1 cup unsweetened applesauce
⅓ cup vegetable oil
1 eggs, beaten
2 cups all-purpose flour
½ cup white sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup fresh or frozen cranberries, chopped
½ cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.
  • In a small bowl, mix together applesauce, oil and egg. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Make a well in the center, and pour in egg mixture. Stir until just moistened. Fold in cranberries and pecans. Spoon into muffin cups, 2/3 full.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing.

5 medium Golden Delicious apples (about 2-1/2 pounds), peeled and chopped

1 teaspoon minced fresh gingerroot
1/4 teaspoon ground cinnamon

  • Preheat oven to 425f.
  • Combine the first 5 ingredients (dry ingredients).
  • With a pastry blender or 2 knives cut in the butter until crumbles are the size of peas Add cranberries, mix well.
  • In a small bowl combine:applesauce, yogurt& peel.
  • Add to dry ingredients and mix gently, do not knead.
  • Remove dough from bowl, divide into four parts and divide each quarter into 4 parts making 16 scones.

  • In a heavy saucepan cook the apples, the cranberries, the sugar, the apple juice or water, the cinnamon stick, and the zest over moderate heat, stirring, for 15 minutes, or until the apples are very soft. Discard the cinnamon stick and the zest, force the apple mixture through the medium disk of a food mill into a bowl, and stir in the butter. Serve the applesauce warm or chilled. Base recipe was found in the All You Magazine but I've tweaked it to make it my own. This is a full flavored cake with a lemony glaze topping which I found to take this cake just over the top of expectations. Of course you can omit the glaze and just serve as a loaf cake for breakfast. The original recipe does not include nuts but I really enjoyed it with some chopped walnuts so I've placed that as optional to this recipe. It also called for raisins but I used Craisins instead. Please note it is very important to use a thicker applesauce for this recipe - using a thin commercial canned sauce can cause the batter to become too thin and not allow the cake loaf to rise properly while baking.

Slightly tart cranberry applesauce, a favorite of my step-daughter and my 16-month-old grandchild. I use orange juice and pears to sweeten the sauce in lieu of granulated sugar. I finish with a small amount of honey -- so small that the pediatrician cleared this for the grandchild at 6 months. I use a 6-1/2 quart Le Creuset pot, and puree to desired consistency in a Vitamix. For the 6-mo.-old, her mom froze this in ice cube trays; today her dad froze this in 1-quart heavy-duty resealable freezer bags. If you prefer a decidedly sweet sauce, add 1/2 cup brown sugar to the orange juice and heat until sugar has dissolved before adding apple slices, etc., or adjust at the end by adding simple syrup to desired sweetness. This mixture will keep in an airtight container in the refrigerator for 4 days.

I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example).

  • Use paper liners or lightly grease and flour muffin pan. Fill muffin cups 2/3 full.

Fruit Sauce
1/2 c chunky applesauce
1 12-oz bag fresh cranberries
3/4 c sugar
1/2 tsp ground cinnamon
Topping
1/3 c all-purpose flour
2/3 c packed light brown sugar
4 T unsalted butter, at room temperature
Cake
1 1/2 sticks unsalted butter
2 c granulated sugar
2 eggs
2 tsp vanilla
2 2/3 c all-purpose flour
3 tsp baking powder
1 tsp salt
1 c milk

Steps:

  • 1. Preheat the oven to 350. Lightly butter and flour a 13 x 9-inch baking pan. 2. Prepare the fruit sauce: Combine the applesauce, cranberries, sugar, and cinnamon in a saucepan and bring to a simmer over medium-high heat. SImmer, stirring frequently, just until the cranberries begin to pop open, about 5 minutes. Remove from heat and set aside to cool. 3. Prepare the topping: In a mixing bowl, stir the flour with the brown sugar. Using the tines of a fork, cut in the butter to form coarse crumbs. Set aside. 4. Prepare the cake: In a large mixing bowl, cream the butter and sugar together with an electric mixed on hight speed until light and fluffy. Add the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl as needed. Stir in the vanilla. 5. In another bowl, whisk together the flour, baking powder, and salt. Add this to the creamed mixture in batches, alternating with the milk, and blend until smooth. 6. Spread the batter in the prepared pan, and spread the cooled cranberry applesauce evenly on top. Sprinkle with the topping, and bake until bubbling hot and crisp, about 40-45 minutes. Remove from oven and cool completely in pan. If preparing a day ahead, wrap well and refrigerate.

Wow, that name is a mouthful How about "crananasauce muffins"? These turned out moist and delicious. I do not need to eat GF, but I make it for friends. Non the less, I loved these too. They could be made dairy free with a coconut oil substitute for the butter.

4 tablespoon(s) butter, melted
1/3 cup(s) sugar
1/2 cup(s) applesauce, unsweetened
1 - banana, overripe and slightly mashed
1 - egg
1 tablespoon(s) cinnamon or pumpkin pie seasoning
1 teaspoon(s) vanilla
3/4 cup(s) gluten free baking mix
1/8 teaspoon(s) xanthum gum
1 tablespoon(s) baking powder
1/2 teaspoon(s) salt
1/3 cup(s) dried cranberries
- cinnamon sugar for topping

Steps:

  • Preheat the oven to 375. In a mixing bowl put the melted butter, sugar, egg, vanilla, smashed banana and applesauce. Whisk this together.
  • In another bowl whisk the GF baking mix, cinnamon, baking powder, salt and xanthum gum.
  • Mix the wet ingredients with the dry. Stir gently until mixed. It too runny, add a little more baking mix. Then add the Cranberries. I just added a big handful. Gently stir in.
  • Spoon into prepared muffin pans. Sprinkle tops with the cinnamon sugar. Bake for about 12 minutes or until toothpick comes out with crumbs, not batter. Let cool slightly before moving. Do not cover until totally cool. GF items do not seem, in my experience, to like steam.
