Superb Cranberry Sauce with Apples and Pears image

This cranberry sauce has extra spices, diced fruits, and orange juice added to make it more exciting than plain old cranberries. Everyone always loves this at Thanksgiving and it disappears fast! It's best when made the night before and left to rest in the refrigerator overnight so all the flavors can blend together.

5 (3 inch) cinnamon sticks
8 whole allspice berries
8 whole cloves
6 cups fresh cranberries
2 ¼ cups orange juice
4 Gala apples, peeled, cored and diced
4 Bosc pears, peeled, cored and diced
3 cups white sugar
1 cup brown sugar

Steps:

  • Place the cinnamon sticks, allspice berries, and cloves onto the center of a 8 inch square piece of cheesecloth. Gather together the edges of the cheesecloth, and tie with kitchen twine to secure. Place the sachet into a large saucepan along with the cranberries and orange juice. Bring to a boil over high heat, and cook until the berries begin to burst, about 10 minutes.
  • Stir in the apples, pears, white sugar, and brown sugar. Return to a boil, then reduce heat to medium-low, and simmer about 25 minutes until the apples and pears are slightly soft. Remove and discard the spice sachet. Scrape the sauce into a bowl, cover, and refrigerate overnight. Serve cold.

2 cups Water
1 tart apple, peeled and diced, such as Granny Smith
12 ounces fresh or frozen cranberries, if frozen, defrost for 1?2 hours before using
1 1/4 cups sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Slice away the bottom of the orange so it sits steady on the cutting board. Working from top to bottom, slice off the peel, leaving behind most of the white pith. Finely dice half of the peel strips; discard the rest or save for another use. In a small saucepan over high heat, combine the diced peel and the water. When the water comes to a boil, lower the heat and simmer for 10 minutes. Meanwhile, squeeze all the juice from the orange and set aside.Strain and set aside the blanched orange peel.
  • In a medium saucepan, add diced apple, cranberries, orange juice, blanched orange peel, sugar, cinnamon, and cloves. Bring to a boil over high heat; then reduce the heat to low and partially cover the pan. 5 medium Golden Delicious apples (about 2-1/2 pounds), peeled and chopped

1 teaspoon minced fresh gingerroot
1/4 teaspoon ground cinnamon

Steps:

  • In a large saucepan over medium heat, cook and stir water and sugar until sugar is dissolved. Add apples; cover and cook for 5 minutes, stirring often. Slightly tart cranberry applesauce, a favorite of my step-daughter and my 16-month-old grandchild. I use orange juice and pears to sweeten the sauce in lieu of granulated sugar. I finish with a small amount of honey -- so small that the pediatrician cleared this for the grandchild at 6 months. I use a 6-1/2 quart Le Creuset pot, and puree to desired consistency in a Vitamix. For the 6-mo.-old, her mom froze this in ice cube trays; today her dad froze this in 1-quart heavy-duty resealable freezer bags. If you prefer a decidedly sweet sauce, add 1/2 cup brown sugar to the orange juice and heat until sugar has dissolved before adding apple slices, etc., or adjust at the end by adding simple syrup to desired sweetness. This mixture will keep in an airtight container in the refrigerator for 4 days.

  • Peel, core and slice one apple at a time, adding slices to pot and tossing slices in the liquid (to prevent browning).
  • Peel, core and slice one pear at a time, adding slices to pot and tossing slices in the liquid.
  • Add cranberries and honey and mix well. Immerse the cinnamon stick in the middle.
  • Bring to a boil, stirring occasionally. Reduce heat and simmer until apples are very soft, about 15-20 minutes. Remove the cinnamon stick and discard.
  • If using a Vitamix, the mixture does not need to cool before pureeing; otherwise, let mixture cool 20 minutes before pureeing in batches to desired consistency.
