  • Cream sugar and butter, add eggs.
  • Add the rest of the ingredients, batter will be very stiff.
  • Spread in a greased 13x9 pan.
  • Bake 40 to 45 minutes at 350 (325 if using a glass pan).
  • Spread frosting on when cool.
  • They are really good chilled before serving.

1 1/2 cups granulated sugar
3/4 cup butter or margarine, softened
2 teaspoons vanilla
2 eggs
2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 package (10 oz) frozen cranberry-orange sauce, thawed
1/3 cup butter or margarine, softened
1 package (3 oz) cream cheese, softened
1 teaspoon vanilla
2 cups powdered sugar
About 1 tablespoon milk
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 15x10x1-inch pan with cooking spray.
  • In large bowl, beat granulated sugar, 3/4 cup butter, 2 teaspoons vanilla and the eggs with electric mixer on medium speed, scraping bowl frequently, until well mixed. Beat in flour, baking soda and salt on low speed. Continue beating on low speed, scraping bowl frequently, until well mixed. Stir in cranberry-orange sauce. Spread in pan.
  • Bake 30 to 40 minutes or until edges are golden brown. Cool completely in pan on wire rack, about 30 minutes.
  • In small bowl, beat 1/3 cup butter, the cream cheese and 1 teaspoon vanilla on medium speed 1 to 2 minutes, scraping bowl frequently, until well mixed. Continue beating on low speed, gradually adding powdered sugar and enough milk until spreadable. Spread frosting over bars; sprinkle with walnuts. For bars, cut into 8 rows by 6 rows. Store covered in refrigerator.

1 stick butter, room temperature
1 1/2 c sugar
2 eggs
1 tsp vanilla
1 1/2 c flour
1/2 tsp salt
1 tsp baking powder
2 c whole fresh cranberries
1/2 c chopped pecans
FROSTING
2 1/2 c confectioners' sugar
4 oz cream cheese, softened
1/4 c butter, softened
2 tsp milk
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees F. Grease a 13 x 9 baking pan.
  • 2. In bowl, cream together butter and sugar. Beat in eggs and vanilla. Add flour, salt, baking powder, cranberries and nuts.
  • 3. Spread batter into pan. Batter will be thick ( If too thick, add about 1/3 cup buttermilk or milk to loosen some.)
  • 4. Bake in preheated oven 35 to 40 minutes. Cool completely.
  • 5. Frosting: In bowl, beat together all ingredients.
  • 6. Spread on cooled bars and cut into small squares...enjoy!

3/4 cup sour cream
1/2 teaspoon almond extract

1 cup white baking chips
1 cup dried cranberries
1/2 cup chopped walnuts
FROSTING:
2 packages (8 ounces each) cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla extract
2 cups confectioners' sugar
1/2 cup dried cranberries, chopped

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Gradually beat in eggs, sour cream and extracts. In a small bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Fold in baking chips, cranberries and walnuts. Spread into a greased 15x10x1-in. baking pan., Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool completely in pan on a wire rack., For frosting, in a small bowl, beat cream cheese, butter and vanilla until smooth. Beat in confectioners' sugar; spread over top. Sprinkle with cranberries. Cut into bars or triangles. Refrigerate leftovers.
