While traveling in New Zealand, my husband and I discovered turkey pizza. We came up with our own version for a creative way to use leftovers. -Kristin Stone, Little Elm, Texas

1 prebaked 12-inch pizza crust
1 cup whole-berry cranberry sauce
1 teaspoon grated orange zest
2 cups shredded part-skim mozzarella cheese
1 cup coarsely shredded cooked turkey
1/2 small red onion, thinly sliced
4 ounces Brie cheese, cubed
1 tablespoon minced fresh rosemary

Steps:

  • Preheat oven to 450°. Place crust on an ungreased baking sheet., In a small bowl, mix cranberry sauce and orange zest; spread over crust. Top with mozzarella cheese, turkey, onion and Brie cheese; sprinkle with rosemary. Bake 10-12 minutes or until cheese is melted.

1 (14-ounce) can refrigerated pizza crust
2/3 cup barbecue sauce
1/3 cup whole cranberry sauce
1 1/2 cups shredded white Cheddar cheese, divided
1 cup Morningstar Farms® Meal Starters Steak Strips veggie steak, cut up
1 mango, peeled, seeded and cut into bite-size pieces
3 tablespoons sliced green onions

Steps:

  • 1. On lightly greased baking sheet press pizza dough into 14 x 9-inch rectangle.2. In small bowl stir together barbecue sauce and cranberry sauce. Spread 3/4 cup of sauce over dough, leaving 1-inch border. Sprinkle with 1 cup of cheese. Arrange Steak Strips and mango on top. Sprinkle with remaining 1/2 cup cheese and green onions. Spoon small dollops of remaining sauce on top. Bake at 425°F for 14 to 16 minutes or until crust is golden brown. Let stand for 10 minutes before serving.

An easy way to use leftover turkey from Thanksgiving. Experiment with another cheese of your choice-chevre or feta for example sound good. Use a basic cranberry sauce or for a more creative route, try something a little off the beaten path: Recipe #53449 as a suggestion. From a local source.

1 thin pizza crust, baked (we like a light whole wheat thin crust-homemade)
2 cups whole-berry cranberry sauce, to room temperature (see Basic Cranberry Sauce or use your leftover cranberry sauce from Thanksgiving)
3/4 cup sliced green onion, using both white and green parts
8 ounces shredded monterey jack cheese (I chose a medium sharp white cheddar)
1/4 lb turkey, cut into thin strips (original recipe specifies deli smoked turkey)
fresh sage, cut into ribbons (optional and my addition)

Steps:

  • (I added 1/2 teaspoon Wright's Liquid Smoke to the turkey. Stir. Instant smoked deli turkey meat.).
  • Preheat oven to 350 degrees.
  • Place pizza crust on a pizza stone or large baking sheet and spread evenly with cranberry sauce.
  • Top with turkey strips; sprinkle with green onions and cheese.
  • Bake for 10 minutes until cheese is melted and pizza is heated through.
  • Garnish with fresh sage, if desired.
