2 cups cranberry juice
1 (6-ounce) bag sweetened dried cranberries
1 cinnamon stick, broken in half
1 cup sugar
2 Gala apples, peeled, cored and diced
2 teaspoons corn starch

Steps:

  • In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.
  • Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.
  • Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon sticks and serve.

I devised this recipe when I was trying to use up that leftover homemade cranberry sauce from Thanksgiving! You could probably also use canned whole cranberry sauce for this recipe.

4 Granny Smith apples - peeled, cored and sliced
1 ½ cups whole berry cranberry sauce
1 cup whole wheat pastry flour
1 cup rolled oats
⅔ cup packed brown sugar
⅔ teaspoon ground cinnamon
½ cup butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place apple slices in an 8 or 9 inch square baking dish. Spread the cranberry sauce over the apples. In a medium bowl, stir together the flour, oats, brown sugar, cinnamon, and butter until crumbly. Sprinkle over the apples and cranberry sauce, covering completely.
  • Bake for 45 minutes in the preheated oven, or until apples can be easily pierced with a knife and topping is browned.

6 cups chopped peeled apples
2 cups fresh or frozen cranberries
1 cup water
1/2 cup raisins
1/3 cup packed brown sugar
2 tablespoons red-hot candies
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • In a large saucepan, combine the apples, cranberries and water. Cook over medium heat until the berries pop, about 15 minutes. Reduce heat; simmer, uncovered, for 15 minutes or until apples are tender., Stir in raisins, brown sugar, red-hots, cinnamon and nutmeg. 1 teaspoon minced fresh gingerroot
1/4 teaspoon ground cinnamon

1 teaspoon salt
1 cup shortening
1/3 cup cold water
8 medium tart apples, peeled and cored
8 teaspoons butter
9 teaspoons cinnamon sugar, divided
SAUCE:
1-1/2 cups packed brown sugar
1 cup water
1/2 cup butter, cubed

Steps:

  • In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide into 8 portions. Cover and refrigerate at least 30 minutes or until easy to handle., Preheat oven to 350°. Roll each portion of dough between 2 lightly floured sheets of waxed paper into a 7-in. square.
